Rudolph’s Rockin’ Pomegranate Jingle Juice Punch…the best Christmas Eve Punch.

Rudolph's Rockin' Pomegranate Jingle Juice Punch | halfbakedharvest.com @hbharvest

It’s so hard to believe that Christmas Eve is tomorrow. The month of December has flown by so fast, but I can’t wait to spend the next few days with my family.

I finally spent some time this past Thursday planning out our holiday dinners and cocktails. Unfortunately, I was unexpectedly without running water for twenty-four hours, which meant zero cooking time. Instead I spent the time catching up on emails, planning out all the 2018 Healthy January content (can’t wait to share the fresh, but cozy recipes I have planned), wrapping gifts, and deciding just what to cook up over the next few days. It was nice to get a lot of “busy” work done, but being without water is zero fun. So thankful to have it back on!

PS. it’s a long story as to why my water was off, but basically it had everything to do with the new Studio Barn and the fact that we have well water.

Today I’m sharing my final Christmas Drink of 2017, and I think it might just be my favorite cocktail of the entire season. It’s simple, serves a crowd, and it’s delicious!

This fun punch recipe is a mix of sweet pomegranate juice, orange liquor, lime, champagne, and ginger beer. Yup, just five simple ingredients, but trust me, it is so good. I wanted to share an easy punch style recipe like this today because, let’s just be real, as much as I love mixing up individual cocktails, holiday parties are hectic and no one wants to be stuck mixing drinks all night…

Although I somehow manage to end up mixing drinks all night anyway. One, a pitcher of punch goes very quickly when serving seventeen plus people. And two, my family is very needy when it comes to drinks. Let’s just say they like variety.

Anyway, the point is, if you don’t want to mix drinks all night like me, than you need a really good, universally loved punch recipe. This is YOUR recipe. I’ve yet to meet a person who does not love a pomegranate based cocktail (or anything pomegranate for that matter). Even my picky family members love pomegranate juice. It’s their go-to juice mixer for any and all cocktails. The pomegranate base with the orange liquor and lime make this similar to a margarita, but minus the tequila and plus a whole lot of champagne.

The best part about this punch is that it takes maybe five to ten minutes to mix up. SO EASY.

I paired my punch with some festive sugared cranberries and a sprig of mint to make things a little fancy…ish. Perfect quick, easy, and delicious holiday cocktail.

Guys…I think that’s it from me until after Christmas. Taking both Christmas Eve and Christmas Day off from posting, so I’m wishing you and your family a very Merry Christmas, and Happy Holidays for those who don’t celebrate Christmas.

Enjoy this time with family and friends!

  1. what is a good substitute for the ginger beer? It’s in several punch recipes and I’m not a fan of ginger. Maybe club soda?

    1. Hey Becky,
Sure, club soda or sparkling water will work well for you! Please let me know if you have any other questions! Cheers! xTieghan

Truly the perfect Christmas punch! Made this on Christmas Day for afternoon cocktails and it was a hit. It’s super easy, pretty, sparkly and delicious. To make it super easy, I just poured everything in a pitcher and gave it a quick stir before pouring after the original round. This will be made and shared over and over at my house.

Made this for the holiday gathering. Very easy and great to put together the punch in advance. Would love a little more guidance on the amount of ginger beer and sparkling wine per glass. We experimented and decided equal 1/3rds per glass. Oh and of course made a bigger glass on ice — so less time spent at the bar and more time socializing.

    1. Hi Shannon,
Thanks so much for giving the recipe a try, the ginger beer and sparkling wine is really personal preference:) xTieghan

  4. Hi Tieghan!

So, I had my grocery list set to make this cocktail for my party next week and unfortunately, I could not find pomegranate juice! I am so bummed. I’ve already bought the other ingredients. Do you think it would be okay to switch out the pomegranate juice with cranberry juice?

    Thanks!

    1. Hi Kayla,
Yes, that will work well for you! I hope you love this recipe, please let me know if you give it a try, cheers! xTieghan

    1. Hey Sab,
I would cut the recipe in half, this will make more than one drink, but it won’t be a whole punch. I hope you love the recipe, please let me know if you have any other questions! Happy Holidays! xTieghan

I doubled the recipe and had it in my beverage dispenser when my family came over for Christmas dinner. So good, everyone loved it! I ended up adding a little more Grand Marnier, maybe another 1/3 cup. Thanks so much, this is a new family favorite!

  6. Was once served ginger beer at a clients home and as I’d never had it before very never thought to ask the brand knowing that ginger beer is readily available everywhere I shop. Sadly the gentleman passed away and while I’ve tried a few different brands – NOTHING I’ve purchased was as delicious and refreshing as that very first one. Wondering if you or any of your readers might recommend one?

    1. HI! I use a Ginger Beer local to Colorado, but I know Reeds is great! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
