Especially when that day is a Saturday (happy Cocktail Saturday!), and when the margaritas are these Rhubarb Passion Margs! You guys, I think these are my new favorite margarita. I know, I say that every time I make something new, but I just LOVE these. They’re fruity, sweet n’ sour, heavy on the lime, and rimmed with flaky sea salt. Yum.

OK, so here’s the deal. On Tuesday I asked everyone on Instagram how they felt about rhubarb. My dad had picked me up a few stalks when he saw them at the grocery store. He always knows when he sees a new produce item to grab it for me (he is the best). Thing is, I really had no fun new ideas for rhubarb this year. I mean, I’m not going to lie, it’s not like it’s my favorite spring fruit…cause well…there’s strawberries, but in the right recipe rhubarb can be awesome.

I was super curious to know what you guys thought of rhubarb, but when I asked everyone on Insta, I really was not expecting all the responses I got. Whoa, some of you guys feel real strongly about rhubarb! It was so fun to read everyone’s responses and personal stories about eating their grandma’s home-grown rhubarb, or fighting with their brother over the last slice of pie. Thanks so much to everyone who chimed in! 🙂 In the end I concluded that while some of you are in the middle and don’t love or hate rhubarb, most of you guys seem to love it! This meant a new rhubarb recipe was needed, and when I was out hiking the other day the idea for this Rhubarb Passion Margarita came to mind. A couple of hours later it was made and ready for photographing….okok, and tasting, DUH.

This margarita is all things delicious…honestly, just so good. You’ll need to start out by making a quick and simple rhubarb jam (yes it also has strawberries in it). The jam is where these margs get all their flavor. The jam is sweet, but balanced by the bitter sour rhubarb. Once you have the jam made, you can either make one drink or a big ole batch! You’ll need some tequila (obviously), Cointreau, lime juice, and some fresh passion fruit. The passion fruit is totally optionally, but I think it’s the perfect thing to compliment these margs.

Oh, and you’ll of course want to salt your glass rims. I used a flaky sea salt, which was to die for.

Rhubarb Passion Margarita

Ingredients

  • salt for the rim
  • 1 1/2 ounces silver tequila
  • 1 1/2 ounces Cointreau
  • 2 ounces fresh lime juice, plus wedges for serving
  • 2 tablespoons strawberry rhubarb jam (recipe follows)
  • 1-2 teaspoons agave nectar, or more to taste
  • 1 tablespoon fresh passion fruit pulp (optional)

Strawberry Rhubarb Jam

Instructions

  • 1. Salt the rim of your glass. Combine the tequila, Cointreau, lime juice, jam and agave nectar in a cocktail shaker and fill with ice. Shake until combined and then strain into your prepared glass. Stir in the passion fruit. Serve with fresh lime wedges. Enjoy!

Strawberry Rhubarb Jam

  • 1. In a medium pot, bring the rhubarb, strawberries, honey, lemon juice, and 1/4 cup water to a boil. Boil 8-10 minutes or until the mixture has thickened and becomes jam-like. Stir in a pinch of salt. Let Cool. Keep stored in the fridge for up to 2 weeks.

Ingredients

  • salt for the rim
  • 3/4 cup silver tequila
  • 3/4 cup Cointreau
  • 1/2 fresh lime juice, plus wedges for serving
  • 1 cup strawberry rhubarb jam (recipe follows)
  • 2 tablespoons agave nectar, or more to taste
  • 1/4 cup fresh passion fruit pulp (optional)

Strawberry Rhubarb Jam

Instructions

  • 1. Combine the tequila, cointreau, lime juice, Cointreau, and agave nectar in a large pitcher. Strain out pulp if desired. Stir in the passion fruit. Keep chilled in the fridge.
    2. When ready to serve, salt the rims of 4-6 glasses. Add ice to each glass and pour the margaritas over the ice. Serve with fresh lime wedges.
