Are you ready for the return of Christmas Drink Saturday?!?! After many of you kindly took the time to comment and email me, asking for the return of the holiday drinks, I decided that Christmas Drink Saturday clearly needed to be brought back! This year I’m starting a week early, for two reasons.

Reason one: Thanksgiving is this Thursday and I think it just feels fitting to have a holiday drink for this big holiday too!

Reason two: When I sat down last weekend to plot out my holiday drinks, I was three over my limit. Yes, THREE. So I decided to throw in an extra drink that’s perfect for both Thanksgiving and Christmas. Cool, cool! 🙂

To kick things off, I’m starting with one of my favorite drinks of the bunch. This Paloma is all things Holiday…and it’s perfection…fizzy, minty, gingery, full of sweet pomegranate, and um tequila too! Perfect drink to mix up for any holiday party. The simple syrup makes enough for at least four drinks, but can easily be doubled, or tripled, for a large batch of drinks. My special Christmas touch to these drinks though?

GINGER BEER.

It’s not traditional in Palomas, but it’s so much better than using club soda and adds a killer ginger flavor, which to me, just screams the holidays! Of course, if you prefer, you can obviously use club soda or anything with some fizz! Either way, these drinks are going to be delish! Bring on the holiday festivities!

Ginger Syrup

  • Bring 1/2 cup water, the honey and ginger to a boil over high heat. Once boiling simmer, 1-2 minutes and then remove from the heat. Add the mint, cover and steep 10-15 minutes. Strain out the ginger and mint. Store in a glass jar in the fridge for up to 2 weeks.

Paloma

  • Fill your glass halfway with ice. Add the pomegranate juice, grapefruit juice, lime juice, syrup, and tequila. Stir to combine and then top with ginger beer. Garnish with mint. enjoy!

  • In a large pitcher, combine the grapefruit juice, lime juice, ginger syrup, tequila, and pomegranate juice. Chill until ready to serve. Pour over ice and top with ginger beer.

    Delicious! I made the single serving using freshly squeezed lime and grapefruit juices and topped it off with ginger beer. The ginger syrup wasn’t too spicy, and the drink felt light and refreshing.

    Love this drink! Made it for Thanksgiving, Christmas Day and a Girls Night cooking party as a pre-party drink. Huge hit! Just the right amount of spice and such a beautiful color. I found the POM brand resulted in a richer color than the Whole Foods brand.

  4. I want to make these to take on a trip. Can I mix everything in a pitcher except the ginger beer and will it stay fresh till served in a couple days?

    Hi Tieghan –
    I saw the message you sent to Elizabeth on 12/23/19 who was looking to scale up to 25 servings. I want to do the same thing for Thanksgiving. However, I am puzzled as I don’t understand how, for example, 1 1/2 cups of honey can suffice for 25 drinks, when the original 1 drink recipe says 1/2 cup. Other proportions also don’t seem to scale up properly.
    Can you confirm what the correct proportions would be for 25 servings?

      1. Hello! Wondering how I could adapt this recipe to make it in a pitcher scale, but give folks the option of adding the tequila in… Just leave it out and have folks add the ginger beer and tequila separate?

        And if one doesn’t add the tequila, do you just add more ginger beer? Only concern is that it becomes too sweet….

    I noticed that your single serving recipe for this cocktail comes to about 8 ounces, which is rather a large cocktail. (Most cocktails are about 4 or 5 ounces.)
    I also noticed that your large batch recipe for a pitcher serves 10, but the recipe is not just 10 times the original single serve recipe.
    I’d like to make a pitcher of these for a dinner I’m having and I’d like to have 24 servings. Which recipe do you recommend I use and multiply? Also, how much of the simple syrup should I make for 24 servings?
