These Peanut Butter Mocha Oreo Ice Cream Sandwiches are the homemade version of everyone’s favorite childhood ice cream truck dessert…but all done up and dipped in a magic chocolate shell. Each chocolate cookie is crisp on the edges, but soft and brownie-like in the center. The cookies are sandwiched with vanilla cream frosting (just like an Oreo), creamy mocha ice cream, and a swirl of peanut butter. Put everything together and you have an ice cream sandwich that’s chocolatey, creamy, rich, decadent, and so delicious. The chocolate dip at the end just seals the deal. They’re the perfect dessert to keep stocked in the freezer.

It might not even be June yet, but I’m way too excited about all the summertime ice cream treats! And although our weather isn’t quite the warm summer temps I am dying for, my excitement for what lies ahead got the best of me.

So ice cream sandwiches it is…a fun little Friday sweet treat!

And trust me, these are fun! They’re so delicious and my hope is that you will keep your freezer stocked with them all summer long.

The story

So these fun sandwiches hold a bit of a special place in my heart. These sandwiches were one of the earlier recipes I ever shared here on HBH, and I’ve loved them ever since. They were kind of buried away, but with the site’s new re-launch I wanted to bring these sandwiches back, but in an updated way.

It’s crazy that some of the recipes I created years and years ago are still some of my favorites. But gosh, you guys, I really love these ice cream sandwiches.

I first made them back in July 2013 while my family was in Mt. Hood for the summer. How did I think them up? Well, that I don’t know. What I do know is that while this is a decadent ice cream sandwich, it’s also so so worth it!.

How could one go wrong with a homemade Oreo cookie stuffed with rich mocha ice cream and creamy peanut butter?

You just can’t. These. Are. Good!

Let’s talk details – the Oreos

They’re simple. Beat some butter, add ingredients like cocoa powder, then roll the dough out just like you would sugar cookies.

Cut the dough into small circles and bake!Once the cookies have cooled, spread a simple vanilla cream frosting overtop, then sandwich the cookies with your favorite mocha or coffee ice cream.

Now freeze the sandwiches…just to firm the ice cream back up again. Then add a layer of peanut butter to the top cookies and freeze one more time.

Make that magic shell

For the “magic shell”, simply mix melted chocolate with coconut oil until smooth. You now have a “magic shell.” Dip each sandwich into the magic shell.

At this point, you can eat away, or keep them in the freezer to enjoy later. Which yes, you should always have a number of these on hand. Stash them away in the freezer for easy access when in need!

These will take you a little time to prepare, but only because of the freezing. For the most part, I actually found these really easy and fun to make. If you have younger kids, these are definitely something they can help with!

Chocolate Dipped Peanut Butter Mocha Oreo Ice Cream Sandwiches

Instructions

  • 1. Preheat oven to 350° F.
    2. In a large mixing bowl, cream together the butter, sugar, and vanilla until light and fluffy, about 3-5 minutes. Add the egg, mix until combined. Add the flour, cocoa powder, baking soda, and salt. Beat until combined and the dough forms a ball. If your dough feels too wet to roll out, add an additional 2 tablespoons of flour.
    3. Divide the dough in half and flatten each half into a disk. Roll out the dough out between 2 floured pieces of wax paper to about 1/4 inch thickness. Cut 24 (2 1/4 inch) circles. Carefully use the wax paper to lift and transfer the cookies to a parchment-lined baking sheet. Then peel away the wax paper. Roll out the leftover scraps, and repeat with the remaining disk of dough.
    4. Bake the cookies for 9-10 minutes. Cool on the baking sheet.
    5. To make the frosting, beat together the butter, vanilla, and confectioners' sugar until light and fluffy. Add the cream and a pinch of salt, beat until combined.
    6. Divide the cookies in half and set aside one half for later. Next, take the cream filling and spread it on the bottom of 12 cookies. Now take the ice cream and place one scoop of ice cream onto the filling. Place the cookies onto a baking sheet and freeze 20 minutes. While the ice cream freezes, grab the half of the cookies that were set aside and spread peanut butter on top. Remove the cookies from the freezer and sandwich the ice cream cookies together with the peanut butter cookies.
    7. To make the magic shell. Melt the chocolate and coconut oil together in the microwave. Cook on intervals, stirring every 30 seconds until smooth. Let cool 10 minutes. Remove the sandwiches from the freezer and dip in chocolate. Keep in the freezer until ready to eat!

    These were delicious. I only used half of the cream filling (was there supposed to be extra?); I found it much easier to freeze the frosted bottoms a bit before adding the ice cream, as well as making sure the PB tops were hardened slightly in the fridge beforehand – in very hot weather, the cookies will break if you try to situate them on totally frozen ice cream.
