Thanks for joining me for another Nine Favorite Things post. After all the excitement from last week’s big wedding, it actually felt good to jump back into a regular workweek. Oh man, hosting a 200 person wedding is certainly a big undertaking…and I didn’t even do that much! The bride, the groom, and the parents […]

Thanks for joining me for another Nine Favorite Things post. We have officially entered “wedding” week. By this time next week, my brother will be married. It’s just now hitting me that we are really growing up. I mean, Brendan is twenty-nine, so it’s not like we’re not “grown-up”. But he’s the first of my […]

Thanks for joining me for another Nine Favorite Things post. I’ve been sitting here for a good ten minutes or so just staring off, wondering how best to start today’s Favorite’s post. The first sentence is always the hardest for me to get out, and often times I’ll write it only to come back and […]

Thanks for joining me for another Nine Favorite Things post. Happy Cinco de Mayo and happy Derby Day! Two very exciting things happening today, and to be honest, I’m not sure if I should be drinking margaritas or making mint juleps. One thing I know for sure, I’m totally making these Strawberry Bourbon Shortcakes this […]

Thanks for joining me for another Nine Favorite Things post. My younger brother Red turned 19 yesterday. I really can’t even believe he is a year off from being 20. I was 6 when Red was born and I remember the day so well, well kind of. What I really remember is the day after. […]

Thanks for joining me for another Nine Favorite Things post. Crazy that it’s already the last day of March. This month flew by in the blink of an eye. Every day was packed so full that I must admit, I’m excited for a slightly slower April. My biggest goal this month is getting back to […]

  • Creamy Wild Rice Chicken Soup with (butter) Roasted Mushrooms. The coziest bowl of soup because it's December and it is cold. Sooo creamy bowls of slightly cheesy, extra delicious rice soup on repeat. This is everyone's favorite at the moment. It's very good. And? Very easy to make. Throw everything in the crockpot (instant pot/stove-top directions on the blog) and done. One thing? Do not skip the mushrooms. They are SO. GOOD. Buttery, crispy and just a little garlicky too.
...
...
In the crockpot combine...
1 pound boneless, skinless chicken breasts
1 1/2 cups dry wild rice blend
6 carrots, chopped
3 stalks celery, chopped
2 medium shallots, chopped
6 cups low-sodium chicken broth
2 tbs chopped thyme or 2 tsp dried
1 tbs chopped sage or 1 tsp dried
1/2 tsp crushed red pepper flakes

Add 1/2 cup water. Season with salt + pepper. Cover and cook on low for 5-6 hours or on high for 2-3 hours.
Shred the chicken. Stir in...
2 cups fresh baby spinach or kale
2 tablespoons chopped fresh parsley
1 cup heavy cream or whole milk
1/2 cup grated parmesan
Cook until warmed through, about 30 minutes. Stir in 2 tbs parsley. If the soup is thick, add an additional 1/2 cup water.

To make the mushrooms. On a baking sheet, combine the 6 tbs butter, 2-3 cups mushrooms, 4 garlic, 2 sprigs rosemary, 1 tbs lemon zest, and salt + pepper. Roast at 425 for 25-30 minutes,  until golden and crisp

Divide the soup among bowls and top with rosemary and additional parmesan. enjoy...enjoy!

  • Cheddar Pierogies with Caramelized Onions and Bacon. Took my favorite childhood food (hello Mrs. T's Pierogies) and made it SO. MUCH. BETTER. Hello to homemade potato + cheddar filled dumplings. Every pierogi is a little cheesy, full of creamy potatoes, layered with caramelized onions...and salty bacon. Nothing is better…or cozier…on a cold night. Shared the recipe on HBH - linked in profile. PS. Pierogies or Pierogi...there is some debate 😬
  • Salted Caramel Pretzel Snickerdoodles. These are snickerdoodles, but better... because browned butter, chocolate-covered caramel chunks (decadent, but oh so good), cinni sugar and a little pinch of flaky sea salt. Each cookie is slightly crisp on the edge but soft and gooey in the center…with just a little pretzelly crunch. Sooo yes, you should bake cookies on a Tuesday night because it's December and that's what you do. Then? Take the leftovers to work and make everyone’s day. ‘Tis the season for giving! • Instant Pot Pesto Zuppa Toscana...tastes kind of like the Olive Garden version…but better...if you ask me anyway. It's a little spicy, extra creamy, made with pesto, potatoes, a good amount lemon, cheese, and yuppp, it is topped with salty bacon too (all the good things, right?). It's without a doubt a bowl of comfort food and yes, it's making Monday night very GOOD.  Recipe up on the blog - link in profile. PS. stove-top and slow cooker directions on the blog too. #instantpot #soup
