The enchiladas with cheesy rice are calling my name. I’m in Germany at the moment and have trouble getting my hands on some of these ingredients, so I’ve started making a list of all the recipes I want to make once I get home. Awesome post!
Wow so many good recipes. It’s funny, my birthday is on Cinco de Mayo, and as a food blogger I didn’t even think to do a roundup for it. Did a Mothers Day brunch one instead. At least I feel good about putting my Mom (and others first). I admire that you have so many amazing recipes that you can do a roundup of your OWN recipes like this. That’s awesome and thanks for the list!
