This Oven Fried Chicken is a slightly healthier, and much easier, take on the famous Nashville Hot Chicken. Breaded in corn flakes, oven baked, and finished with a beyond perfect sweet and spicy honey butter sauce, this is a chicken dinner that’s sure to be loved by all!

So you guys, those sentences up there above this first photo? I know, they’re so cheesy, but let me explain some things about the food blogging world that others might not tell you. There’s this thing called SEO, and then there are your Google rankings. I will not get into details about what these really mean, because if I’m being honest, I’m still trying to figure them out in full myself.

Basically, all you need to know is that there is a certain way Google would like me to write out my blog post every single day. Yes, Google ranks how I write my blog, and yes, it’s annoying. So, why do I even care what Google thinks you ask? Well, it’s simple, I really want to share my recipes with as many of you as possible. I work so hard to create new and exciting recipes day in and out, and I want anyone who might be interested in finding them to see them.

When you search in Google, it’s Google who decides what shows up front and center. And you know how you get on Google’s good side? You listen to them, and write your blog post in a very straight forward, kind of boring, and impersonal way. It’s not that cool, and that’s just the truth.

What does all this mean? Well, it just means that sometimes I have to write some cheesy things within the post to stay on Google’s good side. Google would also prefer I limit my story telling. As you might guess, I’m not going to do that. I think one of the things that makes HBH unique is my stories, and how they connect to my recipes. I don’t want to lose that just because Google says I should.

Over the years I’ve learned that you just have to be YOU, and stick to what works for YOU. So I’m listening to Google to a point, but at the same time, I’m sticking with my own personal style. It’s all about balance, right?

I certainly think so…obviously.

Alright, my ranting is now done. Let’s chat about this chicken.

You guys might not know this, but I actually find cooking chicken to be a little boring, so when I do cook with chicken, I have to make sure it’s extra flavorful and delicious. Kind of like the way I do up my salads.

When my brother, Creighton was in town last week, I knew I needed a good chicken recipe to serve him. The man loves himself some fried chicken, so I thought I would throw him a curve ball and turn one of his favorite greasy foods into a healthier recipe that he’d love all the same.

Enter this southern fried hot honey chicken.

I swear, this is just as good as fried chicken. Bold, but it’s true.

The key is to soak the chicken in a little buttermilk before breading. The buttermilk tenderizes the chicken while adding flavor at the same time. From here, you’ll bread the chicken in crushed corn flakes seasoned with herbs, and then oven bake. It’s pretty simple and straight forward.

The flavor is all in the hot honey sauce. Oh this sauce, it’s genuinely just so good.

The sauce was inspired by the famous Nashville Hot Chicken. It’s spicy, but balanced with a touch of sweetness. The classic way to add sweetness to this spicy sauce is with brown sugar, but you guys know I prefer using honey whenever I get the chance, so I made a few swaps and came out with one of my favorite sauces to date.

As soon as the chicken comes out of the oven, brush the hot honey over the warm chicken and allow it to soak into the crunchy coating. Then eat.

It. Is. SO. GOOD.

And I swear, you can’t even tell it’s not fried.

When I finally had the chicken perfected, I sent the leftovers home with my brother knowing he’d love them. Thing is, you can’t trust brothers to do anything because the chicken somehow managed to get burnt in the oven while re-heating. Either he burned it or my dad did, the stories are unclear, but either way, no one got any of this delicious chicken…well at least not the way it was intended to be eaten.

YES. Totally serious. My family everyone. I love um, but man they cannot cook.

Oh well, bottom line is that this chicken is delicious and you really need to give it a try. Today, tomorrow, this weekend, or maybe even this summer. This chicken would be perfect for warm picnics and summer parties.

Instructions

  • 1. Add the chicken to a gallon size zip top bag. Pour the buttermilk and salt over the chicken. Toss well, cover and refrigerate 20 minutes or overnight.
    2. Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
    3. Add the corn flake crumbs, flour, thyme, and a pinch of salt to a medium sized bowl. Stir to combine.
    4. Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Lightly brush the chicken with olive oil. Transfer to the oven and bake for 15-20 minutes, then flip the chicken over and continue cooking another 10 minutes or until the chicken is cooked through. If using thighs, you may need to cook the chicken a little longer 
    5. Meanwhile, make the hot honey. Melt together the butter, honey, cayenne, chili powder, paprika, garlic powder, and a pinch of salt. 
    5. Brush or drizzle the chicken generously with hot honey and serve warm Enjoy!

    Amazing dish!

    It was quick and simple to prepare! The chicken was super crunchy & the sauce was out of this world, it was a great combo of sweet and spicy!
    I reheated the leftover chicken for lunch the next day for a few minutes each side under the broil to not only revive the crunch of the crust but to warm it up slightly. It worked perfectly.

    This was SO good! When I was dredging the chicken through the crumbs it looked a little too much like shake and bake and I started to wonder if it would turn out but the chicken was so crispy and delicious! I shouldn’t have been surprised haha! The sauce was unreal! I cut down on the spices because my husband and I are semi-wimpy with spice but still had a good kick and tons of flavour.     The sauce from this recipe is so hard and ridiculous to get to the correct consistency. I had to re-make this sauce two separate times and still the butter completely separated from the seasonings and was watery. I would try to come up with a different recipe for it! Just did not work and felt like I wasted my time on this meal. Definitely won’t make again.

    So so good! I used about 2.5 tsp of cayenne pepper, and didn’t have chili powder so I used a chili lime seasoning I got from Trader Joes. It was spicy, but not too overwhelming. I cooked it longer than indicated and did 2 sheet pans with 3 thighs each, swapping racks halfway through each side. I also couldn’t get the hot honey butter to combine – the butter separated to the top and the spices to the bottom. SOS! I cook all the time and follow recipes exactly.     Family favorite! My son and I love the spicy honey butter, my mom loves it without.     DELICIOUS! I used bone-in skin on thighs but otherwise followed the recipe. I left in buttermilk for about 8 hours. I baked for 1 hour to ensure fully cooked and browned, turning 30 minutes in and required two baking sheets cause the thighs were pretty large. My teens loved. The chicken was good before applying but the hot honey takes to a WHOLE other level. I particularly loved the skin, yu-mmy! Quick, easy and minimal clean-up.

    I made this recipe with chicken tenders and my husband and I loved it. My kids not so much. I made the mistake of drizzling all the tenders with the sweet and spicy butter sauce. Next time I will leave some plain for them. I also would encourage you to taste the sauce as you put in the cayenne pepper. I only put about a teaspoon and a half and hought that was plenty. I also added a little extra honey. The chicken is GREAT cold and I chopped up some leftover tenders and added the pieces to a salad.

    I make this for my family probably twice a month; addictive doesn’t even cover it! My wee hack is making double the sauce in a small saucepan a few minutes before I pull the chicken out of the oven. I leave it slightly simmering on the stove and dunk each piece right into the sauce, and flip it over so it’s totally coated, just before I put it on the platter to take to the table. So freakin’ good!!!

    My husband and I love this recipe! The flavors of the hot honey glaze are soooo good! I have made this 3-4 times now and my one trouble is the corn flakes/flour always fall off either as I am flipping mid-bake or after I take them out of the pan. I scrape them back onto the chicken. How do I keep the breading from falling off? I even butterfly the chicken breasts so they are nice and flat, and I smash the corn flakes extra small.     I made this and it was fantastic. I doubled the sauce but didn’t double the cayenne because my younger brother was going to be eating it. Next time I might add a little less butter because it was a little overpowering and the sauce not as thick as I’d like (even though it still tasted amazing).     My grandfather used to make oven fried chicken (Italian style) that was beyond yummy so this recipe caught my eye when it was shared to a Facebook group that I’m in. I’m not a corn flake fan, so I used a toasted oat flake (Trader Joe’s brand), crushed in the food processor. That made this chicken nice and crunchy, even cold out of the fridge ! I loved this so much that I’ve made it twice already ! The second time, I added a teaspoon of smoked paprika and a teaspoon of salt in with the crumb mixture. Yum ! Also I made a less spicy version of the honey sauce and it’s so good you can practically drink it LOL Please feel free to share it in your recipe above if you’d like ! Here is my recipe for the sauce: 4 tablespoons butter, 2 tablespoons honey, 1/2 teaspoon chipotle powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder and 1/2 teaspoon salt. Melt the butter in the microwave, stir in the honey and seasonings and pop back in for 30 seconds. Mix well, pour over chicken and serve as a dipping sauce on the side.

    I actually tried this, and it’s not good. The method for breading results in all the breading falling off or sticking to the parchment, and the sauce does not emulsify and is very grainy and not a well balanced flavor profile. Sorry to say, I had high hopes because it looked delicious.

I had to make a few tweaks based on supplies I had available.     This is so so good!! I was very hesitant to think it would taste as good as fried chicken, but it does. I’ve made it with thighs, bone in and bone out, and both turned out amazing.
    One problem I’ve had is with the sauce, it’s super tasty (& spicy yum!), but every time I make it, the butter separates from the seasonings as soon as it finishes boiling. Then as much as I stir it or reboil it, it doesn’t re-emulsify again. Any advice Tieghan??

    I have made this twice. Both times a hit, but the 2nd time, much better with my tweaks. Ingredients are all the same, fear not dear commenters, I have not changed it, only changed the ORDER. The first time was waay too hot for me, so the 2nd time, I used boneless skinless (the first time not), and after the buttermilk step, I dredged it in the hot honey sauce, THEN in the cornflake crumbs. I saved about a 1/3 of the sauce for drizzling. The amounts were perfect for 6 boneless skinless thighs, whereas I had 2 lbs of thighs (4) the first time and threw out so much cornflake mix and hot honey sauce (I hate waste).This is now a keeper for us!!

    Tried this last night and it was SO SO good. I only used 2.5 teaspoons of cayenne but I think next time I’ll go the full 3. I used white flour (didn’t have whole wheat flour) and dried thyme instead. Chicken was perfectly cooked, I highly recommend following the recipe when it says turn over and cook another 10 mins. The only MINOR downside was by my last chicken breast being “breaded”- the cornflake mix was getting a little clumpy cuz the buttermilk on the chicken which made it a little bit more difficult for them to stick. But I made it work and they were amazing!!!!

    This was a hit! Didn’t have corn flakes so I used panko instead with boneless skinless chicken thighs (also used yogurt instead of buttermilk). We devoured almost all of it. I am just starting my own food blog and it is A LOT of work. My only complaint is that I wanted twice the amount of sauce to pour over all the chicken because it was THAT yummy. For the hot honey, I put everything in a pot together, but I see that you melt the butter separately and just pour that onto your other ingredients. I wonder if that matters at all.     This is a good recipe. I used boneless, skinless thighs and breasts. Unfortunately, mine didn’t crisp in the oven as much as I would have liked—I didn’t want to keep it in too long to ensure the chicken didn’t dry out, so I switched on the broiler and it helped. I also misread the amount of cayenne (I read 2-3 tsp as 2/3 tsp) so it wasn’t spicy! The misread was on me. I plan to try again with a couple modifications. Thanks for sharing this recipe!

    I’m so not a person who comments or posts things on social media but I think it’s worth coming out of my internet anonymity to comment on this recipe. I learned about your site last month after having a conversation with my dental hygienist about “what in the world should I make for my family for dinner tonight” and she told me about all the recipes she’s made from your blog. I have three young kids and everything I have made from your site appeals to all of them – which in itself is a miracle! I love your seasonal approach and mix of traditional with a twist, all the while having amazing flavors and contrast.     This recipe is super easy, and really good. I dropped the cayenne down to 1 tsp (I have 4 kids under 6) and it was still quite spicy. I’ll be making it again over wings for sure!

I made the recipe with 8 boneless skinless chicken Breast, arrowhead stoneground whole wheat flour, fresh thyme chopped fine and organic honey corn flakes 3 cups and organic corn flakes 3 cups. I used the food processor and I marinated the chicken in a thick Calders Brand in a glass jar buttermilk with kosher salt. The buttermilk over the chicken was thick and perfect. I took chicken out of buttermilk and coated with cornflakes mixture and placed on a baking sheet. I put some extra virgin olive oil on top lightly. I convection baked at 425 / I cooked for 20 min and then turned over and cooked another 20 min. I doubled the honey sauce but only put 2 teaspoons cayenne pepper which was hot but had a good balance. I doubled the recipe. I added the glaze when it came out of the oven . The recipe turned out FABULOUS!!!! My husband & son loved the chicken. The house smells insane. Thank You ! Michelle Saroki

    Ok so I don’t think I was quite ready for how spicy this really was, but it was SO flavorful and delicious!!! The flavor was even better the next day with the sauce soaked in! Seriously so good.

  183. Made this for dinner tonight and it came out great! But just a warning for those who don’t tolerate a lot of spice… I know it’s in the name, but this sauce it HOT. I went with the 2 tsp of cayenne rather than 3, doubled the honey and added an extra 2 Tbs of butter and it was still knock your pants off hot. This coming from a girl who dips her fries in straight Tobasco hot sauce rather than ketchup. I felt bad because my mom could not eat it. So maybe hold the sauce and let people apply on their own.

    I served it with bacon Brussel Sprouts and sweet potato fries. Will definitely make again, just for a different audience.

    This chicken was SO good and really simple to make. I used a mixture of breasts and drumsticks. I was astonished that a “breaded” chicken like this didnt even make a mess, which was such a pleasant surprise.     Wow, wow, wow!! Just made these tonight and they far surpassed my expectations. I thought the picture looked delicious and the recipe sounded pretty easy, but I rarely get a good result with oven baked chicken. This recipe changed my mind. The chicken was incredibly tender with a delicate crunchy coating. The butter/spiced honey sauce is to die for. I did use boneless, skinless thighs and I used a combination of jalapeño honey I made myself and regular honey. I then adjusted the cayenne pepper. Used two additional TBLS of honey and cut butter to 5 TBLS. Fantastic recipe and husband loved it! Served with a creamy lime dressing coleslaw and fries. Thank you for this recipe? Also, used Panko bread crumbs because I didn’t have corn flakes.

    Just made this last night! The chicken was fabulous, and turned out perfectly moist. The sauce was solid, but not at all what I expected. Much more melted butter than sticky/honey. Also, I didn’t find it as spicy as some other commenters–could have added a little more heat!

    Made this tonight and it was delicious. My husband remarked that he wouldn’t mind having it again… in the very near future! I did have one problem- the crunchy coating did not adhere well to the skinless chicken breast. When I went to turn the chicken over, big pieces of it fell off.     Sooooo gooood!
    Even my 4year old thought so(minus the delicious spicy honey of course) but the child who has to be cajoled into eating his dinner had two helpings at dinner two nights in a row and ate it for lunch!

    May make our own chicken fingers this way too since it was such a hit.

    I was so excited to make this recipe as I am with any of your recipes. Unfortunately I am so disappointed that I have to post. The chicken was not crispy at all. The sauce was OK. I love spicy but the combination of spices was overwhelming and the honey was lost.

  218. I made this for a dinner party and it was SO GOOD!! One question though – i baked on foil wrapped cookie sheet and put a little canola oil on the sheet. when I tried to flip halfway through, the coating got stuck to the sheet! Any advice on how to best avoid this?

I also double the sauce because – I mean, goes without saying. That sauce is incredible !! Each time I’ve served it alongside a kale and cabbage slaw with Greek yogurt dressing, sliced red onion, avocado & mango. It’s the perfect counterpart to the hot chicken.     I just made this for my husband and myself for Father’s Day. I used boneless, skinless thighs. I also love corn flake crumbs for nostalgia’s sake because my mother always made oven baked chicken that was delicious, using corn flake crumbs. The recipe was simple, and the outcome was incredible. I think my husband was really taken by it, and I absolutely love the hot honey butter sauce, but he found it too spicy…..I have eaten nashville hot chicken sandwiches in a few different restaurants, but this version was just as good or even better, and loved that the sauce was something that could be put on to one’s taste…even dipped. Thank you and this will now be a staple in my cooking repertoire.

    I made this for dinner tonight and it was delicious! My cornflakes didn’t stick to the chicken quite as nicely as I hoped but it still tasted wonderful even if it wasn’t quite as pretty as yours.     The flavor of this chicken is delicious! I found it best to wait until the chicken was done or basically done before starting the sauce. When the sauce sat for a couple minutes, the seasoning separated from the butter leaving a weird paste consistency on the bottom of the pan. I had to make the sauce twice to pour it over immediately while the butter and seasonings were still coalesced. I would probably bake on a wire rack next time too to make sure both sides of the chicken stay crispy. I will be making again. Thank you.

    I said I would try this recipe out once I got all settled into my new place….and I did! I was missing a few ingredients (such as the corn flakes, substituted with bread crumbs) and seasonings for the hot honey sauce….but it still turned out AH-MAZING. Paired it with savory mashed sweet potatoes and collard greens. Was planning on making dinner for myself and had a few friends come over that night instead– everybody cleared their plates and went as far as to demand the recipe from me. It was definitely a hit 😉

    I made this tonight but i didn’t have corn flakes so I used Total cereal. . .and I didn’t have buttermilk so I used watered down greek yogurt. . .and I was out of honey so I used apricot preserves in the sauce. . The taste was very good. . .but I must have done something wrong because when I was baking the chicken and went to flip it over the bottom breading came off. The final production didn’t have the beauty of your website pictures, but the taste was good (even with the Total cereal) and the entire platter was eaten by the five kiddos (including a couple of picky teens). But how do I keep the crust from coming off?

    I made this for dinner last night and it was a huge hit with my husband and kids! I did opt the cayenne pepper because my my family can’t handle anything spicy. I did add smoked chipotle powder to my honey sauce because I like a bit of kick. Next time I won’t wait until the last minute to make the sauce, I liked it better once it cooled and thickened a little bit. What little leftovers are left are hidden in the fridge to make sure no one gets to them before me.

    Made this Memorial Day Weekend! It was absolutely delicious. I will say I didn’t follow the instructions well when you said “finely crushed” cornflakes and thought ‘hey, smashing in a ziploc will work.’ It didn’t. My advice for others would be to actually follow your instructions and finely crush, others it doesn’t stick as well and you end up with globby larger pieces you try to adhere to the chicken. I used a mix of boneless, skinless breasts and thigh–the thighs worked out much better for some reason, the cornflakes stuck better. I’d also let the thighs spread out on the pan as much as possible. I’ll definitely make again! The sauce is fabulous and the cornflake crunch delightful.

    Oh my god. I just made this in the air fryer and it was amazing! I’m mildly embarrassed to say I ate the first batch in about 10 minutes. Also I know people have been raving about the hot honey, but I don’t think it’s talked up enough. I put some on my popcorn for tomorrow’s snack, and the hot honey butter kicked it quite a few notches! I’m so glad you seem to enjoy spicy foods as much as I do.

  245. I made this last night and I loved it!
    I prepped the boneless skinless chicken thighs in the buttermilk and salt the night before. When I got home from work, I made the corn flake coating- (tried using rolling pin on a zip locked bag but ended up throwing it all into a food processor- quicker and easier. BTW I probably used 4-5 cups of uncrushed corn flakes to equal 3 cups of crushed corn flakes.). The coating adhered to the chicken really well but I did not brush on the oil because I think it would have brushed off the coating, so I just lightly drizzled oil over chicken.
    Then, a friend stopped by! So, I never made the Hot Honey Sauce and it was still great! Next time, I won’t answer my front door so I can have my sauce.
    Tonight when I reheated the leftovers, I used the oven so it would still have the crispy crust, yum!

    Made this tonight. We had my ‘Bonus son’ and his girlfriend over for dinner. And it was such a huge succes. Made the sauce a little less spicy. Also made oven roast potatoes tossed with homemade dry Ranch dressing mix and a coleslaw. It’s a keeper. And your honey-version is so much more delicious than with dark suger.     While I was checking out the Strawberry Shortcakes I spied this recipe and had to make it too. The whole family loved it. Especially the picky one! I did scale back the cayenne to 1/2tsp which gave it heat at the end and was perfect for our tastes. I can confirm it was just as wonderful the next day for lunch too!     I made this recipe last night – my boyfriend and I both loved it! He said it is the new gold standard he will use to compare all other (oven) fried chicken.

    My only question, is that after I flipped it, the bottom side of the chicken didn’t crisp up. Do you think I had too much buttermilk on the chicken when I dredged it? There were about 2 inches between pieces so I don’t think I overcrowded the pan. Any advice would be great for next time 🙂
