I didn’t grow up eating hamburger helper, neither did my brothers. But for whatever reason, this has been a recipe I wanted to try and recreate for a while now. Ever since my older brother mentioned the idea to me a year or so ago it’s been on my “to make” list.

Not going to lie, it’s obviously not my usual kind of recipe, as I tend to sway towards recipes with a bit more color. But something about recreating this in a healthier, tastier, way really excited me.

So while it may have taken me over a year to finally test this out and share, the day is here. And I’m excited because this really is that perfect early fall, September dinner.

The idea

So as I said, my brother had mentioned creating a recipe for homemade (not boxed) hamburger helper. He said that if I could make it like the boxed stuff, but with a creamier texture, and a little more depth of flavor, that it would be, “SO GOOD”.

I wasn’t excited at first, but then I started to think about the upgrades I could make. I wondered, “could I make it healthier, but still creamy? Could we add a little flavor, but still keep it classic? And could I make it all in one pot just like the box?”.

All of the challenges started to excite me, so I figured if I could get each one checked off, then I would have a great recipe!

This is a one pot dinner, so the details are simple

First of all, find yourself a nice big pot or braiser to cook this in. I love this one and think it’s the perfect size for this recipe.

Now, starting cooking! Simply add the beef and onion to your pot and brown it all over, add in some spices, and then the pasta. And next? The ingredient that adds a little health to the recipe…a bit of shredded zucchini.

I love adding shredded zucchini to pasta dishes like this. Not only does the zucchini incorporate a vegetable into the recipe, but it also adds moisture and creates an even creamier sauce.

Finish it up

Once the pasta and zucchini are both added, pour over the broth and milk. Add a squeeze of ketchup (sounds weird, but trust me), then cook everything together until that pasta is al dente.

It’s important to stir the pasta frequently to ensure that nothing is sticking. But other than that, everything is EASY.

The final step is to stir in a handful of cheddar cheese. Serve up the hamburger helper topped with fresh parsley (it needs a little color!) and enjoy!

As I always like to say – homemade is best!

Excited to have this recipe in my back pocket for cozy fall and winter dinners to come. And Creighton’s verdict? He loved every bite. He said, “how could someone not love this? It’s basically mac and cheese with meat…and it’s delicious”.

  • 1. In a large pot set over medium hight heat, add the olive oil, onion and beef. Season with salt and pepper. Cook until brown all over, breaking up the meat as you go, about 10 minutes. Stir in the chili powder, paprika, and garlic powder, cook another minute.
    2. Add the pasta and zucchini and toss to coat, then pour in the broth and milk. Add the ketchup and stir to combine. Season with salt.
    3. Bring to a gentle boil over medium high heat. Simmer 5-8 minutes until the pasta is al dente, stirring often.
    4. Stir in the cheese and cook another few minutes until very creamy.
    5. Divide the pasta among bowls and top with fresh parsley. Enjoy!

    I was so excited to try this recipe but I also felt it was quite bland. I kept adding more and more of the 3 spices plus alot more salt plus more ketchup. Not sure what I could/should do next time to make it more flavorful. My liquid was also all absorbed so it didn’t look creamy like the picture. Happy I gave it a try though.

    This was tasty and pretty simple! I did end up using quite a bit more liquid to get it ‘saucy’ as in the photos – about 1.5 cups more almond milk total. The pasta really soaked up the initial liquid within a few minutes. Also added more spices & double the ketchup than called for after tasting and feeling like it needed more ‘kick’. With the changes, it was a nice homey meal.

    I modified this recipe slightly for my husband who has severe food allergies and issues – gluten free pasta, oat milk, garlic infused oil, etc. And oh my goodness, it is good with the modifications. Thank you for providing such a great inspiration – it was very easy and so good!

    I made this last night for my nephew’s family — it was a big hit with all of them. I used Mezzi Rigatoni and took a little longer to cook the pasta. I ended up adding a couple of additional splashes of broth and a splash of milk. I will definitely make this again, it brought me back to my childhood.

    I increased seasoning and also added Lawry’s seasoning salt, had to use a bit more liquid (broth and milk) also threw in some half and half, and Oh man!!! This was amazing!! My husband who is a huge hamburger helper lover said this was better, we will never go back to the box!

    This recipe is great! Certainly consider doubling the spices as the other reviews suggest. I added about a tablespoon of Worcestershire sauce, too! I ate a lot of hamburger helper growing up… this brings back the same taste to me! Thanks!

    We found this dish to be bland both times we made it, even dolling it up the second time. Normally love HBH dishes but this one not so much! Notice other commenters say they doubled the seasonings and worcestire so maybe more luck there

    We really enjoyed this! I did add more seasoning, doubled the ketchup, and added Worcestershire sauce but otherwise followed the recipe. It did take me a little longer to get the pasta cooked but they may have been the temp I had the stove on. We really loved it! Also used almond milk.

    We loved it but I did make a number of changes after reading the comments. First I used ground Turkey and did a combo of chicken and beef broth. I increased the seasonings a lot. Used better than boil lion for broth so I could add extra of the concentrate to get a deeper flavor. Also added extra veggies like carrots, cabbage and peas. Included a tablespoon of Dijon mustard and worstechire sauce. And as the ends a couple tablespoons of plain Greek yogurt. And this was amazing will 100% make it again

    Doubled the spices as others suggested and added Worcestershire sauce but still bland. I used shells but had to keep adding liquid and pasta took much longer to cook.

    I think this recipe is good as a base but it lacks a lot. We quadrupled the seasoning and it still needed additions like cayenne pepper and Worchestire sauce for some heat and more depth of flavor. In the end, it was still missing something. I think a dollop of sour cream on top or maybe a bit of red cooking wine would give it the acid it needs. Overall, our recipe turned out really good but I felt we had to do too many modifications, making this just a good base recipe.

    I needed to use up some ground beef, and I remember your brother raving about this dish. I figured I’d give it a try, thinking it wouldn’t be up to much.   21. Finally made this tonight!!! Only prob I found was little to liquidity, is there a way to fix that or did I possibly miss something. I added exactly all the exact portions of beef broth and milk, only thing I wasn’t able to find was zucchini would that possibly soak up the liquid as well.

    Love this recipe. I change it up using different pastas (elbows, shells, mafalda) or subbing frozen peas or baby spinach for the zucchini. Even passed it on to my youngest who is at college.     Tried this recipe last night and it turned out really well. I substituted the beef with impossible burger “meat” and substituted the beef broth with vegetable stock as our family does not eat red meat. I also used a tablespoon of the spices and agree with other reviews that I think this really enhances the dish. My only issue was that our leftovers today were a little dry upon reheating.     I’ve made this twice now and it’s the best! Here’s my tip from the second time around: double if not triple the spices! I found the first batch to be a little bland for my taste. I used a tablespoon of each spice and two tablespoons of ketchup. It turned out perfect! Probably the fastest HBH recipe I’ve ever made too. Keeping this one in the regular rotation!

    YALL THIS IS AMAZING!!!! I made this recipe for my husband last night and we loved it! I loved the hidden zucchini. This would be a great recipe for families with children. I did use 4 cups of beef broth instead of 2 just so I could use up the entire bottle of it. The only change I will make last time is using a different type of noodle!     Still making this at least twice a month. It is a winner and a keeper! Having to be gluten free, I make a gluten free version of this. I find pre-cooking the gluten free pasta

    Mine turned out absolutely wonderful. Just the right amount of sauce after I added a little more almond milk. I used Rigatoni big noodles because I couldn’t find the pasta shown. I can’t wait to eat it warmed up the next day. It wasn’t as spicy as I thought it might be. I could taste the pepper and might go easy on that next time. Maybe add a bit more smoked paprika. I cooked it with the lid on since the pasta was larger. I also finished mine off with parmesan cheese sprinkled on top.

    The pasta confused me. I wish I knew what short meant. I ended getting shells and I had to add extra milk and broth and now water because it isn’t cooking through all the way. I also wish I would have thrown in a little more seasonings as to I like my beef with lots of flavor. Otherwise overall its definitely better then the box of hamburger helper.

      I had the same question before making it tonight! I’ve got a really picky 4-year-old so I can relate. I would say to peel the zucchini before grating, that way you are hiding the green skin. Texture-wise I don’t think the zucchini comes through much!

    This was good, but I did have to do a number of tweaks. I doubled the spices and added a generous helping of cayenne. Still, it was still somewhat bland for my tastes, so I will tweak that some more in the future. I thought the hidden zucchini was genius. I didn’t even taste it. The dish did not come out creamy, however, even with Tillamook cheddar. Next time I will either use whole milk or oat milk (I used 1% milk this time) and up the cheese (I used 1 1/2 cups, which was all I had on hand).

When I saw this recipe, I knew I had to try it. Made this last night & it was so delish. The spices are spot on & it tastes like the original, but better! I did find that I needed to bump the spices up to taste & I only used half a box of pasta as there’s only the two of us. I added a little more milk and broth, and it was so creamy & delicious.     This is so good! I did increase the liquid a bit as it cooked off. I omitted zucchini because I forgot to buy some, and I used ground turkey because it was on sale.     I made two pots simultaneously- one for the meat eaters with ground beef and one with ‘beyond meat’ for the vegetarians (both with elbow macaroni). Because ‘beyond meat’ tends to be saltier, I found that the vegetarian version was much more flavored than the version with ground beef. I do agree with many of the comments here that suggest doubling the spice. What would be particularly helpful is a sense of how much salt should be added to the dish, since I tend to be more restrained when directed to ‘season with salt and pepper’.     Oh man, this is going into heavy rotation, as it’s so delicious and customizable. If you’re an experienced cook and comfortable using a recipe as a template, sky’s the limit. I need lots of veggies to qualify a go-to one pot meal, and so far, I’ve bumped up to almost 2 servings pp by quadrupling zukes, lots of diced shrooms and fennel, extra onion and fresh garlic. All virtually disappear, plus it stretches the portions for very little calories, and pretty too. Shredded carrot, parsnip, and yellow squash may join the club next. Freezing batches of meat mixture makes it easy breezy. Will continue to push veggies to see how high I can go, but even with the additions, still totally reminiscent of HH. Thanks Tiegen!

    Made this for dinner tonight. It was super delicious. I followed advice from other commenters and doubled the liquid, spices. I added mushrooms for some extra veggies.     I would agree that I needed more liquid for mine. I think it definitely depends on the cook time of your noodles. Mine said 12 mins on the package, which is how much time it ultimately took. That said, it ended up delicious! I just added salt as I added more milk.

    This recipe is absolutely delicious. I followed what some others recommend to boost the flavor a bit:
    Added several cloves of fresh garlic
    Doubled the spices
    Added a squeeze of lemon juice
    1 cup of almond milk and 1/2 cup of low fat greek yogurt
    I also used chickpea pasta for added protein.

    This recipe is a perfect fall staple. It makes me feel good to be eating food that doesn’t have a bunch of additives like the boxed stuff!

    Made this tonight! Delicious.

    I added 4 cloves pressed garlic to my onion and ground beef instead of garlic powder. Then I also added 1/2 tsp more of chili powder and paprika based on reviews.

    I did end up adding about 1/2 cup more broth through the process to keep it saucy. Simmered with the lid and it was not gummy. It still ended up not being as saucy as the photo but over all had good flavor.

    Made this last weekend. I was taking care of 6 year old grandson, who is a picky eater. Although he does eat salmon both raw and cooked. He wasn’t sure he’d eat it so we discussed it and made a back up plan. I don’t force kids to eat food they don’t like. They do have to take a bite.     My family of all boys loved this recipe! I am definitely adding this to our rotation. After reading the reviews I did simmer with the lid on. I also subbed a 1/2 cup of the broth for red wine (we really like that flavor) and only used about 3/4 cup cheese because that’s all I had.

    Made tonight! Kids kept saying “I’m not going to like this” (12 year old and 8 year old)
    They LOVED!! Didn’t change anything except I browned the beef with onions and 6 garlic cloves. Also added a bit more of all the seasoning. Will for sure be making this again!!!!!!

    I’m not sure what went wrong with mine. I followed the recipe exactly but it turned out mushy/not saucy and fairly bland? I used rotini noodles because that’s all Aldi had as far as short pasta, but I’m thinking they may have sucked up too much of the sauce. I think next time I’ll double the seasonings too because it just didn’t have enough flavor for me 🙁

  208. Haven’t tried the recipe yet, but I ran it through an app for the purpose of seeing how many calories, and your “estimate” is incredibly low, almost like it needs to be low. I thought maybe the ground beef I’d use wasn’t “lean” enough, so I just eliminated it altogether, and still your “estimate” is more than 10% lower than what I believe the actual number of calories to be. And with the beef, I’ll just say it’s more like 650 calories per serving.

    Just curious how you went about getting that number, because this is a frequent problem unfortunately, coming to sites with obvious misrepresentations.

    Still going to try it, because it looks delicious.

    This was absolutely delicious! My friend and I loved it and agreed that a dash of cayenne would really put it over the top. I am officially a one-pot meal fan and will be trying out some other HBH recipes this fall.

    We thought this was fantastic. As with any recipe, I tasted and observed as I went and adjusted spices and liquids accordingly. We upped the spice with some cayenne and made some other adjustments to fit our favorite flavor profiles. While I, admittedly, have never eaten the boxed stuff, this really was a great, comforting dish – and super easy, too!

    Delicious meal for any time but especially a fall weeknight! Easy to make and satisfying. I would recommend upping the spices a little bit (not much) and will do that next time. I used oat milk and it worked perfectly. I also simmered without a lid and would say it turned out fine but I might try that next time. Saved to recipe box!

    My boys don’t like the box stuff because it is “too cheesy and too soupy” With a few other modifications that are our standard operating procedure (always double the vegetables for example) this LANDED for my teens who love having this on hand for their after school snack. When they’ve eaten this they always give me more hugs. This is a keeper for us. I used a LOT of zucchini (like 3 small to medium ones) but without a lid, it came out PERFECT and was easy to make sure it was the consistency they like.

    Recipe doesn’t specify to cover with lid when simmering but I believe you are supposed to. When I did so it came out correct, but my sister simmered without a lid and she needed much more broth and the texture came out gummy (as I’ve seen in a couple other comments). I agree with some reviews that next time I’d use more spices but overall delish and EASY recipe!

    I had to use a lot more broth to have enough moisture to cook the pasta. I’m not sure if this is because I used GF pasta. I then added about double the spices to even out the flavor. Also used coconut milk which was good. I would make again, I think it would be great after a day of skiing. Fast to make and filling.

    this was a very forgiving recipe. i had to make some substitutions/swaps and it still turned out really good:

    – ground turkey for beef
    – broth from chicken better than bouillon instead of beef broth
    – doubled the paprika and added a dash of crushed red pepper, since i didn’t have chili powder
    – added about half a teaspoon of turmeric to give it more of that traditional, neon orange hamburger helper look

    a good and versatile recipe for my arsenal, thank you!

    My friend made this for me when I broke my leg and lost my father in law within the same week… A thoughtful, very thoughtful friend.
    It looked delish cold, but heated up, it was amazing. I didn’t realize it wasn’t real pasta until she told me. I saw green in it which I love any part of! It really contributes to the flavor. Talk about a healthy and delicious dish. (Healthy version of a somewhat unhealthy meal).

    I can’t fully express how delicious this was. Our kids ate it like crazy. I loved it for the flavor and the one-pot aspect of it for an easy supper. But also loved the fact that our kids loved it AND there were veggies in it, too. This will become a regular in our weekly menu.
