Who doesn’t love a good campfire?
Growing up, many a summer nights were filled with campfires in the backyard, hanging out with cousins and toasting marshmallow over the open flames. Those are some of my best summer memories! Nonetheless, I don’t think I ever actually had a campfire banana.
Like I don’t think those were a thing eight or so years ago?? I only recently began hearing about them, but when I did, I thought they sounded kind of amazing.
The idea of warm bananas, chocolate and marshmallows sounds pretty killer to me. All you need is some graham crack crumbs and you have a s’more banana! Yeah!
However, me being me, I just couldn’t be THAT simple and merely tell you guys how to add chocolate and marshmallows to a banana. SO, I am going to tell you guys how to add oatmeal cookies…loaded with chocolate chunks…to a banana. If you want, you can still add marshmallows, although surprisingly, I did not, since they somewhat mistakenly turned out to be a fairly healthy dessert/snack.
What, wait?!?
I know, they look like chocolate goodness, but after just typing up the recipe, I realized that these are practically healthy. While, minus that butter, but you can make these with butter or coconut oil. I have tried both and both work great, the butter just makes them well, buttery and delicious, but the coconut is honestly so good too!
Actually, you could even make these bananas for breakfast too, with like a scoop of yogurt. Yes, those would be so yummy!
But today I’m feeling more like I need a chocolatey pick me up. I really want to celebrate what’s left of summer and these deliciously stuffed bananas are one of the best reasons I can think of to get together with family and friends, have a little bonfire and semi indulge! Seriously, sounds like such fun doesn’t it?
So on to one of my little random tangents – can you guys believe it’s already the last Tuesday of July?? The next time Tuesday will be in July will be 2016. Just typing that out scares the heck out of me.
I felt like I was literally just telling you guys about my fourth of July and now we are getting ready to enter into August, and little miss Asher is getting ready to turn SEVEN at the end of the month! Wait, NOOOO – she can’t be seven already. That little girl is going to be all grown up before I know it!
Speaking of her birthday, I SO badly want to get her T-Swift tickets (she’s coming to Denver the first weekend in September), but of course they are already sold out. Bummer 🙁 That little girl is the biggest T-Swift fan, so I might start checking eBay and the likes. I feel like there has got to be tickets somewhere, I mean she is playing two shows at the Pepsi Center in Denver for crying out loud.
So aside from my Taylor Swift no-ticket problem, and the fact that I am incredibly scared the world is moving too fast, I am so, so, so happy to share these oatmeal chocolate chunk cookie stuffed campfire bananas with you today.
I feel like they are the perfect thing for all of our jam-packed last days of summer fun. They’re quick, painless to prepare and yeah, they are crazy awesome too!

Never, never go lite on the chocolate. Oh, and I highly recommend that scoop of ice cream. Warm bananas + warm oatmeal cookies + cold ice cream = best summertime treat ever!
