Who doesn’t love a good campfire?

Growing up, many a summer nights were filled with campfires in the backyard, hanging out with cousins and toasting marshmallow over the open flames. Those are some of my best summer memories! Nonetheless, I don’t think I ever actually had a campfire banana.

Like I don’t think those were a thing eight or so years ago?? I only recently began hearing about them, but when I did, I thought they sounded kind of amazing.

The idea of warm bananas, chocolate and marshmallows sounds pretty killer to me. All you need is some graham crack crumbs and you have a s’more banana! Yeah!

However, me being me, I just couldn’t be THAT simple and merely tell you guys how to add chocolate and marshmallows to a banana. SO, I am going to tell you guys how to add oatmeal cookies…loaded with chocolate chunks…to a banana. If you want, you can still add marshmallows, although surprisingly, I did not, since they somewhat mistakenly turned out to be a fairly healthy dessert/snack.

What, wait?!?

I know, they look like chocolate goodness, but after just typing up the recipe, I realized that these are practically healthy. While, minus that butter, but you can make these with butter or coconut oil. I have tried both and both work great, the butter just makes them well, buttery and delicious, but the coconut is honestly so good too!

Actually, you could even make these bananas for breakfast too, with like a scoop of yogurt. Yes, those would be so yummy!

But today I’m feeling more like I need a chocolatey pick me up. I really want to celebrate what’s left of summer and these deliciously stuffed bananas are one of the best reasons I can think of to get together with family and friends, have a little bonfire and semi indulge! Seriously, sounds like such fun doesn’t it?

So on to one of my little random tangents – can you guys believe it’s already the last Tuesday of July?? The next time Tuesday will be in July will be 2016. Just typing that out scares the heck out of me.

I felt like I was literally just telling you guys about my fourth of July and now we are getting ready to enter into August, and little miss Asher is getting ready to turn SEVEN at the end of the month! Wait, NOOOO – she can’t be seven already. That little girl is going to be all grown up before I know it!

Speaking of her birthday, I SO badly want to get her T-Swift tickets (she’s coming to Denver the first weekend in September), but of course they are already sold out. Bummer 🙁 That little girl is the biggest T-Swift fan, so I might start checking eBay and the likes. I feel like there has got to be tickets somewhere, I mean she is playing two shows at the Pepsi Center in Denver for crying out loud.

So aside from my Taylor Swift no-ticket problem, and the fact that I am incredibly scared the world is moving too fast, I am so, so, so happy to share these oatmeal chocolate chunk cookie stuffed campfire bananas with you today.

I feel like they are the perfect thing for all of our jam-packed last days of summer fun. They’re quick, painless to prepare and yeah, they are crazy awesome too!

Do you see all that chocolate?

Never, never go lite on the chocolate. Oh, and I highly recommend that scoop of ice cream. Warm bananas + warm oatmeal cookies + cold ice cream = best summertime treat ever!

Nutritional information is only an estimate. The accuracy of the nutritional information for any recipe on this site is not guaranteed.

Ingredients

  • 3 teaspoons chia seeds or ground flax + 1 tablespoon water optional
  • 1 1/4 cups old fashioned oats use gluten free if needed
  • 1 cup almond meal may sub all-purpose flour
  • 1/3 cup pure maple syrup may sub brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 tablespoons unsalted butter softened (If vegan use coconut oil)
  • 2 teaspoons vanilla extract
  • 4-8 ounces semi-sweet or dark chocolate chopped
  • 4 ripe but firm bananas
  • Ice cream for serving

Instructions

  • Preheat your grill to medium high heat.
  • In a small bowl, combine the chia seeds with the water. Let the mixture sit 5-10 minutes or until it has thickened and is goopy.
  • To a large mixing bowl, combine the oats, almond meal, maple syrup, baking soda, salt, coconut oil and vanilla. Add the chia seed mixture and then mix well making sure the oats are well moistened. Stir in the chocolate chips.
  • Slice the peel of the banana from stem to bottom, while also slicing the banana inside lengthwise. Basically, cut the banana in half except for the tip.
  • Carefully open the banana just wide enough to place the oatmeal mix inside the peel with the banana. Stuff the cookie dough inside the banana allowing some of the dough to pop out of the peel.
  • Wrap the bananas with aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chocolate and cook the cookie, about 8-10 minutes. During the last few minutes of cooking, I like to unwrap the foil a bit and continue cooking the bananas until the top of the oatmeal gets crisp.
  • Unwrap the bananas, open the peels wide, add a scoop of ice cream and eat with a spoon.

Notes

*These bananas can also be baked in a 375 degree oven for 10-15 minutes. **The bananas can be prepped a few hours in advance and then baked as directed.

  1. I don’t tolerate chia seeds well, any suggestions for substitutions? I’m trying to figure out how to adapt your amazing recipes to be relatively low FODMAP. Thank you!

    1. Hi Brenna,
You can use flax seeds in place of the chia seeds. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  2. I need to have a campfire just to make these yummy treats! Time passes way to quickly. It’s scary!

  3. These look amazing!!!

Try Stub Hub for a T-swift ticket! I got my boyfriend a ticket for a sold out show on there recently. Then you don’t have to deal with meeting anyone to buy their ticket etc. 🙂

  4. As Gwen Stefani would say (PG-rated version): This “stuff” is bananas…B-A-N-A-N-A-S!

I need to bring something to a Summer Thanksgiving dinner and I don’t know if I want to do this recipe, the cherry cobbler with the vanilla biscuits, or the clafoutis! They all look so awesome.

You keep posting these delicious-looking recipes and I really need to be eating healthier :-(. I’m slowly but surely gaining some weight. This is why inviting people over for dinner is good…then you don’t eat it all yourself! At least that’s what I tell myself… :-/

Also…I made your creamy caprese quinoa bake tonight (again) and posted the result on twitter. Everyone enjoyed! It is also pretty diabetic-friendly which was nice for one of our guests.

    1. Made this tonight (single serving) and it was good! I’ve had a stressful week and this definitely helped me relax. Made a couple small changes: used up a (thawed) frozen banana — this made things a bit watery but it still turned out delicious. Because I did the brown sugar option, I used a couple tablespoons of milk and 1 tablespoon of butter so that the dough had enough moisture and it was slightly healthier. I used chocolate chips instead of chopped up chocolate. Yummy! Thanks for the recipe. I’ll definitely make it again.
