So I bake. Like a lot. Maybe more than I cook. Probably way too much, for the normal person that is.

There are a lot of us in this house (but you already know this). We like our chocolate (again, I am sure you have figured this out by now).

Creaming butter, whipping cream, melting chocolate those are all second nature to me. I could do them in my sleep. So to say that I am excited for all the holiday treats (cookies, cakes, cupcakes, tarts, sweat breads, and truffles) that I have yet to make is an understatement! See I have been writing my “to bake this Christmas list” since October. I know…this is embarrassing and I should not be telling you this.

So yeah, I have my Christmas treats planned from now until Christmas. Yes, I am crazy. And yes, probably a little OCD as well. But honestly what is better than Christmas cookies. You can NEVER have too many! I mean come on, I can not be the only one with people dropping in for an overnight (errr, more like week) stay? I have to be prepared!

First up this season? Lace Cookies. But of course not just any old lace cookies. Nutella Stuffed Oatmeal Lace Cookies. I had never made lace cookies before yesterday and I have no idea why! They have a really nice mix of crunchy and creamy. I know that sounds odd, but it is the best way to describe them. Other than insanely addicting!

Crunchy, creamy, buttery, and chocolatey! These cookies are soo goood! Yes, I know, I say this all the time. I really mean it though. I mean let’s be real, there is Nutella in the middle. How could anything stuffed with Nutella not be crazy good?

  • 1. Melt the butter in a medium saucepan. Once melted, whisk in the brown sugar. Bring to a boil over high heat and cook 1 minute. Remove from the heat and transfer to a bowl. Whisk in the vanilla. Add the oats, flour, and salt mixing until combined. Let cool 5 minutes, then stir in the egg white. Let the dough sit 10 minutes to thicken. 
    2. Position racks in the upper and lower thirds of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
    3. Drop 1 teaspoons size amounts of dough on prepared baking sheet, placing each 3 inches apart. Bake for 7-9 minutes until golden brown around the edges. The butter will be bubbling up around the cookies, this is OK. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cook completely. 
    4. Sandwich each cookie with nutella or melted milk chocolate. Store cookies in an airtight container for up to 4 days.

Notes

When working with the lace cookies be very gentle. Because they are so thin they break easily.

Oh, did I mention my family calls me Mrs. Claus? I am starting to understand why now.

    Didn’t turn out AT ALL as described! Oatmeal blobs is more like it. Wish I read these reviews beforehand.

  2. Based on the most recent reviews, I only added 1 tbsp all-purpose flour instead of 1/4 cup. I’m not sure if that will work for anyone else, but they flattened for me and were delicious! 😊

  4. This recipe is definitely defective. The cookies do not spread out at all. Even after adding the cream. Similar lace cookie recipes call for much less flour.

  5. these are delicious! but mine did NOT come out so thin and pretty like yours haha. should I have smushed them down when putting them onto the baking sheet? any tricks i may have missed?

    These did not work at all. The batter was WAY too thick and the cookies didn’t spread at all. After trying a different lace cookie recipe that worked beautifully, I believe this one has too much flour. So disappointed!

  8. Hi! I just made these and they are absolutely delicious. The only difference I noticed is that the cookies pictures do not appear to have rolled oats visible. Did you grind the oats prior to adding to the batter? Thanks so much for the tasty recipe.

    Just followed the recipe to the letter and they did not spread at all they’re just really buttery dough balls out of the oven. Is there anything I can do to rescue them? What do you think is causing them not to spread – should I add more of a certain ingredient? So sad because I’m an avid HBH baker, normally your recipes are a huge hit with me and I was really excited about these cookies for Christmas cookie boxes this year.
