I have the best smoothie today!

I’m going to be honest, smoothies are actually not my favorite thing ever. Typically I really just prefer to eat my food rather than drink it, same goes for pureed soups. But this smoothie? Oh my gosh, it’s life changing (okay that may be a bit over the top). It tastes like dessert, but yet it’s packed full of all the good things for us. And best part…there’s not just fruit! There’s a veggie in here too…can you guess which one?

Yeah, yeah, it’s a carrot. Probably pretty easy to figure out with that orange swirled throughout. Pretty though huh?

Here was my thinking for this smoothie. I’ve been trying to figure out a way to sneak in an extra hit of nutrients in the morning. I eat tons and tons of fruits and veggies throughout the day, but my mornings could use a little boost in the veggie department. Anyone else feeling the same? With spring officially here…and shockingly, our weather actually going along with the seasons (for now), this smoothie could not have come at a more perfect time.

Ok, but before we really dive into this morning glory power smoothie I have to tell you guys about my weekend! I didn’t even touch on it yesterday because that cookbook post absolutely needed to be all cookbook talk. Which by the way…oh my gosh, I have not even begun to read through all the comments yet, but in just glimpsing them over, I got a sneak peek of all your kind words. I cannot wait to read every single one tonight. Pretty excited about it! Thank you all and I’m sure I will have more to say on this tomorrow…once I have read each and every comment in detail! You guys are the best. 🙂

The weekend though! Or actually more so Friday! I had a meeting in Denver and decided to turn it into a bit of a mother/daughter day and brought my mom with me to do some fun things after! The meeting was great and I hope exciting things will come from it, but mom and I also had such a fun day shopping and walking around Denver. It’s pretty rare that mom and I do anything just the two of us. Even though we work together and are in contact daily, we don’t get to actually spend time together all that much. So our one on one day was very much needed.

We lucked out so much with the weather. It was the perfect blue skies, seventy-five degree day. Yes, seventy-five degrees in March. I was shocked, literally just in awe of how nice it was. Apparently this is totally normal Denver weather, I just never knew it…because I never leave the kitchen. New goal: leave the kitchen more and drive the one and half hours to Denver for warmth – it’s worth it!

Anyway, we had a great, chill day…did some shopping, had some pizza, and went for a walk in the park. Laid back and great, and that’s about all gotta say. The rest of the weekend was spent cooking! YUMM.

Alright, back to this smoothie!!

I’m claiming swirled smoothies to be the best. I mean stir this all together and it’s going to taste the same, but when things are swirled, it’s just more fun! Or at least that’s my thinking. Plus, the pretty orange swirl effect got Asher to give this as try. And you know…she actually drank a pretty good amount. I was shocked. She’s been really into smoothies lately. A couple of weeks ago we did the Weelicious Smoothie Project on Instagram stories (you have to check this out if you have kids, it’s so fun and actually gets them drinking healthy smoothies). Ever since then she’s been begging me to make her smoothies after school. Her smoothies consist of mostly fruit and greek yogurt, so her giving this a try was two thumbs up in my book!

Let’s run through everything in this pretty smoothie…

…banana

…dates

…hemp seeds

…walnuts or cashews (soak them overnight so that they blend up really creamy, and are also easier to digest)

…maca powder

…cinnamon

…vanilla extract

…coconut or almond milk

…carrot

…coconut water, orange, or pineapple juice (use juice for added sweetness)

…turmeric

So basically all the good things. The banana and dates keep the smoothie sweet, the maca powder, cinnamon, and turmeric add mass amounts of nutrients, while the nuts and seeds keep this drink silky smooth…along with adding healthy fats and proteins. The carrot adds color, flavor and loads of fiber (among other things)!

So what’s it taste like? Almost like a milkshake! I know, I know, right. I swear though, this really does taste like a vanilla milkshake. With all the vanilla, hemp seeds, hints of malt from the maca powder and creaminess from the nuts, this smoothie is so good, and a great way to really pack in the nutrients! Cool. Cool.

TIP: if you freeze the smoothie, then re-blend it, it literally is a milkshake. It’s also literally the best thing ever.

Morning Glory Power Smoothie

Ingredients

  • 1 small carrot, rough chopped
  • 1/2 teaspoon turmeric
  • 1/2 cup coconut water or orange juice
  • 1 fresh or frozen banana
  • 1-2 dates, pitted
  • 2 tablespoons raw walnuts or cashews, soaked overnight in water
  • 1 tablespoon hemp seeds
  • 1 teaspoon maca powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 1/2 -2 cups coconut or almond milk

Instructions

  • 1. In a blender, combine the carrot, turmeric, and coconut water. Blend until completely smooth and no carrot chunks remain, adding water if needed to thin. Pour into a tall glass
    2. Rinse the blender out. Combine the banana, dates, nuts, hemp seeds, maca powder, cinnamon, vanilla, and milk. Blend until smooth and creamy, adding milk if needed to reach your desired consistency. Pour over the carrot mixture and stir gently to swirl. Enjoy!

      I always recommend that if the nutritional information is important to you, you use your own personal calculator. Ours is automatic and controlled by google. It’s not something we’d prefer to be using. We are required to. I’m sorry for the trouble, we do our best! Hope you enjoy the recipe! xT

  6. Just made this one, though I totally missed the separate blending instructions. Oops! The walnuts didn’t totally blend, but it otherwise tastes delicious! My kids keep coming back for more samples. Next time I might try freezing the coconut water into cubes so it’s a bit colder. Thank you!
