Welcoming these chilly winter days with this Lighter Creamy Broccoli Cheddar Soup. It’s cozy, creamy, secretly full of vegetables, and totally delicious. This soup is made simply in one pot with puréed cauliflower (to make it creamy), sharp cheddar cheese, and plenty of broccoli. Plus a little bit of coconut milk gives this soup an even creamier texture. It’s such a delicious healthier take on my favorite broccoli cheddar soup.

I’ve definitely shared my love for broccoli cheddar soup many times over the years. It’s one of those soups that for me, brings back all the best memories. I’ve loved a bowl broccoli cheddar since the days of my mom taking me out for lunch, way back when we lived in Cleveland.

It wasn’t that often that we’d go out for lunch, but when I could convince my mom to take us to Panera, it was always the best. The boys would just get bagels, but mom and I would get soup. Either the broccoli cheddar or chicken noodle, but broccoli cheddar was the favorite.

I haven’t had Panera since probably 6th grade, but I remember it being creamy, cheesy, and so delicious. I’ve loved a bowl of broccoli cheddar soup ever since. I feel like a lot of you have similar stories. It’s such an all around loved soup.

The idea

I already have a good broccoli cheddar soup on HBH. But I wanted to create a healthier version that was still just a creamy and delicious.

I thought I could mix in a cauliflower purée to add creaminess, plus an extra serving of vegetables too. It worked perfectly, and you’d never know that cauliflower is even in the soup!

Details

This soup is easy, but it does involve one extra step that a traditional broccoli cheddar soup doesn’t include, a double purée.

Start out simply with an onion, carrots, and broth. Add a head of cauliflower and let the soup simmer until the cauliflower is super tender. Purée this mix until it’s super creamy. You don’t want any chunks of cauliflower left over.

If you enjoy chunks of carrot in your soup, be sure to pull those out before puréing the cauliflower.

Return the creamy base to the stove, then in goes the broccoli. You’ll need to cook the broccoli until it’s tender too, then do another round of blending. This time, don’t blend the soup all the way. I love to leave some chunks of broccoli.

Next, add a little cheddar cheese. Then add a splash of canned coconut milk to make the soup perfectly creamy…but without any cream!

I’d highly recommend serving this soup with a side of crusty bread or pretzels. You need something for dipping!

  • 1. Melt together the olive oil and butter in a large dutch oven over medium heat. Add the onion, carrots, and thyme, and cook until fragrant, about 10 minutes. Stir in the flour and cook until golden, about 2 minutes, then gradually whisk in the broth. Add the cauliflower and bring to a boil. Cover, and cook over medium heat for 10 minutes, until the cauliflower is tender.
    2. Transfer the soup to a blender and purée until smooth. Return the soup to the pot. If needed add 1-2 cups water, then the broccoli, bay leaves, paprika, cayenne, and a large pinch each of salt and pepper. Bring to a simmer over medium heat and cook, uncovered, until the broccoli is tender, about 10 minutes.
    3. Remove the bay leaves and blend the soup in batches until the broccoli is finely chopped, but small chunks still remain.
    4. Return the soup to the stove and set over low heat. Stir in the coconut milk and cheese until melted and creamy. Taste, and add salt and pepper as needed. If the soup is thick, add broth to thin. Ladle into bowls and top with a little extra cheddar and fresh thyme. Enjoy!

  5. Hi! I don’t have a dutch oven yet (small apartment probs) but can I sauté veggies in a pan and then add everything to a slow cooker at once? How long do you think?

    Soup is my go to comfort food on cold, snowy winter days. Normally, I wouldn’t go for the broccoli cheddar soup but the ingredients were in my pantry and fridge, and boy am I thankful for that.     I made this soup with my 96 year old Dad and he did such a great job chopping up the broccoli that I didn’t have to use the second step of pureeing the broccoli. We loved the soup! I would say I had to add a little more broth to cut the coconut taste down but other than that its a thick creamy yummy soup that was easy to make. Thank you again for sharing your yummy recipes!

    I usually love your recipes – you’re one of my favorite food bloggers – but this was a miss for me, especially the coconut milk. I don’t think it needed it and even though j used unsweetened, it still gave the soup a sweet taste. To make it creamier maybe evaporated milk would have been better.

    We made this last night and it was yummy!….but too strong on the Thyme. It overpowered the rest of the flavors. Kids didn’t like that. You couldn’t taste the broccoli or cheese because of the spices. Next time I’ll omit the Thyme, or try your other Broccoli Cheddar soup recipe which looks delicious too!
    For dessert I made your Crinkle Top Brownies which are ALWAYS a crowd pleaser. My family loves them!

    Okay. This was fabulous. I love broccoli cheddar soup but don’t usually eat it because the dairy will bother me, but this was just as (if not more) delicious than what I remember, and I felt great after! I used chicken bone broth to add some protein to it and ate it with a chunk of sourdough. Yum!!

  40. Loved this recipe! Really so much healthier and has a good flavor. My husband said he wouldn’t eat it and then had 2 bowls. I did not have to add extra liquid, and only added 5 cups of broth to the soup. Arguably didn’t need the coconut milk, it was already super creamy. Reheats well and with some crusty sourdough, delicious!

  41. Hello. I love the Half-Baked Harvest recipes and have cooked (with the help of my husband – much better cook:)) and we love! The soup was sadly a fail for me- really bland. I am new to the kitchen so trying to guess what I messed up! How many cups of cauliflower should I have used? I might have misjudged the size of a small head of cauliflower. Also, I did substitute almond flour for the flour – could that be a bit of the issue? Thanks so much – appreciate any tips!

    I made this yesterday and it was delicious!!! The immersion blender was key to pureeing the cauliflower and broccoli mixture. I set aside sliced carrots and small broccoli florets for texture in the soup. I added them at the end before the coconut cream and cheese. I used regular sharp cheddar and a Vermont white sharp cheddar blend and the consensus was that it was great! Even though it makes a ton, I am almost out and will make more again soon. I found 6 cups of broth and no extra water to be the perfect amount of broth.

    I decided to make the soup…as well as the pretzels!!! It became a family affair after I assigned everyone some chopping and prep tasks. The kitchen was buzzing for an hour, and it was worth it!     This one did not disappoint! 🤤 My husband doesn’t like cauliflower and he said he wouldn’t have known it was in there if I hadn’t told him. It was creamy, healthy, and still cheesy like we like it. I also made the pretzels but made them as pretzel bites instead and it was a perfect addition to the soup!     This was the first time that I have ever made broccoli cheddar soup. I just served up a bowl to my husband with a slice of crusty bread and he said it was probably the best
    soup he has ever had. That is quite a compliment.
    The recipe is super easy to follow and I used an immersion blender.
    I actually had some left-over ham and I added that in to the soup at the end.

    Tried your healthy broccoli cheddar soup recipe today- it is pretty cold and snowy in Michigan so it was an excellent choice for today. My husband loves broccoli cheddar soup but between the salt and fat content of restaurant soup, we steer clear of having it. The recipe turned out great! I missed catching the coconut milk in the recipe before I headed to the grocery store but I added a small amount of half & half to add some more creaminess and that worked. Very tasty and satisfying. I will definitely make it again. Since my hubby has never in his life had cauliflower and said he never planned to, I did not mention the addition to this soup and he did not catch it. It added body and created creaminess for sure. THANK YOU for sharing it with us!

    This was VERY GOOD and EASY. It was thick enough but I might add more cauliflower next time. I used frozen riced cauliflower and perhaps 12 ounces is not enough.     I made this soup yesterday and was a little disappointed. “Only a little that’s why I gave it 4 stars.” The soup was not thick enough for my liking and was missing something. I want to make it again and need some suggestions-
    1. Should I add more cauliflower to thicken the soup? I did not use the entire head of cauliflower because I thought mine was larger than a small. Maybe you could suggest a number of cups of cauliflower.
    2. My broccoli was not quite 4 cups. It was more like 3.5 cups. Next time I’ll buy more.
    3. My grocery store did not have full fat canned coconut milk so I used the coconut milk in a carton. Did that make a difference in the flavor?

    Thanks in advance. I received one of your cookbooks for Christmas and have marked lots of the recipes to try.

    1. I just read the other comments. I think all I need to do is reduce the amount of broth. That should solve both of my comments – thickness and taste. Five stars for sure!!

    This is a delicious lighter version! I am not a fan of heavy creamy soup and I liked the addition of cauliflower & omitting heavy cream or milk which adds too many calories/fat.
    I “cheated” & made a quicker version by using prepackaged mirepoix, cauliflower pearls and a bag of ready to use broccoli. I ran out of my homemade stock so I used an organic boxed stock. Cutdown on prep time on a busy weekday!

    Following the first posted comment, I took out 2 cups of the broth before I added the broccoli (to freeze for a later soup). I made up some of the volume by using a full can of coconut milk (what was I going to do with half a can?). I used at least 2 full cups of grated cheddar and maybe a little more – I didn’t measure.     Great recipe. I did, however, suffer from mild facial burns not properly covering my blender with hot cauliflower purée 🥴. #blendersafety
    I decided to get a potato masher and mash the rest after treating the burns 🥵. Looking into emulation blender for future recipes. But it was an excellent soup. Will make it again.

    So tasty – my only issue is there was way too much stock. I would do 4-5 cups not
    8! I had to remove a bunch of the base prior to adding broccoli – but it’s delicious! And now I can just use the base for a faster soup in the future. Made cornbread to pair with it …very tasty!

    Full disclosure, I’m doing a January pantry challenge, and subbed out white pepper for black pepper, and Italian seasoning blend for the thyme, and bay leaf and the soup turned out fine.
