  • Simple Greek Quinoa Dinner Omelets with Feta and Tzatziki. Because breakfast for dinner is always the best. Grab the recipe below. .

For the Quinoa
1 1/2 cup cooked quinoa
1 cup fresh spinach chopped
1/2 cup pitted mixed Greek olives
1/4 cup red roasted red peppers, marinated artichoke hearts + sun-dried tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
kosher salt and pepper
crumbed feta cheese (as much as you want)

For the Omelet
6 large eggs
2 tablespoons butter
.

To make the quinoa, add all ingredients to a bowl and toss well.
.
To make the omelet, whisk together the eggs and a pinch each of salt and pepper. Whisk in fresh herbs).
.
Heat a large skillet over medium-low heat. Once the pan is hot add 1 tablespoon of butter and swirl the pan to coat. Pour in half of the egg mixture and let it set for about 10 to 20 seconds. Use a heat-safe spatula to gently move the set eggs toward the middle of the pan, then tilt the pan so runny eggs take their place. Sprinkle the quinoa on one side of the omelet. Fold the other half over the quinoa. Repeat with the remaining eggs.

Top each omelet with Tzatziki, avocado, pine nuts, and basil. EAT! .
