Herbed Butter Heirloom Tomato Pizza! This is the end of summer pizza we all should be making. Homemade pizza dough topped with herby garlic butter, baby spinach, creamy goat cheese, and summer heirloom tomatoes. Bake everything up in a super hot oven until the tomatoes roast, the cheese is melty and bubbly, and the crust is golden and perfect. Once out of the oven, top with fresh heirloom cherry tomatoes and a light drizzle of balsamic vinegar for the most delicious mix of roasted and fresh tomatoes with every bite.

Effortless August dinners are my goal right now. Well effortless, but also fresh, and of course, delicious. Another goal? Use up all the herbs that are overflowing in the garden…and all the cherry tomatoes too.

So basically, this pizza is almost 100% brought to you by our overflowing garden. I hope you all are as excited as I am about it. Summer produce is everywhere and I’m really trying to use it all up before switching into cozy fall mode. Which, knowing me, will be soon.

Surprisingly I’ve yet to make a summer-inspired pizza this season. So, I thought this week was the perfect time to change that. Enter this herby, buttery tomato pizza. It’s the perfect, under-30-minute weeknight pizza. But it’s great for the weekend too…because let’s be real, pizza is good any day of the week.

Truth is, there are a million and one tomato pizza recipes out there on the internet. So, I hesitated to share one. However, I knew if I was going to share a tomato pizza, I’d better give it a little HBH touch.

I’ve been making a version of this pizza every other week since early July. Tweaking it each time until I landed on the perfect recipe that’s simple, but good, different, but still achievable.

So here is how it goes…

Start out with fresh pizza dough; you can use store-bought or homemade. My very favorite dough recipe is in the new HBH Super Simple cookbook. Tip? I always keep fresh dough in the fridge/freezer for an impromptu pizza night. It thaws in no time. And it can be used not only as a base for pizza, but also things like breadsticks and cinnamon knots.

For the sauce, I turned to my go-to, Land O Lakes® Butter with Olive Oil and Sea Salt. It creates a quick “white” sauce that I absolutely love. Combined with tomatoes and mixed with the olive oil flavor, it is so delicious. The Land O Lakes® Butter with Olive Oil and Sea Salt creates the perfect pizza base when mixed with garlic, fresh herbs, and chili flakes. It spreads easily over the dough and provides a buttery flavor with hints of olive oil and sea salt.

Once you’ve added the herbed butter sauce, layer on baby spinach, creamy goat cheese, heirloom tomato slices, and sharp provolone. As the pizza bakes, the slices of tomato turn sweet and caramelize. The herbs bake into the dough, and the cheese turns warm and melty.

Final step? Toss some fresh cherry tomatoes onto the hot pizza as soon as it comes out of the oven. I LOVE the combination of roasted tomatoes and fresh cherry tomatoes. You get that deep caramelized and jammy tomato flavor from the roasted tomatoes. Along with a sweet burst from the fresh cherry tomatoes.

Best of both worlds…it’s a warm and roasted flavor, but also fresh, and so delicious.

Thursday night pizza? Yes, let’s get to that. Fingers crossed you possibly have everything on hand right now!

  • 1. Preheat the oven to 450 degrees F. Grease a large baking sheet with olive oil.
    2. In a small bowl, combine the Land O Lakes® Butter with Olive Oil and Sea Salt, garlic,
    oregano, 1 tablespoon thyme, basil, red pepper  flakes, and a pinch of pepper.

    3. On a lightly floured surface, push/roll the dough out until it is pretty thin
    (about a 10-12 inch circle). Transfer the dough to the prepared baking sheet.
    4. Spread the dough with the herb butter sauce. Add the spinach and goat cheese,
    then layer the tomato slices on top. Season with salt and pepper. Top with
    provolone or mozzarella.
    5. Transfer to the oven and bake for 10-15 minutes or until the crust is golden
    and the cheese has melted.
    6. Toss the fresh cherry tomatoes with the remaining thyme, basil, a pinch of sea salt,
    and the balsamic vinegar, and top the pizza with the mixture.
