Are you ready for a little ranting? Cause it’s about to all come running out of me. YIKES.

I am not really sure I should be sharing this info with you or not, but I’m feeling the pain that is the “crunch time” of writing your first ever cookbook. I mean, someone please come and bring me all the chocolate in the world, and maybe like a super stiff drink (wait I don’t drink), or something. I mean the struggle of book writing is real. Right about now all I really want to do is tell you guys all about these chicken skewers… then proceed on to read about celebrity gossip or something completely mind numbing. For real.

Currently, I am sitting at my desk, it’s kind of late night over here, but I have the day’s empty coffee mug, one bottle of empty kombucha (that was really a sad thing when all the kombucha was gone), one glass of water, and a few random scribbles up and down both my arms that are just staring me in the face. Writing these words is actually a super refreshing feeling.

Kind of freeing in a really odd way. It’s just nice to like… rant. You know what I’m saying?

Okok, ranting over. One, I need to tell you guys about these epic Hawaiian BBQ skewers. Two, I need to go run around in circles to release all my pent-up energy. Three, I need to get my butt out of my desk chair…it hurts (sorry, that was kind of like 2).

SO, it’s no secret around here that I adore all things Hawaiian. Pineapple is possibly my very favorite fruit in all the land, so anything with a sweet and spicy Hawaiian BBQ sauce is going to be something I LOVE. These skewers are basically summer on a stick.

And it does not stop there, because I am me, and I love sauces, and butters, and toppings galore. So I added a spicy, sweet, sriracha, lime, honey butter for brushing all over the juicy chicken when it comes off the grill. The butter just melts all over the chicken, mixing with that tangy Hawaiian BBQ sauce. Basically, it’s summertime grilling perfection.

A little dramatic (sorry, this is what happens when I write all day long…I get all slap happy and things just start flying outta my mouth)… but it is all true.

I like to serve these with a big side of white ice…obviously. Me and my rice, I can never have enough. And guys, that’s kind of it. Really fast and simple today, but still full of killer flavor.

AND well, I kind of feel like we all need to make these on Monday for the 4th. I mean, how fun and yummy would some Hawaiian skewers in sriracha lime butter be?!?

Yes, yes, YES. Do it. 🙂

Oh and also, I just have to mention that while I have been making massive amounts of food the last few months, these skewers are the ones that no one in my family can stop asking for. They freaking LOVE these. I cannot blame them though. It’s all about that pineapple… and that sriracha buttahhhh. Nothing beats this combo guys, nothing!

Hawaiian BBQ Skewers with Sriracha Honey Butter.

Ingredients

Sriracha Honey Butter

Instructions

  • To make the Hawaiian BBQ sauce, whisk together the BBQ sauce, pineapple juice, lime juice and cilantro in a medium size bowl. Now add the chicken to a gallon size ziplock bag or medium bowl and toss with 1/4 cup of the BBQ mixture.
  • Set your grill, grill pan or skillet to medium-high heat. Thread chicken pieces, pineapple chunks and bell peppers together, alternating one after another on skewers. Brush the skewers lightly with olive oil. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total. Transfer the skewers to a plate.
  • Brush the skewers with sriracha butter (below) and serve with extra Hawaiian BBQ sauce. EAT!

Sriracha Honey Butter

  • Mix together all the ingredients in a bowl. Serve at room temperature.

    Just did this recipe for dinner and it was so good! Best part is we almost had everything in the kitchen already. Did it outside on the grill and turned out so yummy. This butter is dangerous!

    Family enjoyed! I like the idea of skewers, but they are often bland. These were very flavorful – Sriracha sauce was great! I served with rice with Cilantro and corn on the cob. This is a keeper.
