Is there anything better on a hot day than homemade chocolate fudge popsicles? I don’t think so, and these easy pops are made with only real food ingredients, no processed or added sugars. And of course, they are completely delicious, extra chocolatey, and so creamy.

Welcome to Friday! Is anyone else super excited that the weekend is here? It was a week of ups and downs for me, so I am excited to chill tonight and hopefully turn my brain off for a minute. Question, how do you guys like to relax after a stressful work week? Would love to hear your favorite things to do on Friday nights to unwind. Are you more of a need to get out person or a homebody?

Personally, I am such a homebody. I love staying in and curling up on the couch with a bowl of Friday night pasta in hand (recipe is in the book). Of course, I haven’t actually done this in ages, but my goal is to do that tonight!

As for Saturday and Sunday, no real plans yet, but that just makes for the best weekend, right?

OKAY. Let’s talk about these popsicles.

As if it wasn’t clear from all of the grilling recipes I posted this week, I am really ready for the summer weather. I get the feeling most people are, as it’s that time of year when everyone just craves a day full of sunshine and hot temps, maybe glass of summer Rosé, and popsicles!

Always popsicles

I just love popsicles. Who doesn’t? There’s something so fun about them, and chocolate fudge popsicles always remind me of being a kid and reaching for them after coming inside from the heat. Looking back, my mom would always buy those processed fudge popsicles that tasted more like ice.

These are better. Much, much, better. And not full of any weird, unknown artificial ingredients either.

They’re actually kind of healthy. Yes, please!

Here’s the story. Lately I’ve been having a hard time with sweet recipes. I keep going back and forth on whether or not I should be sharing healthier items or have fun and go all out. Sometimes it’s ok to indulge in a really good chocolate dessert and sometimes you need something chocolatey, but just not a sugar filled slice of cake. You know?

My thought process is, with summer drawing near, a lot of you might be looking for something healthier to satisfy your sweet tooth cravings, but of course, still delicious.

Enter these latte popsicles that are honestly just the most delicious, creamy, chocolate popsicle ever. Definitely a new favorite.

The base of the popsicle is pretty simple, raw cashews, coconut milk, and dates. The combination of these three ingredients create a popsicles that is creamy, smooth, and sweet, but without using any kind of added sugars. LOVE this.

To flavor the popsicles, I really wanted to use coffee and go for a latte kind of taste (because I love coffee and I especially love coffee and chocolate together). So in went a little black coffee along with some vanilla, because cashews, coconut, coffee, and vanilla make for one delicious latte popsicle.

And then?

The chocolate. Yes, you know I had to dip each popsicle in a little melted chocolate and it’s just about as heavenly as it sounds.

I really cannot begin to describe just how good these are.

Each bite it a mix of creaminess and crunch with hints of coffee, cashews, coconut, and vanilla. I know that sounds like a lot, but all the flavors just pair so well together. You really can’t beat these. You just can’t.

These need to be on your list to make soon. Like this weekend, or maybe for Memorial Day weekend…and then every other weekend after. Clearly I’m really hoping that these pops will become a summer staple for you all!

Hoping to end my Friday night with a side of these popsicles, because I have two bags full in my freezer and they have my name written all over them. Already very excited. Best part? I don’t have to feel even the least bit guilty about eating these because they are vegan, gluten free, and full of healthy fats, protein, and plenty of antioxidants from those dates.

Does this mean we can just snack on these all day then you think? Hmmm…

Bring on that summer heat please!

Chocolate Coconut Latte Fudge Popsicles

Ingredients

  • 1. Bring a small pot of water to a boil. Add the cashews and let sit 15 minutes or up to 2 hours. Drain.
    2. In a high power blender or food processor, combine the cashews, coconut milk, dates, vanilla, pinch of salt and 2 tablespoons coffee. Blend until completely smooth and the consistency of a thick smoothie.
    3. Evenly divide the remaining coffee among 7-8 popsicle molds. Spoon the cashew mix over the coffee, it should naturally create a swirl of coffee. Insert popsicle sticks, cover the tops of the mold, and freeze until firm, about 4 hours. To remove the popsicles run the mold under hot water for 10 seconds and then pull the popsicles out of the molds.
    4. Dip each popsicle in chocolate. Store in the freezer.

  1. Yum! These look so good. I love chocolate and dates together. My fave way of ending Friday is playing video games (a game called Super Smash Bros.), scrolling through this blog, and daydreaming.
