Fig Honey Thyme Prosecco Smash | halfbakedharvest.com @hbharvest

Celebrating the weekend with this fig honey thyme prosecco smash.

Hey, hi! Happy to be sharing a personal favorite cocktail recipe today! If you know me, than you know I am just slightly obsessed with figs. I’ve definitely mentioned this before on the blog, but you don’t hear about it too often because fig season is pretty short, especially here in Colorado.

When the figs finally make their way to my local Kroger or Whole Food’s store I practically buy them all; yes, I love them that much. Figs finally showed up a couple of weeks ago and I’ve been consuming them by the buckets. I wish I was joking, but I am not. They are clearly my favorite.

Anyway, I decided it was time I share a recipe using these sweet little fruits, and of course a cocktail came to mind. What I love about this fig smash is that it’s the perfect drink to move us into autumn (sorry, I can’t stop with this fall talk…issues, clearly I have issues). Its taste is warm and cozy, but its pink tone has more of a summer vibe. Either way, in my eyes it’s the perfect drink, sweet, with the slightest hint of thyme, and extra sparkly…which if you have not noticed, most of my cocktails are. I love a little (okay, a lot) of fizz action.

Here’s a quick breakdown of this simple cocktail…

fresh figs…I like to use black mission.

ripe plums…if you cant get your hands on plums, us a couple of tablespoons of pomegranate arils.

elderflower liquor…the surprising ingredient that make this drink so special.

lemon juice…got to have a little citrus.

honey…to make everything just the right amount of sweet.

fresh thyme….love this paired with the figs.

prosecco…every good drink deserves some bubbly action.

Muddle everything together, add the prosecco.

DONE.

  1. 4 stars
Nice flavor balance. I had Turkey figs and I my plum just wasn’t the best. One would think in Florida one could get great produce…NAH. I cut the recipe down to 1 serving. I love figs and elderflower and topped off with Prosecco…well delish. I’m glad I tried it…now to move on to try some others with Prosecco so it doesn’t go to waste…Oh who am I kidding.

    1. HI there! I recommend using strawberries or another berry you love. Raspberries, blackberries or pomegranates would all work! Please let me know if you have any other questions. I hope you love this recipe! Thank you! xTieghan

  3. Made these last night to celebrate Rosh Hashanah with friends…killer recipe!! We served them alongside a stuffed figs with goat cheese, walnuts, thyme and a drizzle of honey. They were perfect together! I looooooove that you are my “go-to” for entertaining…I always know that any recipe I make of yours is going to be a hit!

  4. I love everything about this! You might be obsessed with figs, but I am obsessed with Prosecco! LOL! And I also really happen to like figs. As a sidenote, I saw your book today in Barnes and Noble and it was so exciting! But I didn’t need to buy it because I had already pre-ordered! 😉 Congrats!

  5. A thing of beauty! Love all of this, including prosecco, which I much prefer to champagne but don’t know why! And the elderflower liqueur and the honey and all of it, thank you!

  6. This looks amazing! I know you said the elderflower liquor makes this drink special but I have no chance of getting it around here. Do you think I could substitute it with something else?
