Think sweet, citrusy, and warming. The perfect cocktail to cozy up to and welcome the start of autumn and the cooler days ahead.

Hey, hi and happy Saturday!

I am so excited. Today is the official start of cocktail Saturday. From now until the new year we’ll be sharing a new cocktail leading up to the holidays. This is crazy, but this will be our 3rd year doing our “Cocktail Saturday” series. Fingers crossed that it’s our best year yet. I have SO much fun with these recipes because I feel like I have all the freedom in the world to get creative with these drinks. Drinks are semi-new territory for me, so I have so many fun ideas for them.

I wanted to kick things off with a super easy and really autumnal drink. Enter this fresh fig dark and stormy.

I first had a Dark and Stormy while on our family vacation to Costa Rica over the summer. My brother Malachi ordered one while out to dinner and said that I had to try it. I hesitated because I’m oddly not a big drinker, but decided I should give it a try.

Oh my gosh. SO GOOD.

And it’s 100% because of the ginger beer. After a little research, I realized a dark and stormy is made up of three very simple ingredients, rum, lime juice, and ginger beer. The key? High-quality rum and really good ginger beer.

Of course, I wanted to give this classic cocktail my own twist, and of course, it needed to be perfectly fitting for fall. With fresh figs currently in season, I couldn’t resist creating a very “figgy” dark and stormy.

And you know what? It’s insanely good.

Here are the very quick and simple details.

Start with good fig preserves, rum, and lemon juice. I always buy fig preserves in the cheese section at Whole Foods. This is the exact brand I buy and I LOVE it so much. For the rum, I stay true to the classic Dark and Stormy recipe and use Goslings Dark Rum.

Here are the details on how to make this drink…they’re pretty simple.

Shake the fig preserves, rum, and lemon juice together, then strain into a glass filled with ice.

Now, my favorite part, the ginger beer. If you didn’t know, I LOVE ginger beer and use it for topping almost all my cocktails. It adds a spicy ginger kick, as well as a subtle sweetness, that makes every cocktail just perfect. I typically use a local Colorado ginger beer but sometimes I’ll use Goslings Ginger beer too. Just find one you really love.

Finally, finish with fresh figs and thyme.

Easy, but GOOD! The figs add such a nice sweetness and really give this cocktail a great autumn feel. I could not think of a better drink for these golden September days. So find some figs, and enjoy this drink all September long. And hurry, because fig season is short.

  • 1 tablespoon fig preserves
  • 2 ounces dark rum (or bourbon)
  • juice of 1/2 a lemon
  • 3 ounces ginger beer
  • fresh figs and thyme, for serving


  • 1. In a cocktail shaker, combine the fig preserves, bourbon, and lemon juice. Shake to combine.
    2. Strain into a glass filled with ice. Top off with ginger beer and garnish with fresh figs and thyme. DRINK!

  1. I make this regularly – it’s DELICIOUS. I wish I could find a way to pre-strain the seeds out of the fig preserves. You’ll have to post a recipe for homemade fig simple syrup!
