If there was ever a cookie that screamed Christmas, it’s these Eggnog Frosted Chai Snickerdoodle Snowmen.

Happy (Christmas) Cookie Friday!

I’m pretty excited the weekend is here. I have grand plans of doing some serious online Christmas shopping (I am horribly behind and stressing about how close Christmas is…yikes!), and having a “Christmas day” with Asher on Sunday. She is the cutest, and she text me on Wednesday night asking when we could have our annual Christmas day. Obviously, I can’t let being busy, and the hustle that comes with the end of the year, come between spending time with this girl, so Sunday afternoon it is!

Pretty excited. Asher want’s to make homemade lotions and sugar scrubs, decorate cookies, and watch Christmas movies. Anything else we need to add to out list? Would love to know what holiday things you guys love doing.

I’ll be spending a good part of Saturday over in Breckenridge watching my younger brother Red compete in the 2017 Dew Tour Men’s Slopestyle finals. It’s a pretty big competition, as it’s one of the last Olympic qualifiers. He’s currently the youngest rider competing, he qualified in first for the US team and second overall. To say that I am a little proud would be an understatement. I don’t even care how he does tomorrow, just so happy and excited for this kid. Only seventeen and living his life to its best.

Since we have so many things to celebrate today, I thought we would talk cookies!

Tis the season, right!?!

Guys…these snickerdoodles? They are extra special snickerdoodles.

Say hello to eggnog frosted, chai scented, snickerdoodle SNOWMEN.

Side Note: please excuse all the shouting in today’s post. I am just way too excited.

Oh these cookies. If Christmas had a cookie, I do think these would be it. Okay, maybe they would be reindeer or santa cookies? If I had the skills I would have attempted those instead of snowmen, but straight up? I am not the cookie decorator type. Snowmen are my kind of thing, and you know what? I think they’re pretty freaking cute.

The bestest part? Aside from taste of course? These snowmen are EASY. I’m talking no rolling out dough, no weird food dyes, no fancy (and tasteless) frosting, no dough chilling, no special tools, no hair pulling, and no tears.

Nope, none of that. Just cute, yummy, delicious cookies.

The cookie base is pretty simple. I like to use a little cream cheese in my dough to keep the snickerdoodles extra soft and extra doughy. I rolled each dough ball in my homemade chai sugar and then simply placed one smaller dough ball on top of a larger one to create a snowman. Yes, just one on top of the other.

Again, nothing fancy or complicated here.

I frosted each cookie with eggnog buttercream and decorated with Reese’s and chocolate…so all the yummy things.

For the snowman’s hat, I used half of a mini Reese’s and then crushed Reese’s Pieces for his nose. I built his buttons out of chocolate and used a little red sanding sugar for his scarf.

I finished each cookie with a sprinkle more of chai sugar and done.

Simple, fun, and delicious. The way all cookies should be.

Also, the combo of chai sugar on the cookies, plus eggnog in the frosting? THE BEST.

These are the perfect cookie to bake with friends, family, young kids, anyone really. Everyone has fun making them and putting their own personal touches on their snowman.

Planning to surprise Asher with these on Sunday as part of our Christmas day. She has been begging me to make snowman cookies all month long. Actually, she has been begging me to make snowman cookies since October, so I know that she is going to LOVE these and have fun decorating them…and then eating them…along with a mug of hot cocoa while watching The Santa Clause (our favorite). Sounds perfect, right?

It will be!

Chai Spice

Eggnog Frosting

  • 1. Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
    2. In a medium bowl, combine the flour, baking soda, and baking powder.
    3. Using an electric mixer, in a large bowl beat together the butter, cream cheese, and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla and beat until combined. Gradually add the flour mixture, mixing until just fully combined.
    4. To make the chai spice sugar. In a small bowl, combine the sugar, cinnamon, ginger, all-spice, and cardamom.
    5. Roll the dough into two sizes of balls. 16 (1 1/2 inch, about 1 tablespoon) size balls, and 16 (3/4 inch, about 2 teaspoons) size balls. Then generously roll through the chai sugar.
    6. To make the snowmen, place 1 smaller baller and 1 larger ball together with the edges touching on the prepared baking sheet, spacing the cookies 2 inches apart. Repeat with the remaining dough balls. Transfer to the oven and bake for 8-10 minutes or until the cookies are just starting to set around the edges. Let cool completely.
    7. To make the frosting, beat together the butter and sugar until creamy. Add the eggnog and nutmeg, beat to combine.
    8. To frost the cooled cookies. Place half a mini Reese's atop the snowman's head. Decorate as desired with candies and melted chocolate.

  1. I’m a little late to this cute snowman cookie post, but I just made them – delicious and super cute!!
I’m wondering how you store them. Do they freeze after decorating?

    1. Hey Amber,
You can freeze or store these in an airtight container. I hope you love the recipe, please let me know if you have any other questions! Happy Holidays! xTieghan

Fantastic cookies! I was nervous that the chai would be overpowering, but they are actually a bit milder than normal snickerdoodles and not as sweet….which I love! Very easy recipe and so delicious! I actually just made as regular snickerdoodles, not the snowmen, and didn’t frost (not everyone wanted the frosting) and I loved them this way! Will absolutely make again!

  3. We made these last night and the taste is awesome! Our home smelled amazing all evening. So flavorful with a lovely soft cookie texture and not of crunch from the sugar&spice mix. The eggnog frosting is crazy good but the recipe makes so much of it that we have a lot of leftover – I’m going to whip up come plain sugar cookies to slather it on.
Two issues we had were that this is a pretty sweet cookie, esp with frosting on top so I will experiment with reducing the sugar. Also, despite following directions out cookie balls didn’t adhere to each other for 80% of the snowmen. Not too sure why, they were right beside each other but the sugar coating almost seemed to prevent them from adhering to make the snowman head and body. All in all a fun, unique recipe that we will tweak a bit and continue to make for the holidays.

I was really excited to try this recipe but was bummed because they were a little bit dry.
The chai spices were tasty and I might try it again and modify the flour ratio the next time.

My husband and I made these last night. They are so cute and delicious! It will be our go to recipe for Christmas from now on. They are really so good! The flavors are just perfect! Thank you, for an amazing recipe.

    1. HI! I would recommend adding 1 teaspoon kosher salt. Please let me know if you have any other questions. I hope you love this recipe! Thank you! Have a wonderful Thanksgiving!! xTieghan

  6. These are amazing. I plan to make them for a cookie swap in the next couple of days. What did you put on the plate to make it look like snow?

    1. HI! I use Maldon flaky sea salt for the “snow”. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much!! xTieghan ?

  7. Hi!! I really want to make these for a cookie bake off!! But the bake off is Thursday and we’ll theres NO time during the week! Do these freeze well? Any suggestion for making them last from a Sunday to a Thursday??

    1. Hey Nicole, the cookies will freeze really great! You can bake, then freeze, then thaw overnight on the counter. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much!! xTieghan ?

  8. My husband (who is not a cookie person) declared these to be the best cookies I’ve ever made, and that if I insist on making holiday cookies, these must be it. They are delicious!

Oh my. These are the cutest cookies ever. I’m not great when it comes to decorating cookies but your recipe looks simple and doable and I love how each snowman isn’t exactly the same but unique looking in their own special way. So ADORABLE.

  12. I thought I had chosen my holiday cookies to bake until I saw this one, its too delightful not to include! Thank you, how irresistible these look!

  13. Hi, are these adjusted for high altitude baking? I just moved to CO and am having a hard time adjusting my baking to the altitude. Since you live at altitude I was curious if all your recipes are adjusted to reflect any special considerations there. Thanks!

    1. HI! I don’t typically adjust for the altitude as I find it always gives me a dry baked good. My one secret is to underbake everything. If you bake these for the allowed time in the recipe (8-10 minutes), I think they will be great! Please let me know if you have other questions. Hope you love this recipe! Happy Holiday’s ? 🙂

  14. Sounds like the perfect way to enjoy HOlidays! Love that you and Asher have a date. Cute! I want to come make these! 😉

  15. Awwwww! These snowman cookies are the cutest! I almost wouldn’t want to eat them…
BWHAHAHAHAHAHAHAHAHA, yeah, like any of us believes that. Seriously though, awesome recipe and stunning photos. You seriously inspire me, lady!!!

  16. Hey Tieghan,
I love these chai spiced eggnog snickerdoodle snow people! Haha I just baked my mom some eggnog chai spiced snickerdoodles, last week, and she said they were some of the best cookies yet! ? I agree that the eggnog is perfect for making a fluffy but chewy cookie, and I like your idea of making two cookies into one. I hope Asher has a wonderful time on Sunday and you both enjoy the time together. Maybe you could go for your walk together, then come back to some cinnamon rolls or stew (while making your lotion and scrubs)? I also go for a walk every day and love when my mom is able to join when I visit. Also, maybe you can make smores or bark while watching your Christmas movies? I hope Red does well this weekend and you have a nice time! 🙂

    1. Hi Kristin! That is so awesome you mom liked your cookies.. These kind are just so yummy! Such great ideas for me and Asher to do! Thank you!

  17. Yes, yes and YESSSSS! These are so adorable and I love the combination of buttery snickerdoodle with chai spice. YUM!

I’m just speechless.. Well, not really, but all I can say is an AAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAHHHHH scream of excitement!
You almost overdosed me by the cuteness of these. They are WONDERFUL!! Outstanding, creative, joyful, all things Christmas!!
Perfect for this time of the year. And it would be such a nice gift for.. anyone to be honest. I’m lacking decorative skills, all my attempts to make my cookies cute failed every time, but this sems easy enough to be a success at the end (fingers crossed).
    {As a matter of fact: evidence here, my shortbread christmas cookies:}
You amaze me every time, Tiegh, it’s unbelievable how talented you are. I want to take a lessons from you, can I move into your barn for a couple of months and gather some experience?
    Have a lovely day!
    Sending hugs,

    1. Awh I am so glad you love these!! I don’t know what you’re talking about.. Your cookies look amazing! Haha I would love to cook with with all of you guys sometime! Thanks so much and have a great weekend!
