Time for yet another breakfast recipe!

Yep, pretty sure it’s no secret that I’ve been super into breakfast foods lately. This quinoa breakfast bowl, these beignets, and these yummy crepes…all posted within the last few weeks…are all good examples. So yeah, it’s safe to say that I’m on a roll with the breakfast recipes. Anyone else having a major moment with breakfast?

When I was a kid, I wasn’t really that into breakfast. In fact, I still don’t eat a large meal right after waking, I need some time in the morning, which is why I almost always save big breakfasts for lunch. When we can, this is my mom and I’s thing we share for a little mid-week fun.

Anyway, when we were growing up my mom would always try to get us to eat oatmeal, but my siblings and I always opted for cereal, frozen waffles or bagels. Typical kids right?

As I got older though and learned a little more about how a healthy breakfast is so important, I began making oatmeal and topping it with a little honey and fresh fruit. It was simple, healthy and totally delish. Plus, me being the fruit freak that I am, I topping my oatmeal with seasonal fruit instantly got me obsessed! This combo also became an easy snack, and to this day, I love oatmeal, whether it’s for breakfast, lunch, or a quick snack!

I’m really excited to be partnering with Pure Growth Organic to bring you one of my favorite oatmeal recipes. If you’re unfamiliar with Pure Growth Organic, they sell healthy organic snacks and oatmeal. Whenever Asher comes over, she always heads straight for the pantry and grabs their animal crackers. They are her favorite after school snack!

Today I’m using their Original Oatmeal and adding in the flavors of earl grey tea and fresh blueberries! YUMMM.

For some reason whenever I think of earl grey tea, I always think of pairing it with blueberries. I’m not sure why, but I love the combo…which is probably why I have a recipe in the breakfast chapter of the HBH cookbook for earl grey blueberry muffins!

What I love about this Earl Grey Blueberry Oatmeal recipe is that is it so fast and easy. Here’s how it works. First up, steep your tea in milk. I like to use coconut or goat milk, but any milk will work. Once the milk has been infused with the tea, simply stir in your oatmeal, blueberries, a little vanilla, and honey. Oh, and some chia seeds for a little extra protein and omega 3’s. Simple but perfect in every way.

This is a great recipe for a busy weekday, but equally great for relaxed weekend brunching. I top my bowl with banana slices, fresh blueberries, hemp seeds and a drizzle of honey or maple for just a little extra sweetness.

In other unrelated news, happiest Tuesday! I feel Like I just jumped right into this post without saying hi! How’s everyone’s week started off? Can you believe we are already one week into March? I’m currently dreaming of St. Patrick’s Day and Easter recipes…oh and spring weather! Not sure that spring weather is coming around here anytime soon around her, but a girl can dream!

Any of you planning a fun spring break trip? My family always used to head to Florida for spring break, but I’m not sure the whole crew can make it happen this year. Hoping we can all get together this summer for a fun trip though.

In the meantime, I’ll just be here, cozying up to this warm bowl of oatmeal..topped with an obnoxious amount of blueberries.

Earl Grey Blueberry Oatmeal

Ingredients

  • 1/2 cup milk
  • 1 earl grey tea bag
  • 1 packet Pure Growth Organic Original Oatmeal
  • 1/4 cup fresh blueberries, plus more for serving
  • 1 tablespoon chia seeds
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • pinch of flaky sea salt, to taste
  • sliced banana, honey, and hemp seeds, for serving

Instructions

  • 1. Heat the milk in a small sauce pot until just scalding, remove from the heat, add the tea bag, cover and steep for 10 minutes. Remove the tea bag and stir in the oatmeal and blueberries. If the milk is not warm enough to cook the oats, gently heat the mix on the stove and stir until thickened, if needed add water to thin slightly. 
    2. Stir in the chia seeds, honey, vanilla, and salt. 
    3. Spoon into a bowl and top with banana slices, blueberries, honey, and hemp seeds. Eat!

  1. My kids and I have loved making this recipe a few times. We have even subbed chai tea in place of Earl Gray once or twice. My question is this: what is the measurement of oats if we don’t have the prepackaged ones you’re recommending?

    Another delicious, easy meal! I didn’t have any Earl Grey but steeped it with Chai instead. YUM! I found it made about two servings but I put more milk in than called for. Another staple added to the rotation! 🙂

      I always recommend that if the nutritional information is important to you, you use your own personal calculator. Ours is automatic and controlled by google.     I eat oatmeal nearly everyday and this felt like a fun “weekend” version of my usual! The earl grey adds such a subtle depth, and I’ve never thought to add chia seeds to oatmeal before. Filling and yummy :).
