I made you the crispest chili spiced fries ever. Like really.
And they are baked not fried!
But then it gets better. Way better.
I drizzled them with the most amazing (and surprisingly light) garlic/ cheddar cheese/ spicy sauce ever and then I crumbled just a little bit of bacon over top. You know for good measure.
I make these fries ALL THE TIME!
Ok well, not with the cheese sauce and bacon. That’s a new thing, but that’s only because I had not conjured up this recipe yet!
I have a feeling that these are going to be a regular around here. Although, with how much I have been cooking lately we never have the same thing twice. Unless it’s Buffalo Chicken, Taco’s or Steak, which we have way too much. Picky eaters that are obviously meat loving hungry boys are to blame for this.

Look at these fries. Not to toot my own horn or anything, but seriously, don’t they just look perfect? I did a tex-mex like seasoning on them and it is insanely good. Like the fries on their own are just awesome, but then the cheese sauce puts them over the top. Like they’re freaking killer.
The sauce. Would you believe me if I told you it was actually like, not bad for you? No, butter, no cream, no flour. I used a combo of light cream cheese and plain fat-free greek yogurt to get a super creamy and light sauce. A little sharp cheddar cheese goes a long way! It’s creamy and has just a little kick from some chipotle hot sauce (everyone in my family is obsessed with this stuff). It’s totally finger dippin’ worthy!
Alright, so here’s the deal.
I HATE deep frying foods. Like I loath it. Not only because, well it is obviously not very good for you, but mainly because it is a pain in my you know what! Really it is messy, greasy and hot. Every time I fry food my face ends up redder than a very red lobster because I have the most sensitive skin. It’s awful, not to mention rather embarrassing.
So I only fry foods that well, just have to be fried. Like donuts (No donut pan…. Yet.) and beginets and generally anything that I think will really taste better fried. Otherwise I just “oven” fry. Works like a charm.
So the finishing touch?
Bacon. The potato’s best friend.
Now I only used just a little bacon because I think bacon can totally over power any dish if used too much. It’s such a strong and distinct flavor. Plus, my dad can only handle it in little doses, and like I said the flavors in the fries and cheese sauce are just so awesome that I did not want to over power them with a whole lot of bacon.
