Getting tropical with this fun and easy Creamy Coconut Lime Mojito. White and coconut rum mixed with plenty of fresh lime and mint. This mojito is made creamy with coconut cream and topped off with ginger beer for a fizzy, gingery kick. It’s creamy and refreshing…the perfect tropical mojito. A sweet lime sugar-rimmed glass really seals the deal and keeps everyone coming back for seconds.

If I could magically transport myself to a tropical beach in the Bahamas (or any tropical destination for that matter), I would do it in a heartbeat. Doesn’t that sound nice? Warm sunshine, blue waters, temperatures in the eighty’s plus? Yes, it’s my dream right now.

But the reality? I’m here in Colorado for the unforeseen future. It’s OK, I’m alright with this. I have creamy coconut lime mojitos and an imagination so vivid it’s almost as if I really am sipping this mojito down in the Bahamas…with not a care in the world.

Yup. Today we have to tap into our inner ten your old selves and use our imaginations to transport us somewhere tropical.

In all seriousness here, this mojito is without a doubt one of my favorite cocktails…at least for the moment. It has all the things I love. It’s coconutty, heavy on the lime, creamy, and spiked with a little bit of gingery fizzy bubbles. It’s surely not your average mojito, but it is all things GOOD. And so simple to create using ingredients you hopefully already have on hand.

Here are the details.

Keeping this quick because we have mojitos to enjoy.

This mojito contains all of the following…

lots of lime…because no mojito is complete without lime.

lots of mint…again, you need this for that classic mojito flavor.

white rum…an obvious must.

coconut rum…for some tropical flair.

coconut milk…for creaminess, and it must be canned coconut milk, you need that coconut cream.

ginger beer…sure you could use soda water, but if you have it on hand, ginger beer is so much better.

First, make a little bit of salty lime sugar for the rim of your glass. It’s simple…lime + sugar + flaky sea salt.

Next, muddle the lime and mint together. Add both the rums, then the coconut milk. Shake, shake, and yes, shake a little more. Now strain into a glass and top off with ginger beer. Now enjoy. Preferably sprinkled with a touch more of that lime sugar.

Trust me, it’s the right thing to do.

Some notes for you all…

The mojito will have foam on top once you add the ginger beer. Just gently stir to combine and the foam will subside. Also? I kind of like the foaminess, it makes the drink feel just a touch more indulgent.

As the mojito sits and becomes even colder, the coconut milk may slowly separate from the rum. I don’t normally notice it much, but coconut milk brands vary greatly and can cause different outcomes. Just gently stir to mix everything back up again, then continue drinking

It’s traditional to add sugar to a mojito when muddling the lime and mint together, but personally, I don’t add any sugar to the drink itself. I find the drink to be sweet enough with the additions of the sugared rim and the ginger beer. But if you like a sweeter drink, use the sugar.

And to sum this one up for you real quick? This mojito is creamy, minty, fizzy and full of coconut and lime flavors. It uses a mix of ingredients I often have on hand (hello to rum, canned coconut, and ginger beer, from the pantry, and limes plus mint from the fridge). I hope you all have these on hand as well.

Pretty much my dream drink right now. Added bonus? This one is insanely quick and easy to put together. So let’s all enjoy a Saturday night mojito together. And maybe even an Easter Sunday mojito as well!

Instructions

  • 1. To make the lime sugar. Combine the lime zest, sugar, and a pinch of salt on a shallow plate. Rim your glasses in sugar, then fill with ice.
    2. In a cocktail shaker or glass jar, muddle the lime, mint, and sugar (if using) together, squashing everything to release the juices. Add the white rum and coconut rum. Fill with ice and shake until combined. Add the coconut milk and shake.
    3. Strain into your prepared glass. Slowly top with ginger beer, then gently stir to combine. Enjoy immediately.
    4. Mocktail: Replace the white rum and coconut rum with 1 1/2 ounces of apple cider or apple juice.
