Garlic Butter!! Creamed Corn Chicken! Oh my gosh, is there anything better? This chicken is made in under an hour, uses just one skillet, and is beyond delicious. It’s creamy, garlicky, packed with corn, and finished with fresh herbs and parmesan. Perfect cozy, summer dinner for any night of the week.

This is what I call summer comfort food. As you guys know, come the fall months I’m all about cozy, comfort foods, but I also think that summer can use a cozier recipe or two. Enter this creamed corn chicken.

It’s cozy, but yet totally summery at the same time, and I am in love with it.

Plus, it’s a one skillet, no oven, kind of recipe. So for those of you who don’t want to do a lot of dishes and can’t even begin to think about turning on the oven in the summer heat, this is your dinner.

Before I dive into all the details, I have to say thank you to everyone who commented on Monday’s post. I was so thrilled to see that so many of you enjoy my stories in addition to my recipes. Rambling on about life isn’t what most people recommend doing within a recipe blog post, but I’ve decided I don’t really care. I’m all about sharing my life stories with you guys!

I was also so excited to see so many of you commenting. Summer typically is a very slow time for the online/digital world, but it really excites me to see so many of you still reading away and commenting. I absolutely LOVE hearing from you guys and your kind words, feedback, and even (constructive) criticism, are what keep me energized and excited to share new content with you guys every single day.

So long story, short, thanks so much for reading and hanging out with me everyday! Hope you guys feel like we are friends cooking together in the kitchen…

Garlic Butter Creamed Corn Chicken with spoon and extra sauce

Speaking of which, I finally posted my first IGTV video and now we can totally can be cooking together in the kitchen. Well kind of!

I made my favorite Blueberry Chamomile Galette and had a lot of fun putting it together…but I’m not going to lie, being on camera is hard, but in a weird way, I kind of love it too. It’s definitely difficult to watch myself though. Like I just can’t do it. Thank God I don’t have to edit these or I would delete everything.

This is just the first video I’ve done, and I am filming solo while using my iPhone, so it’s for sure not perfect, but then nothing in life is perfect! That said, hoping to improve the quality of the videos now that Kai is in town to film!

Anyway, let me know what you guys think and what type of video content you would love to see!

Garlic Butter Creamed Corn Chicken

OK. Garlic. Butter. Creamed Corn. Chicken.

Here are all the delicious details.

Since it’s summer and it’s super hot, I wanted to create a recipe that was quick, simple, easy, required no oven, but was still delicious. That is this chicken.

It all starts with crisping up some bacon in a large skillet. The bacon is our first layer of flavor here, and while you can choose to leave it out if you prefer, I do think it adds so much flavor and pairs perfectly with the sweet corn. It’s up to you but…

I’d use the bacon.

Once the bacon is crisp, you’ll sear the chicken, then cook the corn with some butter, garlic, and herbs until it’s golden and smelling delish. Add a little white wine and simmer that all together until the chicken is cooked through.

Finish things off with some cream, some cheese, and fresh basil, and dinner is complete.

You see?

Cozy, summer comfort food!

I really could not love this skillet dinner more. It’s simple, but yet so full of flavors that everyone really enjoys. I love serving this chicken over steamed quinoa for a healthy, protein packed grain, but brown or white rice is equally delicious. Make a side salad or some grilled veggies and you’ll have the perfect simple summer dinner.

SO GOOD. I know I say this every single day, but this recipe really is good. It’s one of those recipes that you’ll crave time and time again. Plus the sauce kind of just melts in your mouth. YUM!

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh chopped thyme, plus more for serving
  • kosher salt and pepper
  • 1/4 cup all-purpose flour
  • 4 slices thick cut bacon, chopped
  • 1 small yellow onion, chopped
  • 2 tablespoons butter
  • 4 ears corn, kernels removed from cob
  • 2 cloves garlic, minced or grated
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
  • 1/2 cup heavy cream, canned full fat coconut milk, or whole milk
  • 1/2 cup grated parmesan or Asiago cheese
  • fresh basil

Instructions

  • 1. Rub the chicken all over with 1 tablespoon olive oil, thyme, and season generously with salt and pepper. Sprinkle the flour evenly over the chicken and toss to coat, adding more flour if needed to cover the chicken.
    2. Heat a large skillet over medium high heat and cook the bacon until crisp. Remove the bacon from the pan and drain onto paper towels.
    3. Add the chicken to the pan and sear on both sides until golden, about 5 minutes per side. Remove the chicken from the pan.
    4. Add the remaining 1 tablespoon olive oil. When the oil shimmers, add the onion and cook until fragrant, about 5 minutes. Add the butter, corn, garlic, and red pepper flakes. Cook another 5 minutes or until the corn is golden.
    5. Reduce the heat to medium low and pour in the wine and 1/2 cup water. Add the chicken back to the skillet and bring to a simmer over medium heat. Simmer the chicken for 10-15 minutes until cooked through. Stir in the heavy cream and parmesan, cook another few minutes until warmed through. Remove from the heat and top with bacon.
    5. Serve the chicken topped with fresh thyme and basil. Enjoy!

This recipe was awesome! I made it for all my roomates for supper and they all raved about it! Thanks for the awesome recipe that I will be adding to my recipe box!

Made this recipe last night for dinner using chicken thighs-it was delicious! We loved it. Loving all your recipes I’ve tried so far! You’ve gotten me excited about cooking different things- thank you! 😊

  3. This recipe is AWESOME!! I wouldn’t change a single thing! Made it for a huge family dinner and it was a hit all around! Definitely will be making this again!

  4. 4 stars
This dish was delicious – I used 2 large ears of corn and it was plenty. Also added sliced mushrooms. It was a bit time consuming with chopping and slicing the kernels off the corn cob but worth it! Don’t skip the wine!

  5. 5 stars
Perfect way to use up some herbs from the garden! So much flavor packed into this dish. Served it with a big salad and it was a hit (even though my corn was very sad to begin with!).

  6. This is absolutely delightful. I added sweet green peas and cherry tomatoes at the end and served over zucchini noodles. One of my new favourite meals. 10/10

  7. First off, I’d like to tell you how much your an inspiration, and how everyday I look through your recipes to find the perfect dinner! I have gifted your cookbooks and made many of your recipes; everything is absolutely to die for! I have made this recipe twice now, I will admit, this is the only recipe that ends up seeming more oily than what it’s supposed to. Regardless, it is still amazing, but any recommendations on how to correct this? I am using chicken thighs, gluten free flower, and start by frying in the bacon grease. I add a touch of oil once everything from the bacon has been used up; is this what could be causing a slight oily outcome?

P.S… I just love you overall and am inspired everyday. I cooked your pesto caprese chicken for friends and family last week. This recipe tonight. And plan on making your spinach artichoke salmon tomorrow! Keep ‘em coming, you are my biggest meal inspiration to date!

    1. Hey Talia,
Thanks for making the recipe, the additional oil and use of chicken thighs are definitely why you are getting so much oil. I would try chicken breasts and skipping the additional oil next time. I hope this helps! xTieghan

    1. Hey Gina,
Sure, that would be great, you may have to increase your cooking time until your chicken reaches an internal temp of 160. Please let me know if you have any other questions! xTieghan

Absolutely delicious. I changed the recipe up a bit because I used what I had on hand. I used red onion instead of yellow, dried Italian seasoning instead of fresh, turkey bacon instead of regular and broth instead of wine. It was a little spicy (not sure if I added too many pepper flakes) but for me, it was perfect that way. I’m not usually one to change up someone’s recipe, but I wasn’t able to go get all ingredients. It still tasted delicious and I will definitely make this again.

A keeper for sure! I made this last night for my husband and I and we both loved it. Every bite said “summer time” to my taste buds, such wonderful flavors and fragrances. And the bacon? It was the real deal sealer! * one note: I made exactly as directed but I did not have any white wine so I substituted chicken broth. So for anyone who does not care for wine or cook with it, give the broth a try.

    1. Hey Judy,

And each time we make it now it the tastes bring us right back to our very special day! Thank you Tieghan for your inspiration and deliciousness!

      1. Can’t wait to make this! Do you cook the corn first? Or add to the recipe uncooked?

(Made the homemade hamburger helper last night….YUMMY!)

        1. Hey Karen,
No need to cook the corn first, it will cook in the dish. I hope this recipe turns out amazing for you, please let me know if you give it a try! xTieghan

This recipe tasted AMAZING, yet it was easy to make. I substituted a few ingredients for what I had on hand; frozen corn instead of fresh, dried basil instead of fresh, and beef broth instead of white wine and was still so tasty. I will definitely be making this frequently in the future!

    1. Hey Erica,
The corn will cook in the sauce. I hope the recipe turns out amazing for you, please let me know if you give it a try! xTieghan

I’ve made this recipe four or five times this summer already, it’s one of my absolute favorites!! I never add the basil or red pepper (allergies) and it’s still so tasty. Perfect comfort food.

    1. Hey Chloe,
Happy Wednesday! Thanks a bunch for making this recipe, I am so glad to hear it was a winner:) xTieghan

  15. Quick question for you…would you add a side dish to this recipe and if so, what would you suggest? I generally serve your recipes like this in a big pasta bowl.

    1. Hey Krista,
I would just serve this with a side of crust bread, maybe even a salad! I hope you love the dish, please let me know if you give it a try! xTieghan

  16. This has become a weekly favorite- we eat original recipe as well as taking it off before adding cream and making a salad with it. SO GOOD!!!

Wow! This is becoming one of my favorite websites for recipes. This dish had so much depth of flavor – sweetness of corn, savory, delicious!!! This is definitely a keeper & a go-to recipe for corn. I love it that your recipes tend to have a pinch of red pepper to add a little bit of a kick, as well.

    1. Hey Sharon,

Made this for dinner tonight and after following the recipe exactly, I felt like it just missed the mark. All the ingredients felt dull and nothing stood out. The bacon on top was probably the best part because it just had flavor. Also surprising that after cooking everything in a lot of bacon grease, that bacon flavor wasn’t really there. It was creamy (if not a little too soupy) but not very flavorful. It was very easy to make, which is a plus! Overall, wouldn’t make again.

This is the first recipe that I have tried from this website and let me tell you, it was DELICIOUS! My 7 year old and my picky teenager loved it. I can’t wait to try more of your recipe!

  29. Hell Tieghan,

I own two of your cookbooks, but must be over looking this recipe. Is it in one of them, or is it newer? If it is a newer recipe, will you be coming out with a third book soon? Thanks!

    -Kay

    1. Hey Kay,
All of the recipes in the cookbooks are exclusive to the books, so anything you see online is only available on the blog:) xTieghan

    1. Hey there,
Sure, prosciutto would also work nicely. I hope you love this recipe, please let me know if you give it a try! xTieghan

  30. Really delish but took way longer than 10 min to make. It took 10 min just to cook the bacon! Will make again for sure but now I know how to time it. We ended up eating very late!

    1. Hey Missy,
So sorry, I am not sure what you mean? This recipe will definitely take longer than 10 minutes to make, the prep time is 10 minutes, the cook time is 30 minutes, so it should take you at least 40 minutes to make. Please let me know how I can help! xTieghan

The whole family enjoyed it (ages 4-40)! The cheesey, bacony, corny, chickeny goodness made for a delightful dinner. We made with a side of roasted zucchini spears to add some more green 🙂

    1. Hey Brian,
Happy Friday!! I am thrilled that this recipe was enjoyed, thanks so much for making it!! xTieghan

  32. I’ve made it twice! I love it. Second time I made with turkey bacon instead of pork bacon, and still turned out great. If anyone is concerned this recipe might be too rich for you I do recommend the turkey bacon.

The recipe was too rich and heavy. The chicken didn’t stay crisp when cooking it in the wine unless you have an extremely large pan. It was okay, I wouldn’t make it again though

This. Was. Amazing. I made this for family without trying it first and was nervous.
We used coconut milk bc of my brother’s dairy allergy and I would absolutely choose to use it again instead of cream. Gave it a level of depth that was great. I also used lemon thyme instead of thyme and I think that with the coconut was perfection. Thank you!

    1. Hey Becky,
Happy Sunday! I am thrilled that this recipe was enjoyed, thanks a lot for giving it a try! xTieghan

This was delicious! I had to make do with rose wine since it was already open and used coconut creamer instead of real cream. It reminded me of fall in a way! Delicious and not heavy at all. I will definitely make again. Thankfully I have leftovers since I made A LOT!

I have made quite a few of HBH recipes and Tieghan’s creativity never disappoints. But this recipe is NEXT LEVEL GOOD. I think its my new favorite. I made it last night and the flavor combination is out of this world. I used half the amount of onion and added a little more asiago/parmesan cheese (who can resist more cheese?). Other than that, I followed the exact recipe and added some fresh bread for dipping that yummy sauce. Loved it! Thanks for another fantastic recipe! 🙂

    1. Hey Lexi,

Wow, this meal was FANTASTIC. I say that about all HBH recipes, but dang. I could have licked my plate after it was all gone. My husband and I polished off everything for dinner tonight despite it being 4 servings. 😂 I was so excited for this meal and it did NOT disappoint. So perfect for summer! Thanks Tieghan for another great recipe!

Made this last night, and it tasted like all things summer! A great meal for inviting guests over- I served with sautéed green beans on the side, and it was a great pairing. For me personally, it seemed very white-wine forward, so if you don’t love the taste of white wine in cooking, maybe cut back on the wine and opt for chicken broth instead – or a mix a little of both.

    1. Hey Anna,

This was so yummy and the perfect dinner for summer hosting! I blistered cherry tomatoes in the oven on the side (we have some picky eaters in our house) and added them at the end and it was SO GOOD with this dish!

Sorry I do not offer the nutritional info, just an estimated calorie count. I hope you love the dish, please let me know if you give it a try! xTieghan

  47. How do you get that really good sear on your chicken? I use almost exclusively cast iron when I cook. But every time it seems when I cook chicken, I get a lot of liquid in the skillet and the chicken just “cooks.” I don’t get that beautiful sear? I’ve tried olive oil, butter.. no matter what I do, it doesn’t look like your pretty pictures.

    1. Hey Jen,
It’s really important that you not overcrowd your pan, this will prevent you from getting a good sear. I hope you this helps for next time, please let me know if you have any other questions! xTieghan

  48. WOW! This was so amazing. I was on a time crunch and cheated… made this super quick used a herbed rotisserie chicken from whole foods, turkey bacon, good quality frozen corn, and half & half. Otherwise, kept it the same with onion, garlic, white wine and parm. My kids are picky and they gave it an 8/10 (where skittles are a 10/10). SUCCESS! This will be a go-to for us.

    1. Hey Christina,
Awesome! So so glad to hear that this recipe was enjoyed, thanks for making it! xxTieghan

Holy. Mother. Of. Shit. This was absolutely delicious! We increased the bacon (because, duh, bacon) and used coconut milk instead of cream. My. God. I think corn on the cob is a weird and gross food. …But cut it OFF the cob and toss it with some bacon and fresh thyme and cheese? Now you’re talking. Another winner, Tieghan! Thank you so much!

LOL Awesome! So so glad to hear that this recipe was enjoyed, thanks for making it! xxTieghan

Made two changes to the recipe: less red pepper and chicken broth instead of wine. I have two very picky kids. With those small changes, they loved this recipe! It was wonderful. Can’t wait to cook it for us two with wine!!

I thought this would be another fantastic HBH meal. I way underestimated this recipe. I’ve made tons of HBH recipes and out of all of them, this one may be my favorite. Holy Cow.

    1. Hey Missy,
Thanks so much for giving this recipe a try, I am so glad it was enjoyed. Have the best week:) xTieghan

This is a must cook for sure! I made this for my husband and myself and we could not get enough! He was practically licking his plate haha! This will definitely be on regular rotation throughout summer and OH sweet corn season. Thank you Tieghan for another mouth watering meal!

    1. Hey Megan,
Happy Sunday!! I am thrilled this recipe was enjoyed. Thanks so much for giving it a go! xxTieghan

Oh my heavens!!! We’ve tried many of your recipes, all amazing, but this one is out of this world!!! It’s now a regular diner for us all the way over in Australia 🙂

      1. Hey Georgi,
Happy Sunday! Thanks a lot for giving this recipe a go, I am so excited that it was enjoyed! xxTieghan

  54. 5 stars
Oh my gosh! This was amazing. A bit too spicy though, so next time I’d only add a pinch of chili flakes. I used thin cut chicken breasts and used coconut cream instead of heavy cream. I also used dry thyme and added a bunch of fresh basil at the end. I would recommend this to everyone! YUM!

    1. Hey Marina,
Happy Weekend! I am thrilled that this recipe was enjoyed, thanks so much for making it! xTieghan

  55. 5 stars
Another great recipe. I made this tonight and followed the directions exactly and it came out perfect. Thank you!!

YES, you just make this recipe! Summer is around the corner, fresh corn is already abundant in our stores and you owe it to yourself to make this easy, delicious recipe. Everything about this recipe is so so good! Thank you again Tieghan!

Ohhh myyy god. My boyfriend and I just devoured the entire pan. As we sat there in our happy food coma, I had to immediately share the recipe with every food lover in my phone book. I made it exact to the recipe with coconut milk instead of cream. Do yourself a favor and have this for dinner. Deeeelish.

    1. Hey Jen,
Happy Thursday! Thanks so much for making this recipe, I am delighted that it was enjoyed! xTieghan

  58. 5 stars
This recipe was delicious!! We used frozen corn in place of the corn on the cob because it’s not quite in season yet. I could have just eaten the corn and sauce!! We paired it with mashed potatoes and when it mixed in with the corn it was amazing. We will definitely make this again!!

    1. Hey Carly,
Happy Thursday! Thanks so much for making this recipe, I am delighted that it was enjoyed! xTieghan

  59. Can I use bone-in/skin-on thighs? Not sure if you can sear chicken like that, but it’s what I have on hand.

    1. Hey Jessica,
Sure, that’s totally fine to use! Your chicken may take a little longer to cook, just be sure it reaches an internal temp of 160F. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  60. Would love to try but I am pregnant. Is the wine a must? Or can that be omitted and still taste somewhat the same?

    1. Hey Kristina,
You can use chicken broth in place of the wine. I hope you love the recipe, please let me know if you give it a try! xTieghan

  61. I’m thinking of making this for a family member who has cut gluten from their diet. Do you think almond flour would work to coat the chicken?

    1. Hey Suzanne,
I would try using Cup4cup GF flour. I hope you love the recipe, please let me know if you give it a try! xTieghan

        1. Hey Hannah,
You can actually manually adjust the serving size located above the ingredient list and the ingredients will automatically change for you. I hope you love the recipe, please let me know if you have any other questions! xTieghan

          1. My mind is blown by this information! Thank you so much! What a functioning tool!!!! I’ve been manually doing the math or just cooking leftovers.

          2. Hey Sally,
Sure, that would work just fine! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  62. I have made this recipe so many times now! It’s a family favorite! I’ve used straight from the garden corn, as well as frozen corn in a pinch. Both are amazing! Coupled with a yummy spinach salad and some warm, crusty bread…this is the perfect spring/summer supper!

    1. Hey Cali,
Thanks so much for giving this recipe a try, I am so glad that it was enjoyed! Have a great week:) xTieghan

    2. I made this recipe and my husband absolutely loved it! Can I ask what is the purpose of the flour on the chicken? Other than that, thank you for sharing your recipes!! 🙂

      1. Hey Amaya,
Thanks so much for giving the recipe a try, the flour helps to ensure a crispiness for the chicken. Please let me know if you have any other questions! xTieghan

      2. 5 stars
This recipe is a GAME CHANGER!!! Made this for an in home date night and wowza, this dish is going to become a staple for us. Thank you so much!

        1. Hey Kayla,
Fantastic! I am thrilled that this recipe was enjoyed, thanks a bunch for giving it a try! xxTieghan

  63. I made this today and made a mistake I think. I think I used too much flour to coat the chicken and then the flour burned in the skillet. subsequently , the onions looked burned too so I just threw the pan out and started over in the middle of the recipe. can using too much flour be a problem ?

    1. Hey Taylor,
So sorry to hear this, yes you just want the chicken to be lightly coated in flour and allow any excess flour to fall from the chicken before adding to the skillet. I hope this helps for next time! xTieghan

  64. Made this tonight. So good. Definitely a new favorite. Made it per recipe except the pan was pretty dark after bacon and chicken. Cleaned it out before starting onions and started with fresh oil. Thanks.

    1. Hey Kris,
I am delighted that this recipe was enjoyed, thanks a bunch for making it. Happy Sunday! ☀️Tieghan

Our favorite HBH meal! The flavors are UNREAL DELICIOUS! The bacon mixed with the corn might be the best part.

  66. 5 stars
Made this for dinner and it got rave reviews all around. So delicious. Just the right amount of spice….and just a little unexpected. Yum. Going to add this into rotation. Made it with corn I froze this summer. Looking forward to trying with fresh too.

  67. Hi, what is the serving size? I see a serving is defined in calories but I can’t find serving size. Meal is great by the way!

    1. Hey Natalie,
A serving size is a piece of chicken plus the corn:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

  68. 5 stars
Absolutely DELICIOUS! I’ve made this twice now, and my husband adores it. This will be our Christmas dinner this year!

One question – last time, the flour burned a bit on the bottom of the pan when I cooked the chicken. Is including the flour totally necessary or could I skip that part and just sear the chicken with the seasoning/olive oil? Would I just need to throw in a bit of flour to thicken the corn? Thank you!!

    1. Hey Sallie,
Thanks so much for giving the recipe a try, I am so glad you enjoyed! You can definitely skip the flour next time if you had issues with it. Happy Holidays! xTieghan

  69. 5 stars
My husband and I made this a few weeks ago and we needed to make it again! Very good and great flavor! We loved the freshness of the thyme on an otherwise heavier cream sauce.

  70. 5 stars
I love this recipe! Making for a group of friends this weekend and wondering if I could make it ahead up until then simmer and then instead of let simmer for 15 min on the stove, throw it in the oven to reheat? Thoughts? What oven temp would you recommend?

    1. Hey Paige,
I would make it up until the simmer and then continue simmering when you are ready to serve. I hope you love the recipe. Please let me know if you have any other questions and Happy Holidays! xTieghan

  71. 5 stars
This was absolutely delicious! Because it’s November, I used canned corn, and then added some steamed asparagus. My family devoured it!

  72. Looks delicious! Going to try this tonight. I don’t have ears of corn… Would canned or frozen work? How much? Thanks!

    1. Hey Sarah,
Sure, I would use 1-2 cups of corn. I hope you love the recipe, please let me know if you have any other questions! xTieghan

We eat HBH like at least 3 times a week. This is one of our all time favorite recipes!!! hearty, delicious, and prefect with a green salad.

    HIGHLY recommend

  74. 5 stars
I have made this three times since spring and am doing it again tonite. Perfect for summer outdoor cooking. We use a Gas One 200,000 btu propane burner which is very sturdy and perfect for our 16” cast iron skillet. I’d does get heavy! We went with bacon, of course and served over brown rice. Thank you for this easy and yummy meal.

  75. 5 stars
Made it and loved it! Wow! Great flavour with simple ingredients. I used chicken broth in place if the water and wine and gluten free flour. Unbelievably good! They whole family loved it!

  76. Thanks for sharing this recipe. I’m going to try it tomorrow. However, I’m not going to use white wine hehe. 😅 I’m from the Philippines by the way. 🙂 Had fun reading this food blog. 💓

  77. 5 stars
Made this for dinner tonight and it was incredible! I increased the amount of onion slightly and subbed pancetta for the bacon – can’t recommend this more for a flavourful and cozy dinner!

  78. 5 stars
This is amazing! I wanted to share what I did with the leftovers. I had some homemade tomatillo sauce so I added it, some cooked rice and chicken broth and made soup! I topped it with diced avocado and some torn arugula and it was so wonderful. So two dishes for one! Thanks so much for this fantastic recipe!

  79. 5 stars
Delicious!!! Turned out perfectly! First time my daughter has ever eaten chicken without ranch and she’s almost 6! Must have just been that good!

  80. I can’t cook to save my life and this was absolutely delicious. I had to use whole milk and chicken broth instead of wine, but OMG. So good and so easy.

  81. 3 stars
Tried this last night…the flavours are great – I used coconut milk and chicken thighs. I would however skip costing the chicken In flour next time. Since the chicken is in a sauce it doesn’t maintain any crispness (at least mine didn’t) and it just made it a bit soggy,

  82. 5 stars
Tieghan, this recipe is….DELICIOUS! I have made it several times and it never disappoints. It’s not too pretty to photograph but it is OH SO GOOD. I made it tonight with your crispy smashed potatoes. Oh, and we had the herby tomato soup to start. Those crostini….🤤 The whole meal was melt in your mouth yummy!

  83. 5 stars
Loved this recipe! I never knew that you could get a crispy chicken from just rubbing on a little oil and flour! Will be my go to method for “fried chicken” from now on. The creamed corn was delicious. We’ll probably skip the bacon next time as it had plenty of flavor already!

      1. I am making this recipe this evening, and really looking forward to it! Do I need to cook the corn prior to cutting it off the cob and adding it to the skillet? Or I can put the raw corn in the skillet and it cook that way? Thank you so much for all of your incredible recipes. They are always my go-to when trying something new!

        1. Hey Tiffany,
No need to cook the corn first, you will follow the recipe as is. I hope you love the dish, please let me know if you give it a try! xTieghan

  84. I made this last night and it was perfection! I’m in Denver, and believe it or not, it snowed here yesterday/today. I loved being able to use fresh basil and thyme from my garden in this recipe, before everything froze over. Not to mention, this was the perfect “Summer” dish on a cold “winter’s” night. Such a cozy meal! My chicken breasts took forever to cook, so I ended up pulling them out of the dish and cutting them in bite sized pieces to speed up the cooking time. Next time, I’d probably butterfly them. Thanks for the amazing recipe – can’t wait to reheat the leftovers for lunch today.

  85. 5 stars
We had this for supper tonight and thoroughly enjoyed it! It was simple to make and full of flavor. I did cut back on the red pepper flakes since we aren’t fans of much spice. We served it over spaghetti, and loved it. Thank you!

  86. 5 stars
Your recipes always turn out! Despite the ingredients, this did not taste overly rich, but oh so delicious. This is the perfect recipe to use up that end of the season corn!

  87. 5 stars
This is lick the plate clean good. Thank you for the recipe.
Only thing I did different is I milked the corn cobs to get even more corn flavor into the dish.

  88. 5 stars
I just made this for my family and they absolutely loved it! Needless to say, this is on the fast track to becoming a family favorite. Thanks for creating such delicious, uncomplicated dishes that inspire me to want to cook (not always my favorite thing to do 🙂 ).

  89. I made this tonight and it was delicious! My son, for whom nothing is spicy enough, agreed this had great flavor!

    1. Hey Daisy,
I like to drain all but 1 tablespoon of the bacon grease and cook the chicken in that. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  90. 5 stars
I made this last night for dinner and it was fantastic! I happened to have all of the ingredients at home already, definitely appreciated the simplicity. I needed to add a bit of flour at the end to thicken it up, since I used whole milk instead of heavy cream.

  91. 5 stars
Thank you so much for sharing this recipe! I came across you via Instagram and this just looked too delicious not to try.
I have my dad staying with me this week who is a well seasoned events chef trained by the Roux brothers and he loved it, as did my whole family, including a fussy 2 year old and a weaning 7 month old (left out the wine and chilli for them of course!)
So easy to follow the recipe steps with the hand video also.
Will definitely be trying more of your recipes, lots of love and gratitude from the UK x

    1. I am so glad this turned out so well for you all, Lea! Thank you so much! I hope you have an amazing weekend with your dad! xTieghan

    1. Hey Joseph,
Yes chicken broth is great to use in place of wine. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  92. Ahhh…hate to ruin it but if I DIDNT have fresh corn about how many (dare I say) cans of corn would you use! Eekkk! Sorry but I’m craving this and don’t have fresh!

    1. Hey Veronica,
Lol I would say 2 cans of corn. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Jenn,
Yes gluten free flour will work. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This was my 1st time trying one of your recipes and I LOVED, LOVED, LOVED this!! The taste was even better than the way it looked (which was JUST as your picture and that RARELY happens for me when I try to follow a recipe!) 😂 My daughter said it was a TAD too spicy for her, but she IS only 3! I paired it with a white jasmine rice, it evened out the spice perfectly for her to mix the corn with, and she gobbled it all up! We all did! Thank you and I can’t wait to try more recipes!

  94. I finally got around to making this. I used chicken tenders because it’s what I had. My husband, who will only eat corn directly off the cob, already asked when we can have it again.

  95. 3 stars
Hi there! My sister and brother-in-law raved about this recipe so I decided to try it. I found the sauce did not get thick at all at the end, so it was rather soupy/runny. I did use whole milk as a substitute to cream, but added the parmesan also and was surprised it didn’t thicken up after simmering for a good 10-12 minutes at the end. Any suggestions?

    1. Hey Lauren,
So sorry you had issues with the recipe. Next time I would recommend adding a touch of flour or cornstarch to help thicken the sauce, but please note it is not meant to be SUPER thick. Please let me know if you have any other questions! xTieghan

  96. 5 stars
Absolutely love this recipe. Instructions are super simple and easy to follow. Sauce was DELICIOUS! I can’t wait to make it again

  97. 4 stars
This was good but took significantly longer than anticipated from start to finish…and when all was said and done found the richness didn’t equal the wow factor I was hoping for. Served with grits which was a good base for the creamy sauce and made it feel a bit more Southern. Also, had lima beans on the side. Used fresh corn but could absolutely use frozen corn. Did like the little kick of crushed red pepper that came through at the end of tasting note, not spicy but a nice flavor. Probably won’t make again just due to the richness but was enjoyed enough for one time by the family. Thanks.

  98. I made this tonight after pinning it weeks ago, it was absolutely fantastic!!! August in Minnesota is all about corn and it was perfect in this dish. Both my girls 9 and 3 could have eaten the whole skillet.

  99. 5 stars
So yummy! I’m thinking about substituting other proteins (shrimp or salmon) now that I’ve made the chicken version.

  100. Not quite finished making this yet (smells delicious, cannot wait)–it made WAY more than we need as a household of two. Any idea how well this freezes with coconut milk? (Searched the comments, couldn’t find an answer) TY!

    1. Hey Jodi,
Thanks so much for giving the recipe a try. I have not tried to freeze this dish, but I would say it is okay to eat for up to 4 days. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  101. I love, love, love your recipes and have used quite a few of them recently. They are quick & simple and beyond tasty.

A recipe that begins with bacon is a recipe for me! 🙌🏻😍 this was delicious! Love the fresh thyme – served with green beans but might do a salad too next time! Thanks for the delicious recipe and including a video!!! Will make again… YUM!

  103. Disclaimer: I accidentally over-salted this dish because I taste-adjusted it *before* adding the parmesan and bacon, so that undoubtedly affected the overall result.

This dish has A LOT of flavors going on. It had a French vibe due to the butter, white wine and thyme, which wasn’t what I was expecting, although I typically love that flavor combo. My main critique of the dish was that you really couldn’t taste the corn over the bacon, butter, garlic, wine, thyme, basil, parmesan and onions. I liked the chicken and the sauce but it would have been just as good served with rice/potatoes/noodles, without wasting fresh-off-the-cob corn. It wasn’t bad, it just missed the mark for me.

    1. Hi Amy! Is there anything I can help you out with? I would love to! Otherwise, I hope you love some other recipes of mine! xTieghan

  104. I am going to try making this again when I have white wine on hand. I was drooling over the photo, but had to substitute the white wine for apple cider vinegar (recommended by a different blog, equal parts) BIG MISTAKE. My husband likes it but I can’t even stand the smell of the dish with the vinegar in it. Side note, I am pregnant so this could be affecting my taste preferences, but I would always recommend trying to have all the ingredients.

Excited to try again. Just wanted to let everyone know, substituting is dangerous! lol

  105. 5 stars
So good!! Perfect summer dish. The flavors were amazing! My husbands comment, “This is a keeper!” Thank you, Tieghan!

  106. 5 stars
I just found this delicious sounding recipe because I was googling chicken thighs and corn – I can’t wait to make it tonight. I’m going to be using bone-in thighs because that’s what I bought yesterday. I’m glad to see someone already asked about added cooking time. Is it too early to start cooking supper now at 1 PM? (LOL) Thank you so much!

  107. 5 stars
This recipe was amazing!! But as a warning for anyone with an electric stove the chicken wasn’t even close to done. I ended up having to pop the whole pan in the oven for another 10 minutes to cook the chicken. (I also added more water because of this for the corn). So heat up the oven just in case!!

  108. This was so delicious! The creamy corn and chicken go perfectly together and so easy to make! New summer staple for me!

  109. 5 stars
This recipe is a new summer favorite in my house. We really can’t get enough!! It is a little spicy so I would recommend doing about 1/4 teaspoon of red pepper flakes instead of 1 teaspoon. Super good, amazing flavor, and will be making again soon for sure. All of your recipes are so inspiring and so much fun!! Thanks for doing what you do!!

  110. Thanks for sharing this recipe which is easy and simple to have a try at home.I have been learning different time saving recipes since last couple of months during this pandemic situation.

    Hey there!

I made this recipe last night for my boyfriend and I and it was a hit! I’m young and new to cooking and half baked harvest has been such a joy. I killed it last night with this one—thank you for making such yummy recipes that are not only easy to follow and well put but also involve ingredients that I’m happy to have leftovers of. I’ll certainly find something to do with all of this bacon! I asked my boyfriend if I made this again in like a month if he’d be excited, and he said “I’d be excited if you made it again next week!” The chicken was fabulous but the creamed corn stole the show.

    1. Hi Beth! I am really glad you have been enjoying my blog and recipes! I hope you continue to! Good luck with all of your cooking endeavors! It is so fun! xTieghan

  112. 5 stars
this dish may be my most favorite thing i’ve ever made. the balance of flavors is just perfect. i cannot tell you how much i love it. i use turkey bacon because i don’t eat pork and i’m too messy to cut kernels off of cobs and it is still delicious–so i can’t even imagine how amazing it is with fresh corn and pork bacon. (also, wanted to let you know that the chicken and sage dumplings were superb and my family went bonkers for the hawaiian chicken tacos) anyhoo, thanks for the amazing recipes!

    1. Aw wow that is so amazing to hear! I am really glad you have been loving this and I hope you continue to! Thank you JJ! xTieghan

    1. Hi Shannon,
Yes you could do that! I would make ahead and then pop in the oven at 350 for 15-20 minutes to reheat. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This recipe was so good. I made it this evening. It was so easy to make. I do have one question lipthough how would I make this in an instapot.

    1. Hey Kimberly,
I haven’t tested this in the instant pot but I would do 8 minutes on high pressure. So glad you enjoyed this recipe! xTieghan

  114. 5 stars
Just made this – so good! The husband loved it too. I burnt the bacon grease when I seared the chicken – whoops. So I dumped it but the corn still turned out great. Definitely will make again. Can’t wait to get the Half Baked Harvest Cookbook!

  115. I just made this for dinner tonight and I can’t even put into words how delicious it was! Thank you for this incredibly simple, rustic, and beautiful recipe!

A permanent in our weekly rotation! So delicious!! Second timing making it tonight! Perfect for summer! Somehow light AND cozy at the same time 😊

  117. Hey!
If I wanted to make this recipe ahead of time for a dinner party, what would you recommend? Complete it and keep in oven on very low or get to final steps and then complete?

    Thank you!

    1. Hi Liz,
I would complete up until the oven and then finish it off when you are ready to enjoy. I hope you love the recipe, please let me know if you have any other questions! xTieghan

I’m never not tossing noodles through garlic butter again! That garlicky buttery goodness made this dish really decadent, and almost like a hybrid between a creamy pasta and a crisp stirfry. Just so good!

  119. 5 stars
I absolutely love this recipe!! Everyone I have made it for loves it as well. My husband doesn’t like to try new things so he was prepared to hate it. Once he tried it, he asked for seconds.

I enjoy trying new recipes every week, some good, some great, some meh. I have never been inclined to write a review. Until now. WOW! My entire family went absolutely nuts over this! The combination of the Pinot Grigio with thyme and heavy cream is absolutely heavenly. I seriously would give this 10/5 stars!!

    1. I am so happy you did write one! Thank you for trying this one, Lindsay! I hope you love all of my other recipes even more haha! xTieghan

Amazing!! The chicken was so moist!! I didn’t have cream so I just warmed up some 2% milk and used it in place – still delicious 🙂 thank you for this recipe – my husband asked that we add it to the rotation! And my toddler was shovelling it into her mouth with her hands so I would say 5 stars from her too! 😉

  122. This recipe is amazing! A new favorite in our house! The perfect definition of comfort food! I served it over White Vermont Cheddar Mashed Potatoes and all I can say is WOW! There was none left and we are only a family of 4! Highly recommend!!

Made this last night… delicious! Surprised at how light it was, considering the cream and cheese, but it felt just right on a hot summer evening.

  125. 5 stars
I love your blog…always inspiring! I made this garlic-corn-chicken yummyness for dinner tonight and loved it!! I didn’t have fresh corn so used 2 cups of frozen and it was great. Had to sub cream fraiche for heavy cream and that worked well. Will definitely make this recipe again, thank you!

  126. 5 stars
The first of what will be many Half Baked Harvest meals in our home tonight! I subbed sour cream for heavy cream and it worked beautifully. Served with (carb-loving) spiral pasta for husband and a simple wedge salad for me. Delicious, and already anticipate that it will be even better as leftovers tomorrow!

  127. 5 stars
Made this tonight, so yummy! I adjusted the recipe for just two people and used a can of corn since I didn’t have fresh. I also used chicken broth since I prefer to drink my wine 🙂 Will definitely be making this again, my husband loved it. Served with homemade sourdough to soak up the creamy corn. I’d love to see more recipes like this one with few, simple ingredients. Thank you, Teighan!

This dish is amazing! I made it this week and it was a huge hit. I only had two ears of corn so I made up the difference with frozen corn and it worked out perfectly. It was just as tasty reheated they next day. Definitely adding this recipe to the rotation!m and can’t wait to make it again! Thank you!!

  130. This was to die for! I sent this recipe to so many friends! I added a ton of fresh basil on top, so good! I had to substitute wine for chicken broth but look forward to trying it with wine- I feel like it will elevate the dish and it is already so good!

Delicious! Crowd pleaser. I made this tonight with pan crisped gnocchi and a tomato basil salad for sides. Completely perfect!! LOVE ❤️ Thank you 😊

  134. Hi! Is it possible to substitute shrimp or something pescatarian for the chicken in this recipe? My boyfriend doesn’t like chicken but loves seafood! P

    1. Hi Aditi,
Yes shrimp or a mild white fish would be great! I hope you love the recipe, please let me know if you have any other questions! xTieghan

I JUST discovered you and am in LOVE with your food!!! Made this garlic butter creamed corn chicken tonight and it is TO DIE FOR! My husband is not a huge chicken fan but he loved it too! The flavors were so intense and yet subtle. Loved the red pepper flakes that woke it up! Thank you!

    1. Aw you are too sweet! I am so glad this recipe turned out so well for you, Barb! Thank you! xTieghan

I made this last night, but added a jalapeño just to add a little more spicy flavor and it was delicious! This will definitely be added to my recipe rotation!

I made this for dinner last night, perfect for the in between spring/summer night. Also made the beer bread which was super easy and delicious although I might try adding some fresh herbs to it next time. Ate them both too fast to remember to take pictures!

  138. 5 stars
Love this one pot dish! Super easy and fun to make. I should have cooked corn a tad bit longer but still really good! Love that I have most of these ingredients on hand. Will do this again!!

  139. 5 stars
Absolutely amazing!! Best recipe I’ve ever made. Paired with the Beer Bread as recommended. Go make this NOW!!

  140. Loved this! I added bell peppers and spinach for some extra veggies and extra red pepper flakes. Very tasty!

  141. I want to make this tonight to use up a ton of fresh grilled corn that I have. Are there any adjustments to the ingredients or amount of wed ingredients I should make to accommodate the fact that the corn is cooked?

    1. Hi Lisa,
Nope, I would keep everything the same! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  142. Hi!! Would love to make this. But I don’t have fresh corn yet. Would it work with frozen corn?

    Thanks so much

    1. Hi Liz,
Yes frozen corn will work! I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hi Debbie,
Yes that is fine to use, I would say about 3 cups. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  143. This recipe looks wonderful, and RIGHT up my alley of favorite flavors! I can’t use dairy such a heavy cream, unfortunately, and don’t have coconut milk on hand – do you think either soy milk or plain soy yogurt would work in place?
    Thanks so much!

    1. Hi Sammy,
I think soy milk would work well! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  144. 5 stars
Delicious! I skipped the bacon, used coconut milk, GF flour and three cheese blend which I had in the fridge. With bacon it would have been extra delicious! I just didn’t have any in the house. Nailed it with Summer, “comfort food!”

  145. 5 stars
10/10 delicious. I love a hearty, simple, one skillet dish and this one hits all the marks. Rich but not too rich, and not super carby where you feel “blah” afterwards. We did cut the red pepper flakes in half but that’s only bc I’m a wimp when it comes to spice. Will definitely make this again!

  146. Made this for dinner and it was incredible! Huge hit with the family and will definitely be making this on a regular basis now. Thanks so much for the recipe!

  147. 3 stars
This was alright but nothing to write home about. A few notes I’d give for anyone else making this. I think fresh or frozen corn only, I don’t think canned would go well here. Also I’d advise heating the cream in a different pot and incorporating the cheese completely in with it before adding in with the corn and all. I removed the chicken and simmered while whisking for 5+ minutes and there were still chunks of cheese in there- too many veggies to get it nice and smooth. Also the fresh basil really is needed here, to give a light fresh flavor to the otherwise heavy dish. I wouldn’t advise skipping it. I mean it’s hard to dislike anything with cream, cheese, and bacon in it 😛 But I honestly don’t think I’d make this again.
Also if you can’t find skinless boneless chicken thighs, just use skin on bone in, remove the skin, and pop the (oven safe) skillet in the oven for 10-15 minutes on 425º instead of simmering on the stove top to finish cooking through. Otherwise bone-in takes too long to finish on the stove and can make it rubbery- speaking from experience, glad I had the foresight this time!

    1. Hi Kate! Thank you for leaving this comment for others if they have the same troubles! So glad this turned out well for you! xTieghan

Family loved this recipe! The only thing I changed is I added fresh broccoli at the end and cooked until tender crisp. Thank you! ?

Hello from Amsterdam. I made this last night and it was soooooo good. I scraped every last bit of sauce from the pan at the end. This is my new dinner for when friends come over. Thank you x

  150. 5 stars
Made this tonight with the last sweet corn of the season. OMG was this delicious! I added half a box of mushrooms that were on their way out but otherwise made as directed. Too bad I have to wait until next year before I can make it again. This recipe is definitely a keeper

  151. 5 stars
I’m absolutely obsessed with this recipe. I knew from the second I saw it I needed to fix it – the corn is just now getting good enough to try out. I used Pinot and Asiago and it was absolutely delicious. Thank you SO much for sharing!!! <3

    1. Hi Toni, this is the 12-inch skillet in these photos, BUT for everyday use I use the 10-inch. Either size is truly great. Please let me know if you have any other questions. I hope you love this recipe! Thank you! xTieghan

  152. 5 stars
Made this recipe on a whim tonight and it far surpassed my expectations. Incredibly easy and flavorful!

  153. 5 stars
Just made this. Added some extra red pepper flakes and used asiago instead of parmesan. Came out so good! Another Haflbaked Harvest recipe I can’t wait to make again. The sauce with corn was so good. We ate ours with some turmeric roasted red potatoes.

  154. 5 stars
This was delicious! I spilled my bottle of red pepper flakes in the pan so it ended up a bit spicy, but it was SO good! And the bacon really does add to it, so that was a great call. The chicken breast was nice and juicy, and great mopping up that creamy sauce. Even my husband, who used to be anti-corn, ate every single kernel and loved it. And as much as I hate shucking corn, this is well worth it – I’ll be making this again! Thank you 🙂

    1. Thank you so much Vesta! I am really happy to hear that this turned out so amazing for you, especially with the extra spice!! xTieghan

  155. 5 stars
Mmm! Love the smell of the sauce. I used chicken breasts and was happy that they turned out juicy and tender, not dry at all!

  156. 5 stars
I made this recipe tonight and it was absolutely delicious! My entire family gobbled it up. It was super easy to put together and a nice change from grilled protein and salad. Thanks so much Teighan! I will definitely be making this again.

  157. 5 stars
Had this last night as I saw it in your ’25 summer favorites’ post, and it was amazing! The extra crunch from the bacon is absolutely divine, those were my favorite bites! 🙂 The addition of wine to the sauce was super nice as well, plus it’s fun to cook with wine cuz you always get to enjoy a glass or 2 with the meal of course! My husband said he would ‘definitely enjoy eating it again!’ so it was added to my stash of recipes. Thanks for the recipe.

Hi Tieghan! My 9-year-old son pulled your cookbook from our public library shelf to choose recipes for us to make together. He practically went through an entire pack of post-it flags selecting the ones he wanted to try so I ended up buying our own copy (and one for my best friends who shares my love for cooking). Tonight was the first night that we had a chance to try a recipe and this chicken was hit with the whole family – especially with my 3-year-old. He even asked to pack the leftovers in his lunchbox which, sadly, means that we had to actually leave some leftovers to pack. We will definitely be making this again and look forward to trying more recipes!

    1. Wow that is such a sweet story and I am so glad you got the book! I hope you love every recipe you try, Carla! xTieghan

Hi Tieghan, I made this tonight and my husband raved about it and my toddler kept remarking “yummm” as he shovelled it into his mouth with his hands. Thank you for this 5-star winner! I wouldn’t change a thing and can’t wait to make it again. It’s crispy, fresh, and flavourful!

  160. 4 stars
Made this tonight & it was quite good. Would give a 4.5 rating & will definately make again. Would have liked the sauce to be a little thicker. Taste was great! Made it with mash potatoes & homemade artisan bread, which was great for sopping!

  161. 5 stars
I just made this for dinner and it’s absolutely incredible! I used 1 1/4 cup chicken broth + a splash of white wine vinegar instead of the wine, dried thyme instead of fresh, boneless skinless chicken thighs, and skipped the parmesan cheese. I ended up with a deeply flavorful, creamy dish that I will make again and again.

  162. Everything you make looks amazing!! I’ve tried several recipes now and Every. Single. One. has been a new favorite. SO excited to try this dish too!!

  163. This is my first of your recipes I’ve made and it was so good!! I used Greek yogurt instead of the heavy cream, and it seemed to work just as well. My husband loved it so we will be making again! Thank you, can’t wait to try some of your other stuff!

  164. 5 stars
Hi Tieghan, I have now made this several times. Because I am vegetarian, I substitute the chicken with Quorn chicken pieces. It is really lovely. If I have a few people for dinner it is really nice to make this, plus a tomato based dish, plus some new potatoes and something green (I like to have all colours covered on the table!) and then people can help themselves. This dish is very popular with the cream lovers!!

  165. 5 stars
Can’t get enough! I love the taste, it’s the perfect amount of creamy and savory. Best part – not a lot of prep or dishes used! I used applewood smoked bacon and a mirin / apple cider vinegar blend instead of white wine. The combination added a nice sweet / sour edge to balance the other flavors. Such a tasty dish! It’s going on heavy rotation all seasons!

  166. 5 stars
Loved this recipe! My picky 9 year old loved it and my husband went back for seconds! Definitely a keeper!

  167. 5 stars
Wow. So. Delicious. I made this for dinner with a couple of tweaks in my Dutch pot. Added 2 red potatoes chopped into bite size pieces and swapped out the 1/2 cup of water for 1 1/2 cups of broth in order to oil the potatoes. I used whole milk. So many flavors in this dish. Loved the spice, and pretty much everything about it.

  168. 5 stars
It was a little spicy for me, my family loved it
I am a home cook but I cook sux out of seven days and prep was not tem minutes. Maybe I am slow, but I think prep. Is. Realistically twenty. It highlighted fresh corn and was a. Pleasant change. Thanks.

  169. Made it realy good tasty cream corn good. whole things nice . one pot.its a keeper for summer with all the corn in season .the chicken was very tender a lot of flavor.i made it on the grill burner in a lodge skillet.

Ours didn’t look as pretty as yours but it tasted as great as yours looks! I like spicy food so I added a small jalapeno. My wife and I ate it with your “chickpea stuffed zuchini”. She showed me your website and I find it to be very well laid out with some delicsous looking recipies. This is our first from your site but we will be making more. I don’t pick over how someone speaks/writes. I served in the US MARINES and believe that you can say “you’s guys” or whatever the hell you want! I say “y’all” so whatever. Keep on cooking!!!!!!! Semper Fi!

This meal was everything it’s cracked up to be. I made this for my boyfriend and I, but I cut the recipe in half which was actually perfect for the two of us. I thought the red pepper flakes were a little spicy (I’m sensitive to spicy things) but it was a great contrast with the sweet corn and the cream. My boyfriend didn’t mind the slight heat and he said he would add like more bacon. They always do haha. I didn’t take a picture this time but would definitely make again. Great meal!

  172. 5 stars
AMAZING! I just made this for dinner and my husband made multiple comments throughout the meal about how great it was. We’re looking forward to eating the leftovers in a few days. Thanks for another great recipe!

  173. Hello!
I was just wondering if I could use chicken broth in place of the wine? I know the flavor will be a bit different, but I was just curious if it could be replaced with a non alcoholic option? Thank you in advance!!!

    1. HI! Yes, you can use chicken broth. That works great!! Please let me know if you have any other questions. I hope you love this recipe! Thank you! xTieghan

Made this this evening. Very tasty! I used bone-in chicken thighs, and added sage to my herb mix. It was difficult to evenly stir in the cream and cheese at the end with the meaty thighs in my way, so I took them out, and then added them back. At the end there was a little grease that had separated out, which is not visually or texturally ideal, but didn’t bother me (though I do wonder if it will separate even more when I re-heat the leftovers tomorrow? I nearly always cook for one, but still keep forgetting to think through how these recipes will fare on the second and third days). I also topped with fresh quartered cherry tomatoes from my garden before serving, which made me feel healthier and brought a nicely balancing tartness to the plate, I highly recommend.

  175. 5 stars
This was outstanding!! I didn’t have bacon, but it still had a lot of flavor. My son ate two servings!! This will definitely go into the regular rotation!

  176. 5 stars
I made this a few weeks ago and it was a hit! It’s been added to our list of favorites! Our grocery store was only selling yellow onions by the bushel so I used a shallot. It turned out ok but next time, I’ll bite the bullet and get the yellow onion. Otherwise, so easy and so delicious! The perfect summer dish 🙂

  177. 5 stars
I can’t wait to try this. It look amazing! I have some mushrooms that need to be cooked. How do you think they’d pair with this dish?

    1. Hi Samantha! I am sure mushrooms would be such a great addition to this! What a great idea! I would add the mushroom with the corn. Please let me know if you have any other questions. I hope you love this recipe! Thank you! xTieghan

Yum! Made this last night for my parents and we all loved it! I served it with brown butter cauliflower gnocchi (thank you, trader joes) and lemon dressed arugula.

Thank you for another one to keep in the go-to recipe arsenal.

This is one of my family’s favorite recipes, we’ve made it several times now and there are never any leftovers. So good!!

  181. 5 stars
I’ve made this at least six times and it’s a total keeper girl! The flavors and the creamy sauce are absolutely delicious- and I must admit, a big chunk of homemade sourdough bread is my favorite with this. Comforting, yet the wine, cream sauce and overall married flavors distinguished…seventh time coming up soon!❤️

  182. 5 stars
This was my first recipe from this blog and it was amazing!!! This was easy enough that I let a 15 year old take the lead on the cooking. It took a little longer than I thought but it was so worth it and I’m sure next time it will go faster. Paired it with some noodles and brussel sprouts. Yum. Can’t wait for leftovers tomorrow. Thank you

    1. Hi Courtney! I am so glad you loved this recipe! Thank you so much & I hope you love every other recipe you try as well!

    1. HI! You can use 3-4 cups of frozen corn. That works great! Please let me know if you have any other questions. I hope you love this recipe. Thanks so much and happy Thanksgiving! xTieghan

I was searching for a new chicken recipe and stumbled on this. Made it for dinner tonight, fully expecting enough leftovers for my lunches at work for a couple of days, but came away empty handed. My husband and boys – even the one who turns his nose up at anything with corn – went back for THIRDS. I didn’t even get a chance to take photos; all you would have seen was the carnage. This was a huge hit in my house – I’ll have to double it next time!

  184. 5 stars
This was delicious! We’ve already had this for dinner 3 times this month and it’s divine- we added peas for some greens but it is 10/10

  185. 5 stars
This was SENSATIONAL!!! The flavors…and oh yes, the bacon and thyme! Thank you for making last week a great one; we have been digging into this night after night. Thank you for sharing your incredible talents with us; I truly look forward to the next recipe. xo

  186. It’s not summer here so I swapped mushrooms for the corn and it was spectacular! A new favorite that will be on high rotation. Thank you

  187. This was delicious! The smoky/creamy corn sauce was so good with the chicken. I’ll bet it would be good with shrimp too. Thanks for another great recipe!.

  188. 5 stars
Made this tonight for some friends, thank you for such a great recipe. Delicious, easy, and really well received! Everyone had seconds!!

  189. 4 stars
I made it for dinner yesterday and my family loved it! A delicious meal with little effort. I served it with jasmine rice and it tasted great. I might omit bacon next time I make it though. I think it’s perfectly flavorful without it and slightly less heavy.

  190. 5 stars
WOW! This was a fantastic meal and it was a very recipe to follow. It was so good I sent the recipe to my mom and she made it the next night for dinner based on my rave review. She and my dad are equally obsessed with the recipe. Just went on amazon and ordered your cookbook(and a 2nd for a Xmas gift for my mom) Thanks Tieghan for a fabulous recipe!!

  191. 4 stars
The speed of your video for garlic butter creamed corn chicken is manic! I got out of breath watching it, Nevertheless the recipe looks good!

  192. We made this for dinner last night. Amazing!! I love the one pot cleanup, and the fresh herbs made the recipe very flavorful. It’s now in the repertoire.

  193. 5 stars
Finally got to make this last night for supper. Holy. Crap. This was amazing!! My boyfriend and I both raved over it the whole time we were eating. I’m a decent cook but this recipe just really stepped it up and made me feel like i knew what I’m doing ? next time I’m going to do all the prep in the morning. Then it will be an even faster meal! Thanks for the fantastic recipe!

  194. 4 stars
This was delicious but I gave it only 4 stars bc it’s easy to be delicious when you are made with cream, bacon and cheese 🙂

  195. 5 stars
I made this for dinner tonight and it was so good! Perfect while corn is in season. I will definitely be making it again before the summer corn is gone!

    1. Hi Jill! This recipe in particular is not in my cookbook! Most of the recipes in the book cannot be found on the site, with the exception of a couple I wanted to share! Thanks!

  196. I made this last weekend at the lake for friends and family. EEEEEEvery one flipped over it!!!!
It was interesting the reactions….. like what made it soooo flavorful to what exactly is in it!!
Thanks so much and I’m making it again tomorrow night for my Mom1

  197. 5 stars
I’ve made this twice now. My husband and I love this recipe! In fact, my husband said it’s become his favorite dish ever. Thank you for the recipe!!

  198. Your recipe arrived just when I was about to buy some fresh corn. So I made this recipe for lunch and we loved it. It was so delicious and just perfect for a summery lunch. I omitted the Parmesan as I felt it was already rich enough with the cream

  199. 5 stars
Oh my gosh, this was fantastic! Even without the bacon, which I used up yesterday with breakfast :/ I added some extra herbs for a little extra flavor, but will definitely be making it with bacon next time.

  200. 3 stars
Made this last night and it was yummy. Loved the bacony chicken combined with the crunchy creamed corn and fresh herbs. As I was making it, I realized it was also a saturated fat bomb! The bacon grease, butter and heavy cream although delicious, are tough to metabolize.
I’d love to know any creative alternatives you may have that will deliver the same taste. Will make again, but only with substitutions!

    1. HI! You can try omit the bacon to reduce the grease and using whole milk in place of the cream. Please let me know if you have any other questions. So glad you love this recipe. Thanks so much! xTieghan

  201. Wow this recipe was absolutely amazing! I didn’t end up using cream because when I opened my (newly purchased) cream, it was spoiled 🙁

So I just used some extra parmesan, and it turned out incredible anyway! Although I would have to say that I spent a lot longer than 40 minutes on the total prep and cook time haha. I’ll definitely make this again.

  202. I made this dish tonight for my husband and I, and it was splendid. I admit I made a few changes, as I usually do, using the recipes as more of a guide. Used frozen corn in place of fresh. I also replaced the wine with chicken stock using almost the same amount of stock as wine and using all but 3 tablespoons of the cream, replacing it with chicken stock, and only using 3 tablespoons of cream, effectively cutting the fat and calories. It was fantastic! Thankis so much for this recipe!! My husband loved it and I am sure to be making it many more times!!

  203. So excited to make this tonight! Can I use almond or cashew milk instead of heavy cream? also side note re: the “you guys” comment. I think some people have too much time on their hands to worry about such things. I say it all the time, it’s relatable and true to how you speak 🙂

    1. Hey Nadia! So nice to hear from you! I have not tried this with a nut milk, but I think it would be fine. and thanks for the kind words! Please let me know if you have any other questions. I hope you love this recipe. Thanks so much! x Tieghan

  204. Made this last night. I skipped the bacon. Was delicious. Probably won’t add the bacon next time because I did not need it. Thanks for sharing! New to your site and really love it!

  205. 5 stars
You had me at garlic butter. I happen to have fresh basil and thyme growing on our deck. So I thought why not? I’m so glad that I did! The flavors were delightful. I might of added an extra tablespoon of butter and another piece of bacon. Lol. What can I say, we do like our fat. I can’t wait to eat the leftovers tomorrow. I’ll be making this again.
    Thanks!

    1. Thank you so much Jill! I am so glad you loved this recipe and hope the leftovers are just as good ?

  206. 5 stars
I made this. It was a huge hit. So good!!! Thank you for another wonderful recipe that I can add to my Paprika app to cook all the time. You are a life saver. I cook from you all the time and I have yet to have a dinner that we won’t repeat. This one is for sure a 5 star!!!!

  207. Made this tonight! Loved it. Will be a staple in this house hold (will have to limit red pepper flakes when cooking for some). Thank you for the wonderful recipe.

  208. Hey Tieghan! Can’t wait to make this–any recommendations for a non-dairy alternative to the heavy cream?

    1. Hi! You can use canned coconut milk, that will be delicious! Please let me know if you have any other questions. I hope you love this recipe. Thanks so much! x Tieghan

  209. This was so good! We made some slight alterations: used a large Dutch oven instead of a skillet, sautéed the onions before the chicken, used bone-in chicken thighs and the BEST substitution ever, used thick cut beef bacon (since I can’t eat pork). My friends said it tasted like real bacon and left behind a less smokey flavor. They’re still raving about the meal days later.

  210. Oh my goodness Tieghan. My husband loved this dish so much. It was better than anything he could have gone out for. You are magic in the kitchen!

  211. I was also going to ask about the chicken skin. Maybe you should add “skinnless” to the recipe for clarity? I do prefer bone-in, skin-on chicken thighs. I assume I might increase the cooking time a bit for that? This looks delicious, so it’s going on my menu for this week!

    1. Hey Karean! Added that to the recipe. I like to use boneless, skinless chicken breast. If you’d like to use bon-in and skin-on, increase the cooking time by 20 minutes or so. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much! x Tieghan

  212. Just made this for dinner tonight- let’s just say I’d jump into a bath of this stuff! So good!

Made this deliciousness tonight while my brother and sons were putting up a fence to keep our new puppy from running away, when everyone came in hot, tired & hungry this was the perfect meal! They loved it and liked the little ‘kick of heat’ from the red pepper. Thanks again :). My kids (18,19,23 & 25) now call you “my girl”!

  214. 5 stars
I have never commented on a recipe before – on any site, ever, despite doing a lot of home cooking – but actually said “Shut the eff up!!” after taking my first bite of this. Well done! Your site came to my attention while reading an article about your adorable Olympian brother and is a fast favorite!

  215. 5 stars
This was fantastic! We have a great farmer’s market nearby and I tried to get as much there as I could for your recipe. Was even able to get a yummy goat’s milk cheese they call “Alpsiago” that worked great for this dish. Love your site and cookbook as well!

    1. Thank you so much Marisa! I am so glad you loved this recipe and were able to get some local cheese!

  216. I made this last night and it is amazing!!!!!! I loved it and I have leftovers for a few days too!!

  217. 5 stars
Sooo good.. My husband doesn’t like cheese, so I left it out and it was still delicious. We try to avoid gluten, so I breaded the cutlets in oat flour made by whizzing rolled oats in the blender. It worked fine. A friend of ours who is a super taster (has super sensitive taste buds) really liked it too. This recipe is definitely going to be in the dinner rotation! Instagrammed a picture at blissandemptiness. Had already started eating when I remembered that I should take a picture. Oops.

  218. 5 stars
This was delicious!!! I added extra garlic and hot pepper flakes. I served it with noodles with brown butter but it could have gone well over rice.

  219. I’m going to make this for dinner tonight and I’m so excited! I’m wondering if I’m depriving myself of some flavor because I would skip out on the fresh herbs at the end to save money. I do this on all dishes, not this one specifically. Am I missing out?

    1. HI! I am a huge fan of finishing recipes with fresh herbs and I do think they add a lot of flavor, so I do recommend using them if you can! If not, I am sure it will be fine. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

  220. 5 stars
I just made this last night and it was incredible – everyone loved it – it will certainly be made over and over again – thank you for this wonderful recipe

  221. If I use bone in chicken thighs or drumsticks, how would that alter the cook time? Thanks! I can’t wait to try this recipe, it looks so yummy!

    1. HI Ann, I would tack on 20-25 minutes more of cooking time. I have not tested the recipe this was so I cant say for sure, but I think that should do it! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

  222. I’m going to make it this weekend and will butterfly the chicken to speed up the cooking.can’t wait

  223. Hi there!

Are you leaving the skin on the chicken or not? Is it crispy if it’s staying?

    Thanks so much!

    1. HI! I like to use boneless, skinless chicken breast, No skin. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

  224. 5 stars
That’s such a delicious looking recipe. Perfect way to use up all the amazing corn we’ve been getting. Love your ideas Teighan. So so true about social media being slow and blog being slow, but it’s absolutely nice to see recipes and read post.

  225. This looks amazing! (“you guys” is a common colloquialism in Western Pennsylvania and parts of Ohio, so I find it charming!)

  226. This may be a stupid question but assuming the corn needs to be cooked prior to adding to skillet ( boiled..??)

    1. Hi! The corn does not need to be cooked before adding it to the skillet. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

    1. YOu can use chicken broth in place of the wine and I would use 4 cups of the canned corn. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

  227. Scheming dinner plans when I received this bad boy in my inbox. Definitely on the menu for tonight along with the salad you recommended! Thanks Tieghan!

  228. I was looking for something to do with some fresh corn, and here it is!!
Even though I don’t post much, I read every post every day. We recently went on vacation to the Florida Keys and it took me hours to catch up when we got back. I enjoy your posts, pictures and recipes. And I know my husband loves eating all of the creative things I cook!

    1. That sounds so fun! I hope you had a great time in the Florida Keys! Thank you so much Lisa I am so glad you and your husband are loving my recipes and I hope you love this!

  229. Love how the chicken still has a good sear/crispy skin with the contrast of the creamed corn! Looks like a family-friendly favorite for sure! 🙂

  230. This looks delicious and will change from all the summer salads. I do appreciate a cozy summer meal when temperatures aren’t too high and I will try this one rapidly!
Regarding Monday’s post, we are wondering with some friends if you really are the one reading and answering all the comments… Whatever, I enjoy following your posts, recipes and everyday life!

  231. Hi! Could you do a post (or send me a link if I missed it) of your favorite cook/bakeware? I need to upgrade. Also, I have an irrational fear of cast iron. Could you do a video of how to season and care for a cast iron skillet? Thank you!

    1. Hi Lori! I love using Staub cooking pots and pans! That is basically all I use! I hope this helps but let me know if you have further questions!

  232. Tieghan:

I enjoy your blog and find your unique voice entertaining. Of course, the food is beautifully photographed and the recipes fun and interesting. I do, however find your use of “you guys” in referring to your audience a bit grating (pardon the cooking pun!). You used it seven times in this post alone. Perhaps consider just using the word “you”? It is more grammatically correct and gender-neutral. Good luck on your continued success!

  233. I love your cooking videos! And can’t wait to see the new studio. It’s not food related but I’d love to see Asher and Merle in some of the videos! And maybe how you choose your cookware/serveware because let’s be honest a pretty plating just adds to the ambiance of a meal! I meal planned already for the week but this recipe is going on next weeks list!! I mean who doesn’t like chicken and corn! Even my picky dad will eat this (no greens for him!). Can’t wait!
