This Slow Cooker Chipotle Chicken Tortilla Soup with Salty Lime Chips is the perfect bowl to warm up to on cold fall and winter days. Made with fire-roasted tomatoes, poblano peppers, smoky chipotle peppers, and shredded chicken, it’s hearty but healthy and so delicious. Top each bowl of tortilla soup with homemade salty lime chips, plenty of cheddar, fresh cilantro, and avocado too. This bowl of tortilla soup is a cozy meal that you can feel good about eating. Just be sure to serve with plenty of those salty chips…they’re a must.

Welcoming the week with yet another warming bowl…and yet another slow cooker recipe. But don’t worry, you can easily make this on the stove-top or even in the instant pot too! As always, I want everyone to have the ability to make each and every recipe I share!

This is crazy, but we’re going on our third Monday of slow cooker recipes. There’s been healthier slow cooker creamy tortellini vegetable soup, slow cooker saucy Sunday bolognese pasta, and now today’s tortilla soup. I’m starting to wonder if I should just make this a new fall Monday “thing”. Slow Cooker Mondays? What do we think? In my mind, it sounds like a good idea. But I know myself, and believe that I’d get bored. This string of slow cooker recipes has really just been a coincidence.

However, I am definitely NOT bored with today’s Chipotle Chicken Tortilla Soup…it’s DELICIOUS. And the chips on top? They seal the deal on this bowl and make it a soup worth calling dinner. I made this yet again over this the weekend. It’s just one of those recipes that are loved not only by those you serve it to…but also by you, the cook! Everyone who cooks can appreciate a recipe that’s both delicious and easy.

The inspiration for this one was simple. I tend to get hyper-focused on fall foods, where I only make dishes like butternut squash pasta, creamy broccoli cheddar soup, and well, more pasta with squash. All with lots of fresh sage. So I felt like we needed to spice things up a little today…tortilla soup in for the win!

This tortilla soup is simple, here are the details.

This is a tried and true, one and done, slow cooker recipe. Meaning, this is EASY.

Everything goes into the slow cooker, cooks all day, and you’ll come home to a perfectly delicious bowl of tortilla soup. It doesn’t get any easier.

That being said, there are a few reasons why this soup is one of the best, and oh so flavorful. I like to use a combination of fire-roasted tomatoes, poblano peppers, and smoky chipotle peppers in adobo. In the past, I’ve made shortcut versions of tortilla soup, but I can now say, nothing beats out this version. It’s so rich in flavor and beyond good.

Once the slow cooker has finished cooking, simply shred the chicken and stir in lots of lime juice and fresh cilantro.

But there’s one more thing…the toppings.

And guys, the toppings are the real secret. Tortilla soup is always delicious, but what makes tortilla soup over the top good are the toppings. So you have to do them all!

I layer as follows: a thick layer of shredded sharp cheddar cheese, a dollop of yogurt, and sliced avocados. Then sprinkle on lots of fresh cilantro and green onions too.

And lastly, those salty lime chips.  Yes, you can use store-bought tortilla chips if you’re in a hurry, but if you have time make them yourself. These salty lime chips are addictingly good. I just take corn tortillas and fry them in a bit of avocado oil (or olive oil). You only need a fourth of a cup, we’re not deep-frying these! Once the strips are all fried, simply zest a lime over top, then sprinkle with flaky sea salt.

YUM. You have to make the chips. As I said above, they really do seal the deal on this soup.

And guys, that’s pretty much it for this one. I love a simple Monday meal and this soup is just that! Simple as can be, but every spoonful is so delicious. Think a little spicy, a touch smoky, filled with chicken, peppers, cheese, chips, and all those toppings. The best bowl of tortilla soup!

Slow Cooker

  • 1. In the bowl of your crockpot, combine the olive oil, onion, garlic, poblano peppers, chipotle peppers, paprika, cumin, and a pinch each of salt and pepper. Stir to combine. Add the chicken, then stir in the tomatoes and broth. Season with salt and pepper. Cover and cook on low for 6-7 hours or high for 4-5 hours.
    2. Shred the chicken using two forks. Stir in the lime juice, and cilantro.
    3. Ladle the soup into bowls. Top, as desired, with yogurt/sour cream, cheese, avocado, cilantro, green onions, and tortilla chips. Zest a lime over each bowl. Eat and enjoy!

Instant Pot

  • 1. Set the instant pot to sauté. Add the olive oil, onion, garlic, poblano peppers, chipotle peppers, paprika, cumin, and a pinch each of salt and pepper. Cook 5-10 minutes, until very fragrant. Turn the instant pot off. Add the chicken, then stir in the tomatoes and broth. Season with salt and pepper. Cover and cook on high pressure for 8 minutes.
    2. Once done cooking, use the quick release and release the steam.

Stove-Top

  • 1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion, garlic, poblano peppers, chipotle peppers, paprika, cumin, and a pinch each of salt and pepper. Cook 5-10 minutes, until very fragrant. Add the chicken, then stir in the tomatoes and broth. Season with salt and pepper. Partially cover and simmer over medium-low heat 15-20 minutes, until the chicken is cooked through.

Notes

Salty Lime Chips: heat 1/4 cup avocado oil or olive oil in a medium skillet set over medium heat. When the oil shimmers, add 4 thinly sliced corn tortilla strips. Fry 1 minute, then toss and fry another 30 seconds to 1 minute. Drain on a paper towel lined plate. Sprinkle with lime zest and flaky sea salt. Repeat with 4 more tortillas.

This is a fantastic soup! Especially for people who like the spice. Super easy and delicious 😋 I love soups all winter long and I will be making it again .

  4. 5 stars
My new go-to tortilla soup recipe. Seriously so good and easy. I did it on a stove top on a rainy afternoon and it was perfect!

  5. 5 stars
This was amazing! Wonderful flavor and just the right amount of heat. I made exactly as written with the exception of adding just a little more chicken. The salty lime tortilla strips were a great complement too. Topped with sour cream, scallions, sliced avocado, and grated white cheddar as suggested. Thank you for such a great recipe!

  6. 5 stars
I love this recipe! The soup is so yummy & my whole family really likes it. It’s in the crockpot right now! 🙂
The only thing I have yet to do is to make the salty lime chips- can’t wait!

  7. 5 stars
Delicious – this soup has a nice smoky kick to it. I also added black beans. My partner who is has less spice tolerance enjoyed it with cheese and sour cream.

Would this soup hold up well to being frozen, or best to just eat it this week? Thanks!

    1. Hi Meghan! So happy to hear that this recipe was enjoyed. You could definitely freeze it and then thaw on the stove when ready to eat again 🙂 x Tieghan

I have made this no less than five times and LOVE it! I substituted chicken broth for veggie and then omitted the chicken and added 1/2 c of quinoa. That way I can make it vegetarian friendly and easily have rotisserie chicken on hand if desired. I also add raw carrots and radish along with a can of hominy-inspired by a local tex/mex restaurant. We love this variation so much I thought I’d share.

    1. Hey Kati,
Awesome! I love to hear that this recipe was enjoyed and appreciate you giving it a go! Have a wonderful week:) xTieghan

Amazing! Made the recipe as is (was going to use the chicken tortilla soup recipe from the Super Simple cookbook), but found this had more ingredients that I had on hand. This was easy to prepare and I can see adding corn or black beans to it for a future spin on the original. The soup was very hearty. Will make this again and again.

    1. Hey Melodee,
Fantastic! Thanks a lot for giving this recipe a try, I am so glad it was enjoyed! Have a wonderful holiday weekend 🇺🇸 xTieghan

  10. Hi!

This looks amazing! If I use canned black beans instead of chicken should I rinse them first to keep the flavor of the broth a bit more in tact? Thanks so much!

    1. Hey Michael,
Yes, I would recommend rinsing the beans first. I hope you love the chili, please let me know how it turns out! xTieghan

I made it exactly as written, and the soup was so thin, not at all thick like a traditional tortilla soup. It was disappointing. Any suggestions for making it thicker? Reducing the amount of chicken stock or pureeing the soup after it has cooked?

    1. Hey Mini,
So sorry you did not enjoy the recipe. I am not sure what you would be pureeing. If you want it thicker try adding the rice to the soup, that will help soak up the broth:) I hope this helps! xTieghan

    2. Hi, Mini,
I always thicken my chicken tortilla soup by adding either crushed tortilla chips or diced corn tortillas and simmer. 🙂

  12. This is delicious and so easy! We made it yesterday and loved it. So glad to have leftovers. It definitely has a kick of heat, so we are gonna dial back on that next time, but definitely putting it in the rotation!

    1. Hey Michelle,
Thanks so much for giving the recipe a try, I am thrilled that it was enjoyed! Happy Valentine’s Day❤️ xTieghan

    1. Hey Ana,
I prefer to thaw my chicken first, but frozen chicken will be fine to use as well. I hope you love the recipe, let me know if you have any other questions! xTieghan

  13. I can’t wait to make this recipe, although I could only find cubanelle, bell pepper, and jalapeños at the store. What would you recommend I use in a pinch? Thanks 🙂

Ps your recipes are the absolute BEST and they bring me lots of joy! I have the HBH cookbook and I love it!

    1. Hey Jessie,
The recipe calls for jalapeños, so I would use those:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

So easy and so yummy! I’ll definitely be making this one again! I did it on the stovetop. I cooked the onion and poblanos for a little while before adding the spices and chipotle peppers. I used 2 chipotle peppers which gave it a nice heat but not too spicy.

  15. 5 stars
I couldn’t find any poblanos, so I used jalapenos and I only had one can of tomatoes, but it still turned out great. I added a fresh tomato at the end and it was great!

  16. 5 stars
I made this tonight and it was a huge hit! My husband said it was the best soup he’d ever eaten. Delicious!

  17. Can’t wait to try this. What can I substitute for the cilantro? Parley? Basil? I want to make this for someone who doesn’t care for cilantro.
    Thank you

    1. Hey Megan,
I think parsley would be great in place of the cilantro. I hope you love the recipe, please let me know if you have any other questions! xTieghan

Really easy prep for the crockpot version of this nicely spicy & smokey tortilla soup! Appreciate all of your topping suggestions. That makes eating this soup even more fun, and the dairy toppings help cut the spice. I didn’t fully read through the recipe when I prepped this and just chopped large slices of onion instead of dicing. When serving, I’ve been cutting the onion pieces smaller. 😂 Made a note of that for next time! Will try freezing half for later. Thank you!

  19. 5 stars
This is actually the best chicken tortilla soup I’ve ever had. The addition of the smoky chipotle is literal heaven!

    1. Hey Sarah,
I am so glad this recipe was enjoyed, thanks so much for giving it a try! Have the best week. xTieghan

  20. This is so good! One tip on the tortilla chips- if you use the “uncooked tortillas” that they have at the store now, your family will love you even more! They have taken the tortilla game to a whole new level!

    1. Hey Nellie,
I am so glad that the recipe was enjoyed, thanks so much for making it! Have a great week:) xTieghan

  21. 5 stars
Delicious! I love the flavors and level of spice. For people a bit sensitive to spice, I added a few squirts of ketchup in a smaller batch for some people in the family who do not like spicy and it took the bite out!

  22. 5 stars
I pressure cooked this and left out the tortilla strips because I’m lazy and had too many hard ciders, but this is absolutely amazing🖤. I have made quite a few of the recipes on this site and everyone is always happy! I think I even used your recipe for my first turkey 🤓

  23. 4 stars
My mouth is on FIRE!!!! Lol – but that is because I cannot handle heat at all! I should have thought about that when I started this recipe…oh well, it’ll just take me a while to finish my bowl. I even added a sweet pepper and some black beans. I think next time I will only do 1 chipotle pepper and 1 poblano (I think the ones I got were a lot spicer then the average poblano), and just add more sweet peppers. I don’t normally like chipotle flavored dishes, but this soup has really good flavor! Thanks for another great recipe!

  24. 5 stars
I made this today for lunch and it was so yummy! I had some leftover rotisserie chicken so I used that and instead of the tortilla strips I added in some cooked brown rice. Very warm and filling for a cold January day. Thank you for sharing!

  25. 5 stars
Had this for dinner this eve. Delish! But had left over hard tacos so used those for top. Cannot wait to have it again with those salty lime chips!!!

  26. 4 stars
Realllly good! Super easy and delish, the mistake was on me… I dumped in the whole can of adobo sauce and it was prettyyyy spicy! I have a decently night spice tolerance and it was a lot even for me! Haha I’m sure following the instructions as written it would be just right.

    1. Hey there,
Thanks so much for trying the recipe. That is so great the recipe was enjoyed! Happy New Year! xTieghan

    Hi!
I made a vegetarian version of this with beans and corn instead of chicken and it was delicious! This recipe will for sure go into my rotation!
    Thank you so much!

    1. Hey Mary Lou,
I am so thrilled that you enjoyed the recipe, thanks so much for giving it a try! Happy New Year! xTieghan

  28. My family doesn’t like tomatoe chunks in soup. Could I sub some tomato soup instead? Or any other suggestions? I’d love to try it, looks delicious!

    1. Hey Carri,
I would use pureed tomatoes. I hope you love the recipe, please let me know if you have any other questions! Happy New Year! xTieghan

I have had a go to tortilla soup recipe that I have used for 30 years. I get asked for it all the time. Tonight I tried yours, and my family says it is even BETTER!!! We loved it!!! Only changes I made were to grill the chicken and chop, roast the poblanos and peel the skin, and added carrots. Thank you so much!!! I have a new go to recipe!!! Every single recipe of yours is a hit with my family. You have really been the highlight of 2020 for us.

    1. Hey Cathy,
Thanks so much for giving the recipe a try, I am thrilled that it worked out for you! Happy Holidays! xTieghan

  30. Looks amazing. Family does not like chunks of tomatoe . Can I blend the soup at the end. Then end shredded chicken ?

    1. Hey there,
Sure, that would work well! I hope you love the recipe, please let me know if you have any other questions! Happy Holidays! xTieghan

Made this last night for dinner. It has become tradition in our house to have soup on the night before big holiday feasts. This soup is fantastic! So flavorful! I added a can of black beans’cause we all love beans. And everyone loved those salty lime chips! Thanks so much for this recipe. They’re already asking when I’ll make it again.

    Have a very Merry Christmas!

  32. 5 stars
Love this soup! Have made it four times in my crockpot during a kitchen renovation. I always follow the recipe with one exception-I add one red bell pepper. Unfortunately the last time i made this I had a terrible, very painful reaction on my hands to the poblano pepper. Tip for those with sensitivities: wear gloves when chopping peppers.
Love the flavors of this soup and how easy it is to make!

    1. Hey Amy,
Thanks so much for giving the recipe a try, I am thrilled that it worked out for you! Happy Holidays! xTieghan

I’ve been wanting to make this for a while, and a few weeks ago bought some poblanos (in a bag mislabled as “Pasilla” peppers instead of our supermarket’s usually loose, fresh poblanos, which they no longer have) and they spoiled almost immediately. I bought them again last weekend as they looked OK, but upon cutting them up, realized they were no good, so in desperation I used two jalapenos. I made the soup but was mystified by the “corn tortilla strips,” which come in a bag and would shatter if I tried to slice them. I realized too late that you meant strips of corn tortillas 😉 so had to leave those out. The soup was pretty spicy, but all in all we liked it. Next time I’ll try making the tortilla chips, too.

  34. 5 stars
I made this on the stove top and it was delicious. I accidentally bought fire roasted tomatoes with chilies, so it had a real kick. At first I thought it was too spicy to consume a whole bowl but the toppings balanced everything out. Will definitely make again.

    1. Hey Jodi,
Yes totally fine to use! I hope you love the recipe, please let me know if you have any other questions! Happy Holidays! xTieghan

  35. THANK YOU for this recipe!! I made it for my girlfriends and we all loved it. I cooked it on the stove top and used 2 chipotle peppers (could’ve maybe handled more) and 2 pounds of chicken instead of 1 (which I seasoned all over with salt, pepper and garlic power before placing in the pot to sear). The soup never needed any additional salt added to it since the salt on the chicken and the salt in the seasoning mix for the veggies was just enough. I topped the bowls with avocado, cilantro, limes, regular tortilla chips and sour cream. It was beyond tasty and I can’t wait to make this again soon.

Oh my dear Lord. Are you kidding me?? This is the 5th thing in the last 7 days that this Napa dad has made..and WOW…everything has been incredible. (also made Creamy Coconut Chicken Meatball and Noodle Curry, Chicken Tikka Masala, Herby Mushroom Stuffing, and the Cinnamon Rolls/Pecans). You can do no wrong.

    1. Hey Lisa,
Sure that will work. I hope you love the recipe, please let me know if you have any other questions. Happy Holidays! xTieghan

  37. 5 stars
I made this last night and thought it was amazing but a tad too spicy for my family. Was it the adobo peppers or the fire roasted tomatoes that caused the most spice? I don’t cook with either of those regularly to know which was the main spicy culprit. I want to make it again without as much spice.

    1. Hey Lauren,
Thanks so much for giving the recipe a try! For less spice, next time reduce your poblano peppers and adobo peppers. I hope you love the recipe, please let me know if you have any other questions. Happy Holidays! xTieghan

We loved it. Easy and tasty. Great first night back to cold from a sunny vacation. This made it better. Thank You!

  39. 5 stars
Made this last night in the instant pot! Everyone loved it! Thank you! Super easy, lots of flavor, and so delicious!

  40. 4 stars
Yummy and easy in the instant pot. I used only one chipotle chili in adobo and heat was perfect. Next time I’m going to add black beans. Definitely make the salty lime tortilla strips. They are scrumptious.

  41. 4 stars
This has really good flavor! My husband and I both really liked it!
Very easy to make and put in the crockpot for the day. I added a can of black beans and some frozen corn. I think it would have been good if I had roasted the poblanos ahead of time, too.
Chicken tortilla soup is one of my husband’s favorites, so I’ll definitely be making this again.

  42. Hi! Do you know what size crock pot you use? I think I have a smaller one, and hoping this fits – planned to make today… Thank you!

    1. Hey Lauren,
My crockpot is 7 quarts. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  43. 5 stars
Made this tonight in my slow cooker and it is SO good…lots of chicken tortilla soups out there, but the chipotle flavor really makes this one stand out. I increased the chicken and added black beans and corn at the end as suggested by HBH reviewers, otherwise made it exactly as written. The salty lime chips were fabulous!

  44. 5 stars
This soup was delicious! We went the lazy route and used lime Tostitos lol and it was still good. Will def be making this again, so we’ll try the homemade chips next time!

  45. 5 stars
I didn’t have it in me to make the lime zest chips on top but even without this soup is one of my new favorites. So good and perfect for food prep- I work long shifts and have enough in me to reheat when I get home. Anyway this lasted in the fridge and was so comforting and filling to come home to.

    1. Hi Kathleen! I am really happy this recipe turned out so well for you! Thank you so much for trying this one! xTieghan

  46. Can I substitute the chipotle peppers in adobo for fire roasted green chiles? And can I substitute the poblano peppers for jalepeno peppers? Thanks!!

    1. Hey Kyra,
Yes, both of these substitutes will work. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  47. 5 stars
This soup was so good! It is spicy, but delicious. The lime chips are a must. I love that I could throw it all in the crockpot and when it was dinner time I only had to make the lime chips.

  48. Excited to make this recipe! I have seen in a few of your recipes to wait until the oil shimmer. What exactly does that mean? I feel like I am letting it get too hot! Thanks!

    1. Hey Cara,
Just until the oil has a light bubble look. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  49. 5 stars
Delicious! I made this for my lunches this week. Some of my household members aren’t as into spicy foods as I am, so more of this for me! 🙂 Stovetop directions worked perfectly. Thank you for the meal inspiration!

  50. 5 stars
Tortilla soup is my favorite food, so I’m always on the lookout for different variations, especially slow cooker ones. This recipe was super simple and very flavorful! I loved the spice from the chipotle peppers- I added four! I didn’t have time for the lime chips, but will make them next time for sure!

  51. 5 stars
So good. This was super easy to make and tasted amazing. Even the chips were easy to make and I’m glad I did the homemade rather than store bought, I think they taste better. Thanks to Tieghan my love of cooking is renewed.

    1. Hey Madison,
I would recommend to thaw your chicken first. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  52. OK, maybe a stupid question! But should I be grilling/roasting/browning the chicken before putting it in the slow cooker, or just tossing everything in there raw?

    1. Hey Jo,
You can go ahead and add the chicken raw. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  53. 5 stars
This was a great recipe, and easy to customize. For convenience, I used a can of chopped green chilis in place of the poblanos, and I added a can of drained pinto beans for a bit more protein. While the chicken was out being pulled, I pulsed the soup with an immersion blender to smooth it up just a bit. I know it’s not quite your recipe, but it turned out great!

    1. I am really glad this recipe turned out so amazing for you, Heather! Thank you so much for trying this one! xTieghan

  54. 5 stars
LOVED this recipe! I made it over the stovetop and it came out perfect. I added jalapeño and sautéed it with the onions, garlic, etc. Then just before serving I added in about 1/4-1/2c of cream cheese to make it a little creamy, but the broth itself was so good too!

  55. I made this Sunday in my slow cooker and my husband and I LOVED it!! Leftover’s today for lunch….delicious again! Perfect fall soup! Thanks!

  56. Hi!
Is there a way to make the ‘stove top’ version but still letting it cook/simmer for a few hours? When would you add the raw chicken? Or would you maybe do as the recipe says, and once the chicken is cooked, shred it and set it aside until you’re almost ready to serve? Thanks!

    1. Hey Sabra,
I would recommend following the stove top instructions listed above and simmer for 15 minutes or up to 2 hours. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  57. 5 stars
Tried this tonight and let me tell you..IT WAS SO DELICIOUS! The chicken was so tender and all the flavors blended so nicely together. The homemade tortilla strips were the absolute best topping. Will be making this again very soon!

    1. Hey Christine,
You can add the lime juice as a garnish! I hope you love the recipe, please let me know if you have any other questions! xTieghan

This is by far my most fave HBH recipe to date. Unbelievably flavorful. My only modification was not to include the chipotle peppers in adobo sauce only because turned out that the can I had on the shelf had expired in 2015 (WTH?). Just as well because the heat level was perfect for my less brave eaters. Oh wait. I also added a can of white beans. as I love them and that creaminess in a spicy dish. Thanks!

    1. Hi Alja! I am really glad this recipe turned out so amazing for you! Also, hate when that happens! Thank you for trying this one! xTieghan

  59. 5 stars
Perfect for fall – I used 2 chipotle peppers and the spice factor was perfect. highly recommend the homemade tortilla strips, and don’t skip the lime zest!

    1. Hey Megan,
I would do a grilled cheese! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  60. I loved making this! There were several chipotle chillis in adobo sauce (in the can) so I’ll be able to make the recipe again, or use them in something else. I’d also never used the fire-roasted tomatoes before either, and they were amazing. I did this on the stovetop and it was super easy to bring together – I added in some corn/peas/carrots just to boost the veggies a little, and I think it would be great to add some pinto or black beans if you didn’t want to use chicken. It tastes wonderful, and its very easy to make it vegetarian.

    1. Hi Iman! I am so happy this recipe turned out so well for you and was easy to make vegetarian! Thank you so much for trying this one! xTieghan

I’ve already made this twice and am about to make it again! I love it so much especially with the homemade chips. Everyone who I’ve made it for has loved it as well. I did omit the cilantro but stuck to everything else!

  62. I just made the slow cooker version for dinner last night, and it was absolutely fabulous! My tortilla strips didn’t come out as crispy as I would have liked, but I think maybe I didn’t let the oil get hot enough before I tossed them in. But it didn’t matter, it was still absolutely delicious!

    1. Hi Jennifer! I am really glad this soup turned out so amazing for you! Thank you so much for trying them! For the tortilla strips, I would suggest leaving them in the oil a bit longer to get the crispness you want! xTieghan

Perfect meal on a cold and rainy night. I made it in the slow cooker with thighs and added fresh jalapeno and a can of pinto beans. Leftovers might have even been better. Thanks for a great recipe!

  64. hey! i want to make this, looks delicious! can i freeze it? will this recipe freeze well if heated up a few days later and then i’ll add the toppings 🙂

    1. Hey CB,
Yes this recipe is totally fine to freeze! I hope you love the recipe, please let me know if you have any other questions! xTieghan

If you’re reading this & you haven’t made this already – MAKE THIS. My husband said it was the BEST tortilla soup he’s ever had, restaurant or homemade. Thank you Tieghan!!

Made this this week using my slow cooker – it was spicy & delicious!! Added Ohio corn that I had roasted & froze at the last minute – I know you know Tieghan ~ there is none better than Ohio corn ~ yum! Will make again & again, for sure!

    1. Thank you so much Debbie! I am really glad this turned out so well for you! Also, yes Ohio corn is the best!! xTieghan

Loved it! I decided to add some corn at the end, but it was great! Definitely saving this because it’s a super easy and delicious crock pot recipe!

  68. I’m so excited to make this tonight! Just wondering if you’ve ever made this with shredded rotisserie chicken and if you have any suggestions for making that work?

    1. Hey Naomi,
You could do that, I would just add it towards the end since it is already cooked. I hope you love the recipe, please let me know if you have any other questions! xTieghan

Made this recipe today. So easy and DELICIOUS! I bought already cooked and shredded turkey breast and used that instead of cooking my own chicken. Definitely keeping this recipe on hand for a quick and easy meal.

This was a huge hit in my house and so easy which is perfect for a mom of 3 little ones. Even my 3 year old said, “This soup is amazing!”

    1. Hey Alyssa,
Yes, totally fine! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  71. Tieghan,

When you are talking about the slow cooker version do you mean a definite slow cooker or can you use the slow cook setting on the InstantPot?
    Thanks!
    Christine

    1. Hey Christine,
I am referring to an actual slow cooker. I hope you love the recipe, please let me know if you have any other questions! xTieghan

My family agreed that this was the BEST SOUP I have ever made! It was the first recipe I have made in my new Instant pot, which I now love!! My husband and son love it spicy, and this had the perfect amount of heat. When I told my son what I was making for dinner he groaned…”I hate tortilla soup”…but he had to admit after a big bowl that this was amazing! Passing on the compliments to YOU!

There’s not one single sip left in my bowl. This will be made a bunch at my house! I didn’t have poblano peppers and still- divine!!

Made this last night and OMG, amazing!! Followed the recipe for the slow cooker and used 3 chipotle peppers in adobo. They brought the heat/spice but adding a dollop of Greek yogurt mellowed the spice and it was perfect!! Also made the lime tortilla strips which were out of this world and also super simple! Tostitos hint of lime chips are no comparison to these!!

  75. 5 stars
Made this, and we really enjoyed it! We didn’t make the tortillas, and just used regular tortilla chips. The lime juice is a great addition to this recipe! So much flavor!

Wow! This is amazing and so great that it lets your kitchen smell amazing all day! It definitely has a kick to it which we love. Better than any restaurant chicken tortilla soup I’ve ever had.

I made this tonight for dinner including the tortilla chips. My husband and I absolutely loved it! Thank you so much for your delicious recipes!
I made it in my Instant Pot, delicious and quick!

  78. Looks so good and I’m planning to make this week. I don’t have access to poblano peppers, would you suggest subing in jalepenos or omitting all together?

    1. Hey Allie,
You could do bell peppers in place of the poblano! I hope you love the recipe, please let me know if you have any other questions! xTieghan

This was delicious! So many flavours. A meal in a bowl and the homemade tortillas crisps were easy and worth making from scratch. Thanks!

Super easy recipe. The soup had a nice smokiness to it and the salty like chips were the perfect topping. Definitely recommend and would make again.

I made the slow cooker version with chipotle chili pepper and the flavors were delicious. Unfortunately it was fairly close to “melt your face off” spicy – with all the extras of cheese, sour cream and avocado it cut the heat to an almost tolerable amount, but still so incredibly spicy.

I’d say I have a decent spice tolerance (can’t eat eggs without a good amount of Franks), but this was so intense that the leftovers aren’t edible. I’d love to make it again because the base flavors were so good but have to find some way to cut down the spice without sacrificing flavor.

    1. Oh no! I am so sorry this was too spicy for you, Courtney! Did you have to leave the seeds out of the poblanos? Or maybe lessen the chilis next time? I would love to help! xTieghan

Made this the other day via the instant pot and it was amazing! Chicken was super tender, spice level was high (used 4 chipotles) but I couldn’t get it my mouth fast enough. And incredibly easy. I love simple chop and dump soups that act like you’ve been slacking away over them. I cannot wait for the weather here in CA to get cooler so I can add this into the rotation more often. Loved it! Thank you for sharing!

    1. Hi Sarah! I am so happy you have been loving this soup! I heard it was getting a bit cooler lately over there.. At least some family members said so haha! I hope you have an amazing week! xTieghan

  83. This is INCREDIBLE!! So flavorful, hearty and warming. Just delicious!! This my first time making your dishes and I could be more excited. Excellent soup, delicious idea for the tortilla lime chips. I didn’t substitute anything! Great reviews!

    1. Hi Justin! Yes, I only use natural light for my photos! Please let me know if you have any other questions! xTieghan

  84. Hello! I am making this today in my slow cooker and I want to add frozen corn and black beans but am not sure when I should add them in. I looked up other recipes and some add them immediately while other wait to add them towards the end. What do you suggest? I don’t want them to be too mushy.

    1. Hey Sabina,
I would add them at the beginning. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  85. Hi! Am totally going to make this- but terribly allergic to cilantro! Is there something else I could substitute it with?

    1. Hey Lauren,
Totally fine to omit the cilantro! I hope you love the recipe, please let me know if you have any other questions! xTieghan

Made this last night and both my husband and sister raved about it. I’m sending the accolades on to you ! Made the stove top version and we loved the ‘salty lime chips’ too. My husband said it is the best tortilla soup he has ever had.!! Thanks for yet another delicious recipe.

  87. 5 stars
Loved this! The lime and cilantro balance the smoky fire from the paprika and tomatoes so well. Made it in the crock pot and we all had seconds. The tortillas on top were a nice touch as well!

This soup was amazing and the salty lime chips were a perfect addition! We’ve tried several of your recipes and love how flavorful they are. We keep coming back for more!

Delicious and easy. But next time I’ll reduce the chipotle seasoning because it was way too spicy for us (I had even omitted the poblano!). I’ll definitely try again because it was just so easy and otherwise had good flavor.

  90. Hi! In your instagram story I remember seeing you add a can of ~something~ right before you added your broth. It looked so good but I can’t find it since the story disappears after 24h. It looked so good! Can you let me know so I can buy some & try it with the recipe?

    1. Hey Jill,
I added some of the adobo sauce from the can of chipotle peppers in adobo. I hope you love the recipe, please let me know if you have any other questions! xTieghan

I made it in the slow cooker, and it was so easy and so so good! I’ll be making this a ton throughout the winter!

    So delish!

Easy to follow and definitely a repeat! I found I needed to fry the tortillas longer than the recipe said based on my stove/pan. You can see when they start to get crispy!

  93. This looks delicious! I’ll definitely be trying this one soon! Two questions; how would you suggest I make this less spicy and how do you recommend storing/freezing? Thank you!

    1. Hey Monica,
I would reduce your chipotle peppers for less heat and then you can store in an airtight container for both the fridge and freezer. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  94. Tried this tonight and added beans and extra chiles because I’m In New Mexico and chiles are everything and beans were in pantry. Delicious with the homemade tortilla strips.

  95. 5 stars
Just ate this!!! So delicious but definitely has a kick!! I didn’t add as many Chipotle peppers or poblanos to make it less spicy. Added a can of black beans instead of the chicken and was perfect.

  96. 5 stars
This soup was delicious. I swapped out white beans for the chicken due to an allergy. As a vegetarian meal, it cooked up in no time in the crockpot. The heat level was nice and perfect paired with the lime juice. Such an easy recipe to make something so good. Thank you!

  97. 5 stars
Used the instant pot method. Came out delicious!! And so easy! ((Salty lime chips are key!))
    Will definitely make again.

  98. This soup is AHHHHMAZING!! The salted lime tortilla chips are a must. I used the stove top method and cooked it for a couple of hours – it is so good! Would have done it in the crockpot but my chicken was frozen! Do not hesitate to make!!!

  99. Super excited to try this! I want to make a batch and have leftovers. How would you best recommend reheating this for later? Stovetop or microwave?

    1. Hey Lucy,
Either one would work well! I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Maya,
Yes that will work! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  100. Hi , it’s in the crockpot as I write this … do you think I could put the roasted butternut squash in with this ? About 1 1/2 cups

    1. Hey Tanya,
Sure that would work. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This was a delicious soup. It was packing the heat with 2 chipotle peppers, even with some seeds removed. Made it exactly to the recipe and used sour cream, avacado and cheese on top. Very flavorful and complex. Loved the chipotle’s addition of the smokey flavor.

  102. What do you suggest subbing for cilantro in this? Or is it not very potent in this recipe? Thank you! So excited to try this recipe out 🙂

    1. Hey Margaret,
You can simply omit the cilantro. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This was delicious. I knew my sons wouldn’t eat it, so I added extra chicken and pulled it for fajitas for them. Everybody was happy: their chicken was tasty and well-seasoned, and our soup was very very good. Will make again and again.

  104. Definitely going to make this! Sounds like the recipe I have been looking for! Question though, why the olive oil in the slow cooker version? Just curious….

    1. Hey Jonnie,
It just prevents everything from sticking to the pot. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  105. Thank you for adding the instructions for stove top. Most times I see a yummy recipes and have to skip past it if it doesn’t have stove top instructions. Can’t wait to try it.

Just made this and it was delicious and really easy to make. I cooked it on my stovetop. I added a can of corn and black beans. It is spicy but the sour cream and cheddar cheese toppings even that out. This was a perfect dinner on a chilly, rainy night. Thank you Tieghan for another terrific recipe!

  107. Just made this in the slow cooker- and it is delish! The spice level was perfect for me (with a a little yogurt or sour cream) but I like spice. It was a little spicy for my dairy-free daughter, but she’s still enjoying it. I added black beans and corn at the end. The salty lime chips really made the dish! Will make this one again and again! Thank you!!!

    1. Hi Stephanie! I am sorry, but I believe in using whole ingredients instead of counting calories, carbs, fats, etc. I hope you understand! I hope you still try this recipe! xTieghan

    1. Hey Frank,
I would use beans in place of the chicken. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  108. I love the instant pot options and have made 3 of your soups in the past few weeks. I need to know though, when you say sauté, do you mean on low, med, high and some recipes (Creamy wild rice, chicken and roasted mushroom) say to sauté after releasing pressure. At that point do I leave lid off? Sorry for the confusing questions.

    1. Hey Nancy,
I like to sauté on medium and yes leave the lid off:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

  109. This sounds marvelous & I can’t wait to make it! Which of the “heat” ingredients should I reduce to make it not so spicy 🌶
My husband can’t tolerate a lot of spice 🙁
Thank you for all of your wonderful recipes.
    Becky

    1. Hey Becky,
I would reduce your chipotle peppers in adobo. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Michelle,
You could use beans in place of the chicken. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  110. Hi, this looks lovely, I’ll definitely be making it laterin the week. Which method do you think gives bedt results (stove top, slow cooker or instant pot)? Thank you! Ana

    1. Hey Ana,
I love doing this in the slow cooker. I hope you love the recipe, please let me know if you have any other questions! xTieghan
