If only every Tuesday morning could start out with these brown sugar peach pop tarts.

Oh how good would that be!? Instead, I’m headed to the airport today and flying out of my hometown of Cleveland, OH. I have to say, it’s been a bit strange being back home. Also, is it weird that I still, after ten years of living in Colorado, call Cleveland home? I mean, don’t get me wrong, my little barn in Colorado is totally home, HOME, but this place (Cleveland) feels so much like home too. I lived here until I was fourteen, so all of my childhood memories are from this place.

You know what’s funny though? Not much has changed around here. When my family lived in Cleveland, we lived on the west side, in a little suburb on the lake called, Rocky River. It’s definitely one of the nicer neighborhoods. Think cute little small town, sitting on Lake Erie with a few brick roads, some older, but very nice houses, and a yacht club. It’s odd, because my family does not seem fit this place at all, maybe that’s why my parents eventually moved. But this is where my parents grew up, and where most of my siblings and I grew up, so I think it will always have that homey feeling to me.

I tool a walk down my old “route”, the one that mom and I used to walk almost daily, and honestly, aside from a few new homes and flowers everywhere (something I appreciate so much more now) it’s still the same as it was ten years ago. The lake is stunning as I sit here writing looking out at it from my grandparents house, and it’s the picture perfect August Ohio day with a light breeze in the air and blue skies. It definitely makes you miss the warmer summer and autumn days around here.

I’ll dive into more details about my trip tomorrow, but for now I think we should chat about these peachy tarts.

And yes, we are doing back to back peach recipes this week. One, because it’s August and peaches are just about everywhere you turn, and two, because sometimes life throws curve balls into your content plan (cough, cough) and you gotta move some things around a bit.

It’s cool though, because I think we can all agree that the more peach recipes the better…or at least that’s what I’m hoping.

Moving right along…I feel as though I’ve said this so many times this month, but August always makes me think of the foods I used to eat as a kid. I wasn’t much of a junk food eater, but I did used to eat the occasional Oreo and Pop Tart.

My favorite Pop Tart was always the chocolate fudge flavor…which is probably why I have a homemade version on the site. If you have any chocolate lovers in your house I highly recommend checking out those chocolatey treats. They’re pretty indulgent, but so worth it.

I’ve always had a soft spot for pop tarts. These peach tarts aren’t really anything like a classic pop tart, but they are fun and delicious. And no matter what age you are, you’re going to love them.

Sticking with this month’s back to school friendly theme…and all things simple, these tarts are made with just a few ingredients. Fresh peaches, a little brown sugar, vanilla, and puff pastry.

SIMPLE. I mean, how could combining these ingredients not be utterly delicious, you know?

If you’re new to using puff pastry, it’s truly one of the best ingredients out there. It’s basically layers of butter and flour, very similar to a croissant. Let’s just say it’s delicious and it makes baking EASY, so obviously, you need to be using it.

The base of these tarts is puff pastry, the filling is simply ripe peaches, a little brown sugar, and a dash of vanilla. When the peaches are as sweet as they are right now, during these late summer days, I find that you really don’t need to add a lot of sugar to these tarts. I would recommend tasting your peaches before adding other ingredients and if they aren’t sweet enough for your liking, maybe add a touch more brown sugar.

For the glaze, I did something really good.

Brown butter and cinnamon.

Yes, yes, yes. Let’s be real, I love sweet things, but more than the sweetness, I love sweet things with butter. The combo of peaches, brown butter, and cinnamon is truly unbeatable. It’s kind of like apple, butter, and cinnamon, only with peaches, so good!

Put some browned butter in a bowl with a little powdered sugar, vanilla, and cinnamon and you’ll have a browned butter cinnamon glaze. That alone is spoon worthy good. Drizzle the glazed over your warm flakey peach tarts and you’ll have the most mouth wateringly good breakfast, brunch, snack, dessert, or just all around anytime food.

Perfect thing to make on a Tuesday afternoon or for Sunday morning brunch. Either way, just be sure to make these before the peaches are gone for the season. Also, if you wanted to double or even triple the recipe, these freeze beautifully! Peach tarts in the middle of December? Sounds pretty good!

  • 1. Preheat the oven 350 degrees F. 
    2. In a medium bowl, combine the peaches, brown sugar, and vanilla. 
    3. Cut each sheet into 6 rectangles. Evenly divide the peach filling among half of the rectangles. Lay the remaining 6 rectangles over the filling and seal the edges by crimping with the back of a fork. Repeat until you have 6 tarts. 
    4. Place on parchment lined baking sheets and brush the tops of the tarts with water. Transfer to the oven and bake the tarts for 15 to 20 minutes or until puffed and deep golden brown. Let cool slightly.
    6. Meanwhile, brown the butter on the stove. Let cool 5 minutes and then add the powder sugar, vanilla, cinnamon, and salt. If needed, add 1 tablespoon water at a time to thin the glaze as desired. Drizzle the glaze over the pop tarts. Enjoy!
