This blackberry lavender white chocolate clafoutis is high on my list of weekend activities and I am going to try to convince you to make it high on yours too!

But first, happiest Friday everyone! I feel like I’ve been in go mode all week, so I have to say that I’m pretty excited for the weekend. Although it’s kind of a busy weekend ahead, as we’re filming new recipe videos for the site on both Saturday and Sunday. However, on Sunday night I have a fun dinner to head to in Boulder. So all good things…only a little bit crazy!

Question, did anyone else’s week feel like a complete blur? Because that was totally my week, which is not really a bad thing, but man, time should really just slow down. Good news is that I have so many fun things to share with you all, keeping it all hush, hush for the moment, but soon enough I will let you guys in on everything that’s been happening behind the scenes!!

Since I’m basically dying to tell you everything, let me give you all a few hints. The cookbook is involved, there’s possibly some fun design stuff incorporated, a little bit of barn talk, and HBH may or may not be getting a whole new look sometime very soon…

In the meantime, we have very sweet, summery dessert things to chat about today!

Yeah, yum, and yes, please!

Okay, so have you guys heard of a clafoutis? A couple of summers ago I posted a fun raspberry, nectarine and sweet corn clafoutis on the site, but today’s clafoutis has won my heart over. It’s sweet, simple, and loaded to the brim with blackberries, which are definitely one of my favorite berries!

Plus the combo of blackberries, lavender, and white chocolate? Well, it’s pretty much perfection. I did this combo with my very first scone recipe last year and ever since then I’ve been obsessed with combining these three ingredients. It’s one of my favorites for sure.

Not going to lie though, originally this was supposed to be some kind of cake, but then I sent a quick text to my mom giving her the option of cake verses an eggy clafoutis and she immediately came back at me saying the clafoutis was totally the way to go. Instead of going back and forth like I normally would, I just decided to listen to her (for once, I tend to ask her opinion and then sway my own way…oooops) and started cooking.

I think I knew in the back of my head that this was the way to go because of how quick, simple and easy clafoutis are to make.

Oh, and if you’re unfamiliar with a clafoutis, it’s a french fruit dessert that’s a little more dense than say a dutch baby. It’s typically made with cherries (at least that’s what Julia Child used anyway). However, me being me, I switched things up and used blackberries and lavender. <– again I love this combo.

Here’s how this easy dessert works:

Blend everything but the berries and white chocolate in a blender. Transfer to a buttered baking dish and top with blackberries.

Bake.

Dust with a generous amount of powdered sugar.

EAT.

Four simple steps and so delicious.

The white chocolate is totally not needed, but it does add a special sweet and unsophisticated touch to this rather sophisticated dessert, which I kind of like, because if you meet me in real life, you’d see that I am the least fancy person around. Jeans and a t-shirt girl over here, but then I guess I do sometimes get fancy with food…

Anyway, point is, this dish is fancy meets not so fancy, and I think it works. Balance people, balance. This is great as an easy after dinner dessert, or served up for a Saturday or Sunday brunch, either way it’s pretty delicious.

And one note about the lavender, if you don’t want a super strong flavor use about 2-3 teaspoons dried lavender, if you’re a lavender lover, go for about 1 1/2 tablespoons. I found that 1 tablespoon was perfect. And of course, if you’re completely opposed to lavender you can simply omit it, but I urge you to give it a try, it’s the perfect pairing with the blackberries. Trust me.

Lastly? If you wanted to just make this + a movie your Friday night, I would totally get that.

Sometimes summer nights should be all about hanging with friends, fireworks (have you guys been watching my instagram stories?), and staying up all night (ahhhh…..I actually don’t think I’ve ever done that), but sometimes a good night-in is just what we all need!

My suggestion?

Make…

…these Thai Coconut Mussels…honestly one of my favorite recipes of the summer.

…sip on this cocktail…or wine, but this is one of my goto’s (although I have a new one coming tomorrow)

…bake up this clafoutis…eat warm, maybe even with ice cream. I mean, I would…just sayin’,

And that right there is my perfect Friday night…then again I am semi-lame and act like a 60 year-old trapped in a 23 year-old’s body. But whatever, I’m OK with it.

Blackberry Lavender White Chocolate Clafoutis

  • 1. Preheat the oven to 350 degrees F. Grease an 10 inch baking dish with softened butter.
    2. In a blender or food processor, combine the sugar and lavender and pulse until ground. Remove half of the lavender sugar and set aside. To the blender, add the milk, eggs, vanilla, salt and flour. Blend until completely smooth. Pour the batter into the prepared baking dish. Sprinkle over the blackberries and white chocolate. Sprinkle the remaining lavender sugar evenly over top.
    3. Bake in the center of the oven for 30 minutes or until golden and puffed on the edges. The clafoutis will sink as it cools. Dust with powdered sugar and serve warm.
