Fresh blackberries smashed together with mint, lime, and vodka, and then topped off with ginger beer and bubbly champagne. This makes for a simple and quick spring or summer cocktail. Perfect for Mother’s Day brunch, Father’s Day picnics, and just about everything in between. The bubbly champagne seals the deal and keeps everyone coming back for seconds.

Happy Saturday! These cocktail posts are my favorite…but you know? After sharing a drink post every Saturday for the past two months, I’m starting to wonder if I’ll run out of new cocktail ideas. I worry for about a minute…and then I realize I have a list a mile long of summer, fall, winter, and spring drinks to share. So nope, don’t worry guys, I can keep the cocktails coming as long as you keep asking for them!

Today’s drink is fun, to say the least. It’s a classic Moscow Mule, but with the addition of bubbly champagne. Which may seem over the top, but trust me, it’s over the top in the very best way.

And with Mother’s Day tomorrow, this springy/summery drink felt very appropriate. And, to be honest, I was inspired by the “on their way out” blackberries in my fridge, the fresh herbs I’ve been hoarding, and that lonely bottle of champagne leftover from Christmas…

The details on this Blackberry Champagne Mule…

This is such a simple drink. First, gather your ingredients. Blackberries, fresh mint (I used the petite mint lemon that I’m currently obsessed with), limes, a little bit of vodka, ginger beer, and of course, champagne (sparkling wine works too).

Find yourself a cocktail shaker or even just a mason jar. Muddle together the blackberries, mint leaves, and fresh lime juice until those berries are all smashed down. Muddling the blackberries with the mint infuses the mint flavor into the drink creating that classic minty Moscow Mule flavor.

Now, add the vodka, and then shake, shake, shake.

At this point, strain the drink into your glass and top off with ginger beer, then champagne.

Very SIMPLE, but also the prettiest, so refreshing, and just oh so very good.

Swaps and substitutes…

If you don’t have blackberries, but do have blueberries, raspberries, or strawberries, either of these berries will be great. They’re all going to taste delicious. So use what you have or what you love most. Oh, and I’m sure fresh cherries would be delicious too!

No fresh berries? Use frozen, but let them thaw a bit so that you can easily muddle them down. Tip? Top the drink with additional frozen berries, they will help to chill your drink.

I like to think of this as a Moscow Mule with an updated twist. The champagne, while not needed adds that extra special touch. No champagne, but you do have sparkling rosé? Use that…it could be even better.

I know not everyone will be able to spend Mother’s Day with their mom tomorrow, but I hope this fun (and easy) drink brings a little happiness to your weekend! It’s sweet, berry-filled, a touch minty, heavy on the lime, swirled with vodka, gingery, and topped off with a good amount of the very good stuff…bubbly champagne.

It’s that can’t beat spring and summer drink.

I recommend cocktail mixing, because you need to “test” this cocktail out before Sunday. Follow up with some pan-fried Brie, then chill in the yard, on the fire escape, by the window, wherever, and enjoy a little weekend excitement.

  1. I want to double (or maybe even triple) your batch cocktail for a party… To simplify, do you think I could just pour the champagne and ginger beer into my drink dispenser right before the party? Rather than individually pouring out ginger beer and champagne to each glass?
