Hey, hi, and happiest Monday!

Hope you all had a great weekend! Did you watch the Super Bowl last night? Did you hopefully make plenty of food and enjoy a low key Sunday? That is my hope! Over here we’ve been having some bitter cold weather, with snowy, blustery days. Perfect for staying inside, roasting up a chicken dinner, and doing plenty of weekend baking.

Which leads me to today’s recipe. I actually made this over the weekend. I found myself needing something easy to make on Saturday night. It was FREEZING, with blowing snow, so I wanted something comforting. I almost turned to pasta. But then for some reason, I was really feeling a dinner with more of a Greek twist to it.

It’s been a while since we’ve talked about a good Greek dinner, so I pulled out this recipe. It’s such a favorite, so easy, and I wanted something different.

potatoes before cooking

The Idea.

I’ve been cooking up so much Thai and Italian recipes lately that I felt like I needed to break out of that pattern a bit.

I thought about what I hadn’t created in a while and Greek was at the top.

Since I wanted to keep things easy, I decided sheet pan chicken and potatoes, but all done up with my favorite spices, herbs, and sauces.

chicken before cooking

The quick and easy details.

The beauty of a sheet pan dinner is that typically, they’re pretty darn easy to throw together. It’s why we love them so much! But what is truly special about this specific sheet pan dinner? Well, cooking everything together on one pan actually allows for more flavor to really penetrate everything from the chicken, to the potatoes.

The first thing I like to do is do a quick marinade on the chicken. I toss it with a little balsamic vinegar, oregano, paprika, shallots, and garlic. I then add lots of olive oil and chili flakes and let everything sit for a bit at room temp.

While the chicken sits. I start roasting the potatoes since they take longer to cook than the chicken.

feta cheese and sun-dried tomatoes

Once the chicken mix has rested for 15-20 minutes or so, add it to the sheet pan with the potatoes. Then add a couple of red bell peppers and onions. It’s important to slice the peppers on the thicker side so that they can cook for the same amount of time as the chicken and potatoes. For the onions, it’s the opposite, I like to cut those pretty thinly so they can caramelize while cooking.

Throw everything back into the oven to finish roasting.

And while that’s all cooking away…and making your kitchen smell incredible…mix up two things. First, I like to toss cubed feta cheese with sun-dried tomatoes and olives. The oil from the sun-dried tomatoes “marinates” the feta. It’s so delicious, you can’t skip this step!

I also do a little garlic yogurt. I love smearing this on the chicken for some creaminess, which is always nice on a sheet pan chicken.

When everything is done, layer it all together and top it with a good handful of fresh herbs.

The funny thing is that when I was working on this recipe, I wasn’t even trying to make it a one pan and done kind of dinner. It just made sense to roast the chicken and potatoes together so that the potatoes could cook-up in the oils from the chicken…making them just that much more delicious.

Simple, easy, healthy, and really just pretty darn delicious

Love the idea of this sheet pan dinner as a Monday night dinner. But honestly, it’s great any night of the week.

Ingredients

  • 4 tablespoons extra virgin olive oil
  • 1 1/2 pounds boneless chicken breasts or small thighs
  • 2 lemons, 1 zested and juiced, 1 halved
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon chopped fresh oregano (or 2 teaspoons dried)
  • 1 tablespoon smoked paprika
  • 1 shallot, finely chopped
  • 5 cloves garlic, finely chopped or grated
  • 1 large pinch each kosher salt and black pepper
  • 1 large pinch red pepper flakes
  • 1 pound russet or baby potatoes, cut into 1 inch chunks
  • 2 red bell peppers, sliced
  • 1 medium yellow onion, sliced
  • 1/2 cup oil packed sun-dried tomatoes
  • 1/3 cup kalamata olives, pitted
  • 3 tablespoons toasted pine nuts (optional)
  • 8 ounces cubed feta cheese
  • 1/2 cup plain Greek yogurt
  • mixed fresh herbs, for serving

Instructions

  • 1. Preheat oven to 425° F. In a medium bowl, combine 2 tablespoons olive oil, the chicken, lemon zest, lemon juice, balsamic vinegar, oregano, paprika, shallot, 4 cloves garlic, and a large pinch of each salt, pepper, and red pepper flakes. Toss well to combine. Let sit 15-20 minutes.
    2. On a rimmed baking sheet, toss the potatoes with 2 tablespoons olive oil. Season with salt and black pepper. Add the lemon halves. Roast for 20 minutes, or until tender.
    3. Remove the potatoes from the oven and nestle the chicken around the potatoes. Arrange the bell peppers and onions around the chicken, arranging everything in an even layer. Drizzle over 1 tablespoon olive oil, season with salt and pepper. Return the pan to the oven and roast for 20-25 minutes more, until the chicken is cooked through.
    4. Meanwhile, combine the sun-dried tomatoes and their oil, the olives, pine nuts, and feta in a bowl. In a separate bowl, combine the yogurt, 1 clove garlic, and a pinch of salt.
    5. To serve, divide the chicken, potatoes, peppers, and onions between plates. Spoon the feta mix and yogurt over the chicken. Top with a handful of fresh herbs. Eat and enjoy!

Made this tonight and it was so good! So flavourful and easy. I was using up things in the fridge so mixed some aioli dip and yogurt rather than just yogurt and garlic (also, I’m lazy!!). This is definitely one I’ll make again.

      1. Tieghan I did make this on Saturday for a group of widows that I love to bless with a meal once a month and game night! They loved it and they said it felt like they were at a find dining restaurant! It was so flavorful and I loved how easy it was so that I could spend time with my guests and not in the kitchen. Will be part of my rotation for sure. Cathy

This is one of the best sheet pan meals I’ve ever had. It’s in my regular rotation at this point. Anything with a tbs of smoked paprika is a win for me, but this is above and beyond, not to mention super easy. I don’t change anything (rare for me!), although I sometimes use crumbled feta when it’s all I have and it’s still great. Your recipes always turn out to be delicious. Thank you for sharing this with us!

    1. Hey Andrea,
Awesome!! I am so glad this recipe was enjoyed, thanks so much for making it! xTieghan

    1. Hey Jenny,
Thanks a bunch for making this recipe, I am so glad it was enjoyed! I would use tofu. xxTieghan

I was disappointed with this recipe. It took me nearly twice as long to make as the recipe suggests; prep alone took close to an hour. I had to split the chicken and veggies between two separate trays since there was far too much food for one tray, so the veggies weren’t cooking and the chicken was just steaming from sitting on top of the veggies. The potatoes were strangely dry, and the dish had little flavor without the kalamata olive/feta mixture. Would not recommend or make again.

  23. When I was making this dish, I tried just the chicken to see if it was cooked and honestly I wasn’t a fan (I never liked balsamic vinegar). BUT!!!! When you eat the chicken combined with the other ingredients in this dish, WOW! The flavors were amazing. I really like how all of your dishes are full of flavor.

    1. Hey there,

Tieghan – this was so delicious! It will be on repeat on our house. I served it with warm pita bread and I used tzatziki sauce from Costco as a time-saver. Thanks for always having such great recipes that are fun to make and delicious to serve my family! You have a gift and thanks for sharing!

I made this a couple of weeks ago and was blown away by the flavors. I followed the instructions for the most part, but I marinated the chicken for about an hour and didn’t have sundried tomatoes which bummed me out. Tonight I’m making it again and will be going HAM with the sundrieds. This meal was a definite hit in my house and wonderful for leftovers. I cut my potatoes pretty large so I made sure to roast them longer, and I cut (in half) and tenderized my chicken breasts before marinating to cut down on cook time. I think I’ll do this again as it came out really nice. Thanks for such a wonderful dinner staple, I’ve already shared the recipe with many friends/family.

    1. Hey Lyndsay,
I am thrilled this recipe was enjoyed, thanks a lot for making it! Happy Sunday! xTieghan

This was a hit! My thinly sliced onions didn’t carmelize and the potatoes didn’t crisp up but the flavors were excellent. We threw some of everything into a Greek pita and it was awesome! Thanks!

    1. Hey Kate,
I am thrilled this recipe was enjoyed, thanks a lot for making it! Happy Sunday! xTieghan

  27. Excited to try this! Can you tell me please what exactly are the “ fresh herbs” you add at the end? And, can I use low fat or fat free feta? Thank you!

    1. Hey Rita,
Any fresh herbs you love will work here, I used dill and parsley, yes fat free feta is great to use. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This is absolutely delicious.! I have made it 3 times now. I found that I didn’t need to roast the potatoes as long as the recipe calls for (maybe mine were smaller pieces). I used well trimmed boneless chicken thighs which came out moist and tender. Some my family does not care for olives so I skipped those. The feta tossed with the sun dried tomatoes and some of the oil from the jar is delicious and a step that shouldn’t be skipped. This will become a regular for us!

    1. Hey Jill,
Thanks so much for making this recipe, it makes me so happy that it was enjoyed. Happy Friday! xTieghan

This was absolutely delicious! I had my front door open while I was cooking and my neighbor came over with a bottle of wine asking to be invited to dinner because “something smells really, really good.” He joined us and offered to buy all the ingredients if I’d make it again next week.

    1. Hey Stephanie,
Thanks so much for making this recipe, I am so glad it was enjoyed! Have great week:) xTieghan

I made this last night, great flavor and the chicken was nice and moist. Don’t leave out the yogurt it really adds to the recipe.

    1. Hey Sharron,
Thanks a lot for giving the recipe a try, I am delighted that the recipe was enjoyed! Happy Sunday! xTieghan

Easy and tasty! I tossed fresh arugula on finished chicken in lieu of no fresh herbs and served with warmed pita. Everyone agreed it was another winner from your site! Thanks for the inspirations!

This was so good and totally exceeded my expectations! I didn’t have any feta, which I’m sure would have made it even better! Definitely not your average sheet pan meal.

  33. 5 stars
We loved, loved, loved this recipe!! Going in my favorites file! My 17 yo son said it smelled like a restaurant and he gobbled it up, too!

  34. This is not a Greek souvlaki..even the igredients are not right..Mat be a pan sheet chickwn with feta cheese and olives or find another name of dish but for sure not a Souvlaki.

  35. 5 stars
Fabulous recipe, made it last week to rave reviews, Making it again tonight for a different group and am substituting green beans instead of the red peppers ( due to a allergy) I hope that it will be equally as good roasted along side the chicken and potatoes.

    fingers crossed.

I just made this for the 2nd time last night and I’m struggling with the cook time. I followed everything exactly, but the chicken is producing too much liquid, so nothing browns. I kept cooking it the first time I made it and finally got there, but I think it went for another hour after adding the chicken. Last night I had company and used a full size sheet pan, followed exact again and ended up having to bump the heat up to 450 and in the end I used connect to brown the veggies and absorb all the liquid, but then my chicken was dry. I absolutely LOVE the flavors and want to figure out how to get this right! HELP!! Thank for all of you INCREDIBLE recipes, they are all works of art!!!

Made tonight – fir my Greek family! Added fresh bread – of course- and Greek salad. So easy and everyone loved the marinade. Another win from you!

This was soooo yummy! My husband said he found it “over-spiced”, and he couldn’t put his finger on what spice he meant. I loved it though! It also was easy to put together and cooked so nicely.

  40. 5 stars
this was insaneeely good! i parboiled my potatoes for 8 mins prior then followed the recipe, used bone-in skinless thighs and cooked for 28 mins. i made the feta with just sundried tomatoes and everything combined was amazing!!! cant wait to make again 🙂

  41. 5 stars
So delicious! Thank you–this was the perfect meal to make at the end of a stressful day during a busy week. I was going to take a picture–it is so lovely and colorful–but my son and husband dove in and devoured it before I could! Keep those delicious, easy weeknight meals coming. I hope you have another cookbook out soon–I love the two I have so much!

  42. Thank you Tieghan for responding to me below regarding the tomato paste substitution. I was able to get some sun-dried tomatoes and made this tonight and it was so good. Your recipes are always outstanding and I have made several of them.

  43. I just saved this recipe and I am making it tomorrow for dinner. When you say fresh herbs for garnish what exactly did you use? Thank you!

    1. Hey Tanis,
I use dill and basil, but any fresh herbs that you enjoy will be great! I hope you love the recipe, please let me know if you have any other questions! xTieghan

We loved this dish. It had lots of flavor and my husband said it was in the top #5 new recipes I have made in the past year.

  45. 4 stars
Nice flavor. Prep time is far more that stated. Takes 20 minutes just to grab all the ingredients haha. Next time I’d add less potatoes and more chicken. We also added tzatziki sauce which really helped to add depth to the flavor. The yogurt recipe above is pretty basic and bland so didn’t add enough flavor for us. The whole dish tasted even better day 2.

  46. I am making this tomorrow night. If I don’t have sun-dried tomatoes, do you think tomato paste would work?

    1. Hey Natalie,
So sorry unfortunately I don’t think tomato paste will give the same results. The oil from the sun-dried tomatoes really marinates the feta. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    HI,
I just wanted to let you know I made this for my family last night- It was absolutely delicious! I didn’t add the red pepper – that was the only change I made ( some of my kids don’t like things too spicy) My daughter studying remote from college said it was her favorite dinner! Thank you so much for a great recipe! Love your website!

  48. I’m late to the game, but this looks amazing. It is my Saturday night meal and I can’t wait to make it. (every.single.recipe of yours is met with enthusiasm at my house!) Do you prefer (suggest) chicken thighs or breasts for this? Thank you!

    1. Hey Talia,
I really think it is personal preference, both turn out great! I hope you love the recipe, please let me know if you have any other questions! xTieghan

I made this tonight and did not deviate from the ingredients. It was fantastic! This will be on my dinner rotation for sure. It would be great to serve if having company (post COVID) someday as well since not only does it taste great – but it looks great too. Thanks so much!!

We made this last night for Valentine’s Day after work- it was SO GOOD. That chicken marinade is a winner. And the onions and feta mix and yogurt? Perfection

  53. 5 stars
Made this last night (could not wait for Monday!) it was SO DELICIOUS!!! My picky crowd all loved. I used thighs and they were not dry at all, and the lemon gave a great flavor to everything. I did add a little grated cucumber to the yogurt mix, giving it a little tzatziki flavor. Thank you, Tieghan for another tasty, creative dinner! xo

  54. This looks delicious, I am making it tonight! I have balsamic vinegar glaze on hand, is that fine to use instead of plain balsamic vinegar? Thanks!

    1. Hey Megan,
Yes, that will work just fine. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This recipe is amazing! Made it for friends- easy and delicious. The feta, olive and sundried tomato salad is next level. The Greek yogurt topping is so simple but adds so much flavor. Will make this again soon

  56. 5 stars
This is the first recipe I’ve made from your blog and it was a HUGE HIT with my husband and three teenaged kids. I wish I’d made two sheet pans of it! Thanks for a great, flavorful, easy weeknight dinner!

  57. 5 stars
I made this a few nights ago and it was fantastic, just delicious and a party of flavors. Reading the comments was super helpful, so I knew to halve the very large chicken breasts I buy, so they were cooked through in about 25 minutes. I only wish I was faster at the prep, as it took me over an hour just to prep the marinade, but marinating the chicken for about 5 hours made it really delicious.

    1. Hey Carolyn,
Thanks so much for giving the recipe a try, I am so glad it was enjoyed! Have a great week:) xTieghan

  58. This was soooo good! And the leftover feta/olive/tomato mix broiled on some toast, with leftover garlic yogurt the next day? Perfect👌

    1. Hey Chelsea,
Thanks so much for giving the recipe a try, I am so glad it was enjoyed! Have a great week:) xTieghan

Super amazing and flavorful! I ate it with some naan I had and its so delicious. I skipped the olives because I dont like them but I dont think it needs them. The pine nuts really add such a nice accent on top of the meal. This is definitely going to be made frequently in my home.

    1. Hey Meagan,

I made this for our family a couple of nights ago and we mostly loved it. It wasn’t difficult at all, wasn’t too time consuming, and I love the idea of spreading all that yummy goodness on a baking sheet to cook together.

There are two things that could have gone better for us, and I think I’ll try again. 1) We must have used lemons that are much bigger than yours because it was way too lemon-ey. I like lemon but it was too sour. I think that next time if all we have are big ones, I’ll just use one. That would be plenty.

Also, I shouldn’t have left the finishing off of the dish to my husband (I had a Zoom meeting and the timing was just too tight). I had hoped it would look nice and browned on top like yours, but it definitely DIDN’T look like that, even though everything was cooked completely. I think next time I’ll maybe finish it off with a couple of minutes under the broiler. I think that would have raised the yum factor from very good to amazing.

Thanks for all your great recipes. We’re definitely enjoying them!

    1. Hey Victoria,

This was an absolute winner, will probably become a staple. I used pumpkin instead of potatoes, red onion instead of shallot for the marinade, and 1 lemon + 1 orange instead of 2 lemons (had to play with what was available). Chicken breasts were the choice. It was amaaaaazing, one of the best things I tasted in life! Thank you so much! *

    1. Hey Joana,
Thanks so much for giving the recipe a try, I am thrilled that it was enjoyed! Happy Valentine’s Day❤️ xTieghan

  65. We made it and loved it! Was the perfect cold weather, snowy pre-Valentines day date night at home in Chicago. Greece was a favorite vacation and this dish brought me right back!

Love all you do and giving us Inspo for trying new ideas for dinner. Thank you!! 💕

    1. Hey Gwynne,

Just made this! Just a note- after I made the dressing/ marinade in step one, I didn’t see where to put it on again! From the picture I thought to add it before I put the chicken in the oven. Hopefully that was right! My chicken also came out kind of tough. Not sure why.. maybe needed to be in longer ?!

    1. Hey Tara,
Thanks so much for giving the recipe a try, I am thrilled that it was enjoyed! Happy Valentine’s Day❤️ xTieghan

  68. This dish was AMAZING. I have to say, I have been making pretty much just your recipes for the last few weeks. (I am newly married and am trying not to make my husband run away from my terrible cooking LOL) and every. single. thing. I have made has turned out so good. Thank you for your delicious and well written recipes, they are helping me to become a better cook and enjoy cooking more!

    1. Hey Meagan,
I am so glad that you enjoyed the recipe, thanks so much for making it! Have a great weekend:) xTieghan

I threw this together on the fly with what I had on hand. It was a knockout even without following the recipe 100% The chicken was so flavorful. I tossed the marinade with the vegetables, and in error mixed the sundried tomatoes, garlic and feta with the yogurt. Didn’t matter, it was a delicious topping. Super easy, one pan weeknight dinner!

  71. 5 stars
So delicious! I have been in a green food kick for the past few weeks and this turned out amazing and it was so easy!

  72. 5 stars
This was FABULOUS. I happened to have the ingredients and this was the perfect recipe to use then up. So easy to put together; I made dinner in the commercial breaks while watching our show. Left overs for lunch cold tossed with a salad tomorrow! Thank you so much for sharing this recipe.

Delicious ! This recipe was easy to make and extremely flavorful. I doubled it for my family and I am happy I did, because they went back for seconds. It is marked as a delicious favorite.

Made this tonight. It was SO delicious, and the flavors were incredible! Saving this one to my recipe box. Thanks Tieghan for the dinner inspiration!

I made this on a weeknight for my 9 yo and 13 yo daughter. I made it with Chicken thighs. .It was so delicious and easy! There were no leftovers! Thank you …

Made this last night for dinner……….We all LOVED it !!! Will make this wonderful recipe again !!!
Thanks for all your amazing hard work !!!

Love this recipe….but after I added the chicken etc and cooked for awhile it got very watery. The potatoes and nothing got crispy. Had to empty water and broil. Any suggestions or is that normal? We are huge fans from Cleveland!

    1. Hey there,
So sorry about this, was there anything you may have adjusted? I am not sure where the water would have come from? What kind of baking sheet did you use? xTieghan

  78. 5 stars
All the flavors compliment each other so beautifully! Salty, sweet and addictive! This dish is so simple to make and hardly any prep. Tons of compliments on this dish and everyone went back for seconds! That marinade is fire!

I made this for dinner tonight. I loved it. Even better, there is some left for lunch tomorrow. Mine didn’t look quite as beautiful as yours, but I’m working on it! Presentation is important. These inspiring recipes of yours give me a focus and help me prepare beautiful, nutritious meals. I never really had a pantry before the pandemic. I just ran out for something that sounded appealing … or snacked. So thank you!

  80. 5 stars
Tastes wonderful and if you prep ahead of time, it’d be very quick. I think the feta mix could be cut in half; we’ll be using it in wraps with falafel tomorrow, so I’m very happy with leftovers. I cut my olives into slices and used scissors to cut my sun-dried tomatoes into strips. I used store-bought tzatziki I had on hand, so I did not make the yogurt sauce. I used sweet potatoes as that’s what I had on hand. I cubed mine for faster cooking. Highly recommend this recipe.

  81. 5 stars
I was looking for a Greek inspired chicken recipe so the timing of this post was PERFECT! The chicken was juicy and flavorful, the potatoes were crispy on the outside and soft inside…will keep this bookmarked!

  82. 5 stars
I wish I could give this 100 stars!!! I loved this recipe for the complexity of flavors and textures. By far my favorite sheet pan recipe. Thank you for outdoing yourself.

  83. 5 stars
I’m all about sheet-pan dinners lately and this one is stellar. So much flavour and so easy. The toppings really put it over the top. This is my first time making one of your recipes and I’m sold!

  84. 5 stars
Such a good one. The flavors come together so well and I love the one pan recipes for evenings I get home later. Thanks for all the amazing recipes. I make them almost daily.

  85. Just made this for dinner and it did not disappoint! For the marinade, I skipped shallots, since I sadly did not have them on hand, and opted for fresh marjoram over oregano, since that’s what’s growing in my indoor herb garden. I didn’t have any sun-dried tomatoes in oil, so I just chopped up some that I had in the pantry and tossed in feta with a sun-dried tomato pesto I recently found at Costco! Delicious. I also didn’t have yogurt, but I did have sour cream. I opted to do a tahini-sour cream sauce for this dish! Needless to say, I can’t wait for the leftovers tomorrow. Will they make it to dinner, or be our lunch? We’ll have to wait and see 😉 Love the simplicity of a sheet pan recipe and the fresh, but savory mediterranean flavors. Would love to see more of both of those things together!

    1. Hey Teri,
The olives are used in step 4. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  86. Hi Tieghan! Love the sound of this recipe and I can’t wait to try it. I think I have most of these ingredients on hand, too. I wanted to ask if it would be ok to sub the fresh herbs to dried, and if I don’t have Greek yogurt but have sour cream if I could try that?

    1. Hey Kimberly,
Yes, dried herbs would work just fine and same with the sour cream. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Lisa,
Yes, salmon would work well here. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  87. Hey this recipe looks amazing! And love all your recipes that i can make, but i dont mix milk and meat would you still recomend it with out the cheese? Coz looks like good flavour combos aw

    1. Hey Hanah,
This would be totally fine to make without the cheese. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This was a delicious chicken dish. Easy to prepare, this meal has interesting new flavors. I will definitely make this again. I didn’t have red peppers and I used mushrooms instead. The marinade for the chicken was so flavorful I scooped it on top of the chicken before cooking the chicken. I served this dish with a side of spinach cooked in a little olive oil, garlic and Costco bacon bits.

  89. 5 stars
As always…AMAZING! Only thing I would do is leave out the sun dried tomatoes. The flavors were so strong the tomatoes competed a little too much. But otherwise – DELICIOUS!!

  90. I originally slid into your DM’s on Instagram, but I realized that you probably have them turned off because of crazies like me.. so, I’ve copied and pasted my message here…

    K. Not sure if you actually read your DM’s but, gurl….. where have you been all my life??!?!

I have made 3 of your recipes so far and my family thinks I’m a rock god superstar.
I had to humble myself and say that I got them from you, but regardless, you are the best! Just had to message you – and now I realize, you’ll probably never see this. I’m going to try and find an email address so I can harass you that way. ❤️

    1. Hey Eva,
Thanks so much for your kind message and reading along! I am so glad you have been enjoying the recipes, thanks for making them!! xTieghan

  91. Hi,
As I print out ANOTHER delicious recipe from your website, I’m remembering that sometimes I come across those printed treasures much later. Nowhere on the printed copy, does it say that it’s your recipe. If I were you, I’d add “Half Baked Harvest” to the top of every printed page! And again at the bottom of the recipe, plus the web address for your site.

Thanks for continuing to provide culinary inspiration!

  92. Hi there!,

I have bone in chicken breasts and thighs, how would you adjust the cooking time if you wanted to use this? I have made so many of your recipes and all of them are delicious! Your Greek chicken meatballs and one pan chicken with orzo are top of the list!
    Thanks,

    Marybeth

    1. Hey Marybeth,
Depending on the size of your chicken, I would add an extra 5-10 minutes or until your chicken reaches an internal temp of 160 degrees. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Leslie,
I would use a dairy free yogurt. I hope you love the recipe, please let me know if you have any other questions! xTieghan

I absolutely loved this dish, as did my husband. I substituted the potatoes for large cubed pieces of zucchini and eggplant. I recommended this to my friends and will definitely be making it again!!

  94. Made this .Delicious. I only have dried herbs, so I followed your suggestion to another commenter to use 1 teasspoon to tablespoon fresh herb. i miss the city and Greektown(Chicago) so much since I moved to a rural area. This brings back good memeories/ Thank you so much.

Hi Tieghan! I have made many of your recipes and we have LOVED each and every one of them! Thank you so much for sharing your talents with us to be able to enjoy. I made this particular dish last night and OMG! SUPER YUUMMMMM!!! I also made your homemade tzatziki to go with it and my 8 year old couldn’t get enough of it all. I served with some naan as well. My husband quickly ran to the kitchen after dinner to put away the leftovers for his lunch the next day…he wanted to ensure he would get some and I wouldn’t keep it all for myself 🙂 I can’t wait to make this again soon! The hard part is that I have so much fun trying your different recipes that I forget to come back and remake some :). Merry Christmas!

    1. Hi Tina! I am so happy this recipe turned out so amazing for you! Thank you so much for trying this one! Merry Christmas! xTieghan

This would have been amazing if I didn’t screw it up! I hate smoked paprika, which is all I had, so I switched it out for hot Hungarian paprika and used 2/3 tablespoon thinking the spicy level would be okay. I was very wrong. Our mouths and stomachs were on fire! I did have to take the chicken out at 45 min and let the potatoes cook 5-10 min longer. I will be using this recipe again, without the ridiculously spicy paprika. But very flavorful overall with the lemon, oregano, and dill. I also loved the sun-dried tomato/feta/ olive tapenade for the chicken + tzatziki.

    1. Oh no!! I am sorry this was so spicy!! I hope this turns out better for you if you are able to try it with regular paprika! Please let me know if there is anything I can do to help! xTieghan

  97. So yummy! I didn’t have sundried tomatoes and substituted harissa which worked. Will make this again.

  98. 4 stars
Easy and so yum – will definitely make again. My husband loved it! Like some others I parboiled the potatoes and my chicken must have been a bit smaller as they were done halfway through so I took them out and put them back right at the end. Thanks for the recipe!

    1. Thank you so much Janie! I am so glad this recipe turned out so well for you and I hope you continue to enjoy other recipes! xTieghan

Delicious, and makes a perfect meal for serving at a dinner party. I used skinless, boneless chicken breasts and only needed 25 minutes to cook. Did not add the potatoes but served wild rice on the side with a green salad with chopped pear and avocado and a simple vinaigrette. Thanks so much for this recipe. Definitely going to make it again.

Made this tonight and was terrific!! Hubby and son enjoyed it along with a greek salad. Thanks Sweetie!!

While you say its a great Monday dinner, I just finished eating my Friday prepared dinner…it was AWESOME!! Haha! Seriously, I’m Greek and grew up on good Greek cooking. I also LOVE that lemon is used in my so many Greek dishes, but my husband is NOT a fan of lemon, so I was a bit nervous about this dinner. Well, let me tell you…he LOVED it! We each ate our portion and were full but HE said that he wished he wasn’t so full because he’d love to eat more because it tasted so good!! Now, THAT’s a victory!! Thank you…I may be late to this party and just learned about you, but you have revived my interest in cooking! Thank you for that!

    1. Wow that is so amazing!! I am so glad you both loved this recipe and I hope you love others on my blog as well! xTieghan

This was SO.GOOD. Made it last night along with some homemade soft, pillowy, pitas and it was a dinner bursting with so many dimensions and notes of flavor, I absolutely loved it! Even good cold from the fridge too! Yay for sheet pan recipes- one and done fantastic. So satisfying ? I didn’t even have dessert last night- Who am I?!?Thank you Tieghan- I adore everything you do!!❤️

Good recipe. Lots of layers of flavor. I took leftovers into school. I got yelled at by fellow teachers because it smelled so good. No, I did not share!

After reading other reviews, I decided to cube the chicken while the veggies cooked and toss it with the marinade, to have it cook for less time (following the guidance of the Meal Prep Chicken Shawarma recipe, which is an absolute gem) . I added the chicken in at the 20 minute mark. The result was very moist and delicious, but the potatoes took far longer than 40 minutes, potentially because of my very very juicy lemon slices? Who knows, but it was a little difficult since the other veggies and the chicken were done, but the potatoes needed more time. I couldn’t fit everything onto one sheet pan, which may also have contributed to the longer cooking time. Regardless, the meal was very tasty and well worth experimenting with again 🙂 Thank you, Tieghan!

i made this last night and it was delicious…super easy and full of flavor! i don’t tend to follow recipes, but recently i have been making yours and they have proven to be consistently amazing! thank you!

  107. Made this for dinner. I grilled everything since it is too hot now in CO to use the oven. Was very good, thank you!

Delicious! Thank you for another great recipe. Its was way to throw together and perfect for a cold rainy day in Cleveland ?

    1. I am so glad you liked this Kim! Thank you!! Also, I can totally picture that and this sounds amazing for one of those days!

    1. I am not sure of the cooking time, but I think skin on chicken legs will be great! I would guess that they need 15-20 minutes longer in the oven, but again I cannot say for sure a I have not cooked chicken legs with this recipe. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

Your recipes look so inviting…66 year old male here, getting ready to cook more…simple menus that are fresh and healthy…and trust me, I need healthy. I will keep you posted on how it comes out…thanks for your inspiration…!!!

Just made this and it turned out really well! Was a bit worried about how much liquid was present halfway through, but it really cooked off. Will definitely make again. Wish I had made more since there aren’t any leftovers. I really love it when recipes turn out based on the directions with almost no variation. Sometimes, with both online recipes and cookbooks, you follow the steps and it seems like something is missing. Will try more of your recipes for sure!

    1. Thank you John! I am so glad this turned out amazing for you and I hope you enjoy some other recipes on my blog!

  111. I adore your website, recipes, blog, gorgeous pictures…you have you have it all Tieghan, but please help me. I cannot seem to get my “prep time” down to even near 15 min. Do you have all the ingredients pre-cut/measured?

    1. HI! So I don’t use pre cut ingredients, but I am in the kitchen so much that I might just pre things on the fast side. So sorry it’s taking you longer than 15 minutes. Please let me know if you have other questions. Glad you love this recipe! Thanks! 🙂

  112. Your sheet pan recipes ROCK!!! I tried the Cuban citrus one the other week & now this last night. Was amazing! Will make again, Thank you. I served with a Pita bread cut in half and toasted. All kids loved!

P.s. Maybe a Korean inspired sheet pan recipe in the near future? Best of luck to your brother! Go Team U.S.A.!!!

Made this tonight and it was a huge hit. My foodie, grown son loved it and there were no leftovers. The house smelled amazing.

  114. Well, I understand your “artistic” name for this recipe…mixture of meat and vegetable…therefore your SOUVLAKI, but traditional Greek souvlaki should be prepared as skewer…and if referred as Greek souvlaki then it has to be on skewer…
But, recipe is intriguing and I’ll put it on my list for soon lunch or diner…

  115. I made this for dinner tonight and it rocked my socks. Served this with plum tomatoes and cucumbers and it was delicious! Thank you 🙂

    1. Sure that would be delicious! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

  116. This is so good! I made it twice this week, and it will definitely be going into our regular rotation!

  117. We loved this Sheet Pan Chicken Souvlaki! So easy and flavorful! My husband doesn’t like dill so I left it out. I cut my chicken breasts lengthwise so I cooked the potatoes, onions, and peppers for 20 minutes and then put the chicken on for the last 25 minutes. It was perfect, I would definitely make this again. I love all kinds of Mediterranean food! Thanks for the recipe!

  118. I made this and it was amazing! Question though- my chicken wasn’t getting as brown as yours. It even seems like yours has a lot of spices on top. Should I try doing a higher temp?

    1. HI Kathryn! You can higher the temp, but as long as the chicken taste delish, I wouldn’t worry about the color so much. You can also try positioning the oven rack in the upper 1/3 of the oven. Let me know if you have questions. So glad you enjoyed this recipe! 🙂

  119. I was wondering, do you cook the chicken slightly before you bake it, with all the other ingredients? Because the picture shows it that way, but I’m not reading that anywhere. I’m making it for dinner tonight!!!

    1. Hi Mary, nope, the chicken is not pre-cooked. Let me know if you have questions. Hope you love this recipe!

  120. Made this last night along with the Peach Shortcake. Both were a hit! My husband loved this dish and we’ll def make it again. I had lemon balsamic so I used that and it ramped up the lemon flavor. I tossed the feta/sundried tomato mixture right onto the finished dish before serving. Amazing!

Loved the shortcake, too, but tried to do it ahead and the honey seized. Redid it later and it was really, really good. I’m so glad I found your blog as I’m loving your recipes!

    1. Yay, so happy you both liked it!! Sounds so yummy!!
Thank you so much for trying the recipes!! SO happy you liked them both!

    1. Yes! You can marinate it for up to 1 day. Hope you love the recipe and let me know if you have other questions.

  121. Another winner though my husband didn’t like it as much as the first. My granddaughter is half Bulgarian and spends every other summer there and she said that it tasted like Bulgarian food (close neighbor to Greece) so the flavor is very authentic. I try and use what I have in my fridge/freezer for these meals. Luckily I had everything. I used drumsticks for the chicken though and cooked it about 10 minutes longer because the potatoes were still firm. Chicken was nice and moist. The tzatziki really set off the other flavors. Definitely a winner.

    1. How cool she thought it tasted like something from Bulgaria! As long as it was good than i’m happy (:
Love when you just so happen to have everything you need for a recipe, nothing better than that!
      Thank you Mary Jane!

  122. This turned out horribly overcooked. The chicken cooked for way too long while the potatos were barely done.

    1. Hi Albert, I am sorry for the trouble. With sheet pan dinners it is important that everything is cut into similar sizes so that they have similar cooking times. Was your chicken on the smaller side? Next time try cooking the potatoes longer before adding the chicken to the pan. Let me know if you have questions. Thanks! 🙂

      1. 4 stars
We really enjoyed this, although I had the same problem with the chicken being done long before the potatoes. I pulled the chicken out of the pan and kept it warm while the potatoes cooked longer. Next time I think I’ll parboil the potatoes for a bit before adding them to the pan. I did think there was a bit too much paprika, but that’s my own personal taste. We served it with tzatziki and warm pita, and everyone loved it. Can’t wait to eat the leftovers tonight!

  123. I made this for the first time last night- very tasty!.

But, I would make a few adjustments for next time.
    1. I used a yellow and orange pepper- for the sake of colour, I would use a red instead of one of those.
    2. I would cook the chicken breast for less time- very dry. Or I would try with boneless skinless chicken thighs.
    3. Definitely use a sheet of parchment on my rimmed baking sheet!
    Thanks~

    1. I am glad you liked it Melissa! I hope the adjustments make it even better next time around! Thank you ?

  124. This looks amazing! My boyfriend and I don’t eat meat though– would fish work? I’d love to make this for dinner tonight if possible. Thanks!!

    1. Hmm, I think fish could work great, but be sure to adjust the cooking time depending on the fish. Fish should require less time in the oven. Let me know if you have questions. Thanks! 🙂

  125. Just made this- Yumola!!! Skipped the potatoes for my low carb hubby- added more red peppers- we even ate the roasted lemon pieces. The whole dish is to die for and easy. Going to teach this one to my University son. Thanks again for another killer dish !

  126. Added this to my meal plan, and it was so good! I added some sweet potato chunks as well just because i had them, but this was super easy and perfect for a healthy dinner & meal prep for lunches. This one will be a repeat recipe for sure. Thanks for sharing your passion with us, i LOVE your blog and can’t wait for the cookbook, which i pre-ordered as soon as i heard it was coming.. 🙂

  127. I made this for dinner a few days ago and it was soooo good. I left out the dill (my husband doesn’t like it) and used duck fat instead of olive oil. This is definitely a keeper!

  128. This is delicious! I love sheet pan dinners and I’m making it for the second time tonight:) Thanks for the delicious recipes ?

  129. Made this today and it was absolutely delicious!
The chicken came out a touch dry do you have a recommendation to keep it from drying out next time?

    1. Was it a little overcooked? Sounds like maybe just cooking it 5 minutes less would help, or try covering the pan with foil if the chicken is not yet fully cooked. Let me know if you have other questions. so glad you enjoyed this! 🙂

  130. Love the flavors in this sheet pan dinner Tieghan! My husband’s going to love it too. Can’t wait to try!

  131. Your recipes are always so bright and fresh. I am enjoying making your recipes and reading your blog. Keep up the great work.
For this recipe are the chicken breasts with skin? I know you said boneless. I will be making this recipe for friends. It looks delicious

    1. Thank you so much, Robin! 🙂
I use skinless breast, but my thighs did have skin. Let me know if you have questions. Hope this recipe is a hit! 🙂

  132. Welp, I just had dinner and I’m hungry again after seeing this! The feta, potatoes, garlic sounds uh-mazing! My favorite thing about this recipe is that it’s all on ONE pan. Can you say easy peasy for cleanup?!

  133. I made this last night for dinner and it was fantastic and so easy. Thank you for sharing, this is a really excellent recipe!

  134. Made this last night! “Still dreaming about how delicious it was!!” The flavors were incredible. You MUST make the feta cheese, sun-dried tomato and kalamata olive “relish” for this recipe–you’ll be dreaming about this recipe too!

    So easy and good.

  135. Looks wonderful! I’m adding ingredients to my grocery list right now. Is the chicken bone in or boneless? Can’t wait to try it!

  136. This looks so delicious! It reminds me a Greek potato recipe that I grew up on. This would be a good addition!

  137. Oh my goodness this looks delicious and what a great combination of ingredients! Thanks!

  138. This looks delicious — I’m just wondering if you used bone in, skin on chicken breasts and thighs, or boneless/skinless? It’s probably obvious, but I’m missing it! Thank you!

  139. Hey Tieghan! I’ve never commented before but I just wanted to congratulate you on the cookbook. I literally read your blog every morning over breakfast, and seeing whatever new recipe is something I look forward to. Your recipes are amazing and your photography is gorgeous!

  140. looks delicious! do you think it would be possible to use dried herbs in the place of fresh? Aside from using less, would there be any other difficulties?

    1. Hi! Yes, dried herbs will work great! I’d use about 1 teaspoon dried. Let me know if you gave questions. Hope you love this recipe!

  141. This is so brilliant! I literally live and breathe souvlaki, and find this so clever – never would have thought of making a souvlaki in the oven like that!

  142. i have been LOVING the mediterranean flavors you’ve been bringing lately! first those shawarma meal prep bowls (we’ve had them an embarrassing amount of times in the last month!), then that artichoke shakshuka (omg so good) & now this bad boy!!! can’t wait to give it a try. thanks for always making my menu planning so easy =) xx

  143. This looks amazing, but it’s not souvlaki. Souvlaki is meat on a skewer. This kind of looks like psito, which is the greek name for roast.
Lovely recipe as always! Good luck with your cookbook Tieghan! xx

    1. Yianna,
Give us a break with that Not Souvlaki comment. You wont go to a local Greek restaurant and find it on a skewer. Time has taught us that it does not cook evenly. Still the same ingredients, just no health risk…..Lighten up….lol..lol..
