Balsamic Peach Spritz…the new Aperol spritz…similar, yet different, but most importantly, so delicious! Sweet peach jam, a splash of tart white balsamic vinegar, topped off with sparkling prosecco. This summery spritz is sweet, bubbly, and so refreshing. The perfect cocktail to cool off with while enjoying these extra warm summer nights.

How much are we all loving summer? My current state of mind is that I never want summer to end. Don’t get me wrong, autumn is my favorite season. And when it’s here I’m sure I’ll be excited…I know I will be because it’s HBH Super Simple release time!! But right now I don’t want summer to end. I LOVE these long days, these sunny days, these days of warmer temperatures, and most of all…I LOVE these days of awesome summertime food! The peaches, the tomatoes, and yeah, even the zucchini. Because I can dress it up and have fun with it (zucchini recipes coming soon).

That said, I’m also feeling like everyone is kind of checked out for the summer. Am I right? I feel like so many of us are out enjoying life… Traveling, hiking and picnicking, enjoying low key nights with friends and family, and trading inside nightly dinners for snacks, outdoor grilling, cocktails, and s’mores by the fire. Or maybe this is just what Instagram wants me to think…

Not sure, either way, it seems like everyone is just living that simple summer lifestyle, and I’m all about it. Which brings me to this cocktail.

Normally I like to share my cocktail recipes on Saturdays. Don’t worry, I will continue to do so. But right now I just feel like seven brand new blog posts a week is A LOT for the summertime. Maybe even too much to keep up with. Because really, are you reading all that content, or are you chilling in the backyard with a cocktail in hand? My hope is that you are chilling in the backyard, because that’s what summer is all about. So, instead of cocktail Saturday this week, it’s cocktail Tuesday. Summer is all about treating weekdays, like weekends, so a cocktail on a Tuesday just seems fitting.

I’m very into it.

In full disclosure, I cannot take credit for this recipe. It really comes from my cousin Abby, who says it’s her favorite cocktail.

She’s told me about it many times before. But I needed time to warm up to the idea of white balsamic vinegar in my drink. It sounds a little odd, but when you think about it, it’s not. And when you taste it…you’ll know it is right, it’s delicious.

Abby lives in Southern California where she has fancy balsamic vinegar and olive oils right at her fingertips. I’m not sure how exactly she thought to do this, but she simply combines a splash of peach-infused white balsamic vinegar with a tiny drip of basil infused olive oil and then tops it off with chilled prosecco. Yes, it’s different, but stick with me here because this spritz is so good.

Here’s the deal. I don’t easily have access to peach-infused white balsamic vinegar. So, I created my own version of Abby’s summer spritz and I found it to be rather delicious. And yes, she fully approves.

First, find yourself some good peach jam. Preferably from your local farm stand because they always have the BEST jams. Or make your own from this recipe.

Next, mix a touch of peach jam with a splash of white balsamic vinegar (available at most grocery stores – Whole Foods, Trader Joe’s, or via Amazon), and a little vodka too.

Next, shake everything up and shake well. Add some ice and shake, shake, shake some more. Get a good arm work out in.

OK, now find a pretty glass and strain that peachy, balsamic mix into the glass. Grab the bottle of chilled prosecco from the fridge and top off your cocktail. If you want to be super fancy like Abigail, add a drop of basil-infused extra virgin olive oil, then finish with fresh basil and peach slices.

And that’s it. It seems fancy, but it’s really just four simple ingredients. Three if you opt-out of the vodka, but five if you get all fancy with the basil oil. Regardless, it simple, and easy, and oh so refreshing.

Summer in a cocktail and perfect for any day of the week.

I’ve included both a single cocktail recipe and a recipe for party punch. Because sometimes we need a solo drink and other times we need to serve the fam.

Just be sure to always have good peach jam, white balsamic, and a chilled bottle of prosecco on hand to mix up this spritz at a moment’s notice. And yes, I do realize that this is so very different from the classic Aperol Spritz, but it still feels similar, and you know what, I think I like it more.
