Welcome to Sunday snacks…broccoli rabe edition!
If you follow me on instagram, than you know I am a big fan of Sunday appetizer/snacks…it’s kind of become my summer thing! Gotta love good snack food, especially when it’s covered in cheese and wrapped with bacon. Umm, yes and yum!
But first, happy Sunday!! Summer Sundays are so fun, I feel like they’re so much more relaxed and easy-going than a Sunday during the colder months. Is that just me?? I dunno, either way, I’m loving my summertime Sundays. I’ll do a little planning, and then try to get outside for a hike… my time in the sun. And today I’m even going to try to finally carve out some much need chill time with the family, and hear all about their Mexican adventures.

Alright, but let’s chat about this yummy as can be, Bacon Wrapped Parmesan Broccoli Rabe.
One of my favorite ways to prepare broccoli rabe is simply to roast it in the oven with salt, pepper, olive oil and a little parmesan cheese. It’s healthy and delish! Whether I’m entertaining or just feeling a little fancy, I love taking my roasted broccoli rabe to a whole new level and wrapping it in bacon! How could anything wrapped in bacon not be even better, you know?
This has quickly become my go-to appetizer this summer. It’s quick to prepare, and well… everyone loves a little bacon with their veggies! It’s great a side dish but equally yummy as an appetizer, especially when paired with my roasted garlic dip!
