When life gets busy, we make quesadillas!!

Ok well, I make quesadillas, busy or not. They are for sure one of my go-to meals when I do not feel like cooking, don’t have a lot of time, or if I have a bunch of foods that need to be used up in the fridge.

It’s kind of weird because back before I started the blog I used to make quesadillas for my family at least once a week. They were just a fast and easy meal that everyone liked… which is of course awesome when you are dealing with picky eaters! My brothers are all about the classic combo of spiced chicken, cheese and rice… yes! Is that weird, I dunno why, but I’ve always put rice inside my quesadillas. I’m not sure when I started doing this, but for as long as I can remember I have always added rice. I can’t make a quesadilla without rice.

I just can’t.

Soo that bring me to these applewood smoked mango pork quesadillas!! Not going to lie, all of my brothers except Brendan would probably omit the delicious mangos from their quesadillas. That’s their loss though, mango quesadillas (with rice and pork!) are where it’s at!

So here’s the deal. This recipe is made simple by using Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin. It adds major flavor and is cooked quickly on the stove before being added to the tortillas. Then all you need to do is add some sharp shredded cheddar cheese, diced mango, a little rice, and then um, more cheese. 🙂

Next add everything to a skillet with a little olive oil and… dinner = DONE.

OH wait! Almost forgot about that salsa. I made a quick tomato salsa with the cherry tomatoes I’ve been getting from the farm stand. I am going to be SO sad when the snow hits and the farm stand is no more. Like summer, can’t you just last a little longer, please!?!

Anyway, fresh tomato salsa is the best, just sayin,

Applewood Bacon Smoked Pork and Mango Quesadilla.

Ingredients

Cherry Tomato Salsa

Instructions

  • Heat a large skillet over medium heat and add the olive oil. Add the pork and season with chipotle chili pepper and paprika. Cook, stirring often until the pork is browned all over, about 8 minutes. Remove from the heat. Remove the pork to a plate.
  • Using the same skillet, over medium heat, add a bit of olive oil. Place 4 tortillas down on a clean counter, sprinkle each with shredded cheddar cheese, then evenly distribute the rice, and top with the chopped mango pieces. Now add the pork, cut into small bite size pieces. Sprinkle with a little more of the cheese. Place the tortilla onto the hot griddle or skillet and cover with the other tortilla. Cook until the bottom is crispy and golden brown, then gently flip and cook for another 2-3 minutes until crispy and golden.
  • Serve with the tomato salsa and sliced avocado.

Tomato Salsa

  • Combine all ingredients in a bowl and gently toss. Taste and season with salt if needed.
