  • One Pot Creamy Cauliflower Mac and Cheese. This. Is. So. Good. Healthy…ish. And easy too. Kind of like the stove-top Mac and cheese we ate as kids, but so much better. It's extra creamy, saucy, a little garlicky, there is plenty of cauliflower hidden throughout, and it’s all made entirely in one pot. As close to perfect as it gets.   • Earl Grey Lemon Ricotta Pancakes. The Sunday (snow day) pancake...that is good at any point throughout the day. On a large baking sheet combine: 
1 pound baby potatoes, halved if large
1/4 cup extra virgin olive oil
kosher salt and black pepper

Roast at 425 for 20 minutes, or until tender. Then add 4 salmon fillets and season with  1 tbs honey, 2 tsp smoked paprika, 2 tsp cumin 4 cloves garlic, juice of 1-2 lemons, + 
1 pinch red pepper flakes. Return pan to oven and roast for 10 to 20 minutes more.

For the goddess sauce:
1 avocado, halved
1/4 cup plain greek yogurt
1 cup fresh cilantro
1/2 cup fresh basil, plus more for serving
1 jalapeño, halved and seeded
juice from 1 lemon
1 teaspoon cumin

Blend everything together. Season with salt. 
Spread the sauce onto plates. Add brown rice, potatoes, salmon, and feta. Enjoy!
