Heyy! Happy mid-week!!
So I have been sitting here for the past 30 minutes just kind of brainstorming about what I should chat with you guys about today and so far I got, nottah.
Other than the fact that I received this crazy mean email. Plus a few other not so awesome and or unfriendly things have happened recently and it’s totally got me wondering how people can be so mean sometimes. I mean, like high school is over. Let’s just be grown ups and keep our mouth shut if we’ve got nothing nice to say, you know? No one is forcing anyone to do anything here.
Whatever. That’s life, it can be a tad cruel at times, but it’s mostly awesome, so I am going to try to stop stressing about the email.
And since, my life is on the boring side today and I have nothing to ramble on about, let me tell you about this fast and easy chicken and grilled pineapple stir fry.
I love a good stir fry, but I especially love them in the summer. This is mostly because it’s what my dad used to make us in the summertime when I was a kid. Nights where pretty hot and humid living on the lake in Ohio, so oftentimes my dad would just throw a bunch of veggies in a skillet, add some chicken and soy sauce and call it a stir fry. Of course there would be rice and cashews for topping because that’s just how this family does it, but the point is, stir fry was always my favorite.
I really just liked the veggies doused in soy sauce. I’d eat all the red peppers and broccoli and the boys would eat the chicken. It worked out well.
When I began taking over family meals, our stir fry’s got a little more creative and the sauces a little more complex…which means I didn’t just douse everything in soy sauce…not that I have an issue with that because I kind of love salty food (it runs in the family), but I thought it might be nice, and a bit healthier, to get a bit more creative.
Today’s stir fry is sweet Thai peanut chili with a side of grilled pineapple.
It. Is. PERFECT. Like the best light, fast, simple and healthy weeknight, summertime meal.

Do I need to remove the chicken after this step?
