They are a cross between an apricot and a plum and I honestly cannot begin to describe how delicious...and pretty these plumcots are. Fully obsessed. I roasted them with a touch of maple and fresh thyme, then spooned them over pastry wrapped baked brie. It’s cheesy, flaky and the roasted plumcots give this easy appetizer the perfect sweet finish.   • Without a doubt this garlic butter creamed corn chicken is my go-to dinner right now. It's that time of year when I have more corn than I know what to do with. Anyone else?!? Couldn't love this skillet dinner more. video really say's it all.  If you haven't yet, you must make this before summers end. Recipe below and full detailed recipe on HBH - link in profile. ..
1. Rub the chicken with 1 tbs olive oil, 1 tbs fresh thyme, and season generously with salt and pepper. Sprinkle lightly with flour.2. Cook 4 slices bacon in a large skillet until crisp. Drain onto paper towels.3. Add the chicken to the pan and sear on both sides until golden. Remove the chicken from the pan. Drizzle with olive oil and add 1 onion, cooking until fragrant. Add 2 tbs butter, 4 cups fresh corn, 2 cloves garlic, and a pinch of red pepper flakes. Cook 5 minutes, until the corn is golden.
5. Reduce the heat to medium low and pour 3/4 cup white wine and 1/2 cup water. Add the chicken to the skillet.  Simmer for 10-15 minutes until cooked through. Stir in 1/2 cup cream (or canned coconut milk) and 1/2 cup parmesan. Remove from the heat and top with bacon. Serve with fresh thyme and basil. Grab that can of chickpeas from the pantry, some fresh cherry tomatoes, sweet corn, cucumbers, all your favorite herbs, feta cheese (because every salad needs cheese...), and an avocado.
