I’m not sure why, but starting Monday off with pizza just seems like the right thing to do. But then, when is pizza not the right thing to do, you know? And this pizza has plenty of arugula, so it’s basically like eating salad and bread.

Got to love the way my brain works sometimes. Sometimes being the keyword there…I would never wish my crazy brain on anyone.

Okay.

In all seriousness, happy Monday, and welcome to the start of a new week! As you guys know, I am one of those annoying people who actually likes Monday and I have high hopes for the week ahead. My weekend was spent avoiding the snow, buying all the flowers I could, writing a fun Nine Favorite Things Post, doing some much needed organizing, and making recipes with you all on Instagram (loving Instagram right now!). Nothing overly exciting, but it was the perfect chill weekend, with not too much work.

I also spent some time doing a little online shopping, because I have some work events coming up and the only clothes I seem to own are leggings and sweaters. Well wait, I take that back. I have a few cute outfits that I pull out when I have meetings or events, but it’s time to add some new pieces. Also? I’ve decided online shopping is the most dangerous thing in the world. Especially when you know there’s free shipping and free returns. AND it’s even worse when the site remembers all your credit card info so that come checkout time you literally just have to push one button. There are zero steps to allow you to second guess your purchase. It’s a slippery slope…

Anyway…

For me, Monday tends to be the busiest day of the week. My inbox is full, I tend to try to pack in one too many photoshoots and or conference calls, and my writing projects get pushed into the night-time hours. This means dinner is the last thought on my mind. If I don’t cook during the day that means there are zero leftovers to eat.

Days like this are when I reach for these back pocket, pantry style recipes, that literally come together in minutes. This 15 minute pizza was actually inspired by a similar recipe that I have in the Half Baked Harvest Cookbook. The recipe in the book is much more summery. So I decided to make a more springy version and share it here on the blog.

This pizza (and the one in the book) are truly one of my favorite go-to, easy, quick and healthy..ish recipes.

When time allows, I’m all about making a full-on homemade pizza…prepping the dough the night before, and assembling the next day. But let’s just be real honest here, I am not that organized all the time. There are days when I need pizza, but don’t have dough. So, what’s my solution?

A whole wheat tortilla.

And yes, I promise it is so good and even tastes like real deal thin crust pizza.

The secret? A cast iron skillet, which is kind of my secret weapon in the kitchen, but that’s another story.

The trick is to add the tortilla to a super hot skillet. The hot skillet makes the tortilla puff a bit and get extra, extra crisp on the bottom. While it’s still on the stove, you’ll add all the toppings to the tortilla, and then transfer it to the oven for a minute or two to melt everything together.

It’s less than a ten-minute process, and you’re left with a delicious, pretty authentic, tasting pizza. It’s kind of like magic.

For my toppings, I used crushed tomatoes, plenty of herbs, provolone, artichokes, and pepperoni (omit if vegetarian). I wanted to keep the toppings simple and classic. When the pizza comes out of the oven, finish it off with a ton of arugula, basil, and a good drizzle of hot honey. I LOVE a pizza topped with arugula. And the hot honey is the perfect special touch that takes the pizza from good to addictingly delicious.

Now, I know Mondays are often all about salads. But oddly, I’ve never been one to follow along with what everyone else is doing. So let’s do our own thing, and make Monday night pizza. And remember, you can totally tell yourself it’s like eating a salad, because again, do you see all those greens on top?

Instructions

  • 1. Preheat the broiler to high with a rack in the top third of the oven.
    2. In a large oven-safe skillet, heat a drizzle of olive oil over high heat. When it shimmers, add the tortilla to the skillet. Sprinkle with herbs, spread on the tomatoes, add the provolone cheese, artichokes, and pepperoni. Remove the skillet from the heat and add the mozzarella. 
    3. Transfer the skillet to the oven and broil for 1 to 2 minutes, or until the cheese is melted and bubbling—watch closely, this will cook fast! Remove from the broiler and carefully slide the pizza out of the skillet onto a plate. 
    4. Top with arugula, red pepper flakes, and a drizzle of hot honey (below). 

Hot Honey

  • 1. Stir together the honey and chili paste in a small bowl.
