Someone please teach me how to use my broiler.

Let’s just say my first loaf of bread was blackened. Blackened bread equals not photogenic.

Luckily I had another loaf on hand, but it was not the pretty whole grain loaf I wanted. No, instead you get to look a white loaf that I still managed to burn. The white loaf was for the boys, they would never dare to touch anything that might possibly not be refined, full of sugar and maybe a just a tad healthy for them.Teriyaki Chicken Sub Sandwiches | https://www.halfbakedharvest.com/

Oh and if you are wondering what I did with the blackened loaf you would be right if you guessed that I scraped the black top off and used what was left of the bread. Growing up with six brothers my parents always made sure NO food was wasted. So the whole no wasting of any food thing is ingrained into me.

Although if you asked my mom she would tell you I waste too much food, but that is only because she thinks food that is a good eight to ten days old is still edible.

And to that all I have to say is “I am not trying to kill anyone”.

My brothers however would tell you the opposite. They HATE it when they find the buffalo chicken from the night before mixed into their pasta. I say that’s delicious, but I am telling you guys these boys are picky and they have the most bland taste buds you can ever imagine.

It is ridiculously annoying.

Lets talk about these subs. Not avocados, tortilla chips or salsa!

Switching gears for today, but don’t worry the fiesta will return tomorrow.

When we lived in Ohio there was this restaurant, Penn Station. If you live on the East coast you may know what I am talking about. Basically they sell a whole lot of subs and french fries. People kind of love it.

To be honest I can not remember for the life of me what I used to order. It is driving me insane. Why can I not remember! This is going to bug me for days.

Anyhoo, my brother Kai, he loves the Teriyaki chicken subs. Oh and obviously the fries. He really loves those.

So I made the teriyaki chicken subs. Of course his were minus the onion, peppers and green onions. Yes, I picked them out for him. Please tell me I get an award for best sister or something?

That is of course unless you turn you bread into charcoal and have to go to the store for more.

Really, don’t do this. It’s not a fun sight to open the oven to burnt bread.

What you should do is make these subs. They are just so gosh darn delicious. Really they are going to blow you socks off (is that cheesy enough for you?)!!

Teriyaki Chicken Sub Sandwiches

Ingredients

  • 1 pound boneless skinless chicken cut into strips
  • 1 red bell pepper sliced
  • 1/2 an onion sliced
  • 2 tablespoons sesame oil
  • 3/4 cup soy sauce or low-sodium soy sauce
  • 1/4 cup dark brown sugar
  • 3 tablespoons honey
  • 2 tablespoon vinegar
  • 2/3 cup pineapple juice
  • 2 cloves garlic minced or grated
  • 2 teaspoons freshly grated ginger
  • 1/4 cup water
  • 1 1/2 teaspoons cornstarch

For the Sandwich

  • 1 whole grain baguette toasted or 4 whole wheat sub rolls
  • 1 cup swiss cheese freshly shredded
  • 4 green onions sliced

Instructions

  • In a glass measuring cup or small bowl combine the soy sauce, dark brown sugar, honey, vinegar, pineapple juice, garlic and ginger. Whisk to combine. In another small bowl whisk together the soy sauce and cornstarch until the cornstarch has dissolved. Add the cornstarch mixture to the soy sauce mixture. Whisk to combine and set a side.
  • Heat a large sided skillet over high heat. Add one tablespoon of sesame oil. When the pan is hot add the chicken and stir fry for 3 to 5 minutes or until the chicken has browned and is cooked through. Remove from the pan.
  • To the same pan add the remaining tablespoon of sesame oil. Add the red pepper and onion and stir fry for about 2 to 3 minutes until the veggies are just beginning to brown, but are still crisp. Remove from the pan.
  • Preheat oven to 400 degrees F.
  • Add the teriyaki sauce to the skillet and bring to a boil. Reduce the heat and add the chicken and veggies back to the pan. Toss with the teriyaki sauce and simmer unti the sauce has thickened and coats the chicken and veggies. This will happen pretty quickly. I let mine simmer for about five minutes.
  • While the sauce simmers toast the baguette (or rolls) in the oven. Once toasted cut the baguette into fourths and then cut in half, but not all the way through.
  • To assemble, lay out 4 squares of aluminum foil and place a roll on each. Stuff each roll with the teriyaki chicken, peppers and onions. Top with equal amounts of shredded swiss cheese. Roll each sandwich up. Once all sandwiches are rolled, place on a baking sheet and bake for 5-10 minutes. If desired remove the tin foil and toast the sandwich under the broiler for a minute or two, but watch closely, this goes so fast! Remove and stuff in some chopped green onions. Eat!

Notes

*If you want to make this even easier you can sub 3/4 cup of store bought teriyaki sauce for the homemade. Just add it with the chicken and veggies and bring to a boil.

  7. Looks great! Do you have any idea of the calorie count without the bread? In on a diet & this has lots of sugar in it.

    1. I have know idea. I am sorry, but I did use as little sugar as possible and honestly I think (especially with out the bread) this is a pretty healthy low cal meal. I cannot imagine it is to high! Thanks for reading and sorry I was not of more help!! Hope you love this!
