Tacos! It’s been too long. Well, not really. I make tacos at least once a week, but I have not posted tacos since these Caribbean Jerk Salmon Tostadas with Grilled Pineapple Peach Coconut Salsa. That was back in August and those are technically not even tacos. So yeah, it has just been too long.
With pomegranate salsa. I am obsessed. Obsessed with all things butternut, pomegranate and cranberries. Yesterday I made three recipes featuring either pomegranates and/or cranberries. I am pretty sure that as I write this the floors around my house are sprinkled with big bright red cranberries. Hey, at least it’s festive!
