I feel like this sandwich is SO beyond fitting for today.

I mean, it’s the ultimate hangover food, and seeing as yesterday was the Fourth of July, I feel like we all need this sandwich in our lives today. Yep, you are welcome in advance.

Speaking of which, um HEY! I haven’t talked with you guys in what feels like FOREVER. I mean, we chatted on Friday, and we did some major snapchating on Saturday (username: hbharvest), but man, it feels like it’s been so LOOONNNGGGG.

Let’s do a little weekend recap, shall we? OK, cool.

So Friday we ate lots and lots of ice cream cake…and then I proceeded to write… and write, and write, and write… all night long, in hopes of finishing up work so I could hop on a plane and meet my family down in Mexico. Sadly, I just couldn’t get all my work done, so instead of going to Mexico I hung out with you guys, made, hummus, talked about edible flowers…and cheese, and then cleaned for hours. Sunday was pretty chill, I face-timed with the fam in Mexico and they showed me how incredibly gorgeous it is there. UGH. Bummed I missed out on that trip. BUT I’m not feeling horrible because I am really, really excited about all the things I stayed home to work on. Plus, I heard they did a booze cruise yesterday, not sure that type of thing is for me. For my 4th, I did typical fourth things… cooked, ate, wrote a lot, and then watched a few fireworks. Can’t complain.

But guys, enough about boring me! What did you guys do over this long weekend? I know many of you made some recipes because you tagged me on instagram and sent me snaps (THANK YOU! I love seeing your creations!). Clearly I need to live through you guys, so TELL me all the fun things you did over the long holiday and what you had to eat? Please tell me there was sunshine involved too? and fireworks? and obviously cheese? and pie? and ice cream?!?

Okok, let’s talk about this epic Strawberry, Basil and Crispy Prosciutto Breakfast Sandwich.

I’m kind of way too excited about this sandwich, like way too excited! Do you see that egg??! Oh my gosh, and the crispy prosciutto?!? and the fresh strawberries?? and the basil?? and the Brie?!?!? Oh my gosh, losing it over here.

Here’s the deal, while I was hiking Saturday morning, I was thinking… I always do way too much thinking on my hikes, sometimes it’s nothing special, but 99.5% of the time my “hiking thinking” is basically creative thinking. Does that make sense? Ahh, I dunno, but the point is I come up with all my best ideas on hikes.

Anyway, I fully had another recipe all ready to go up for you guys today. It’s cold, creamy, berry filled and just freaking YUM. You will see it very soon. BUT, while I was hiking I just had such a strong feeling about this sandwich and the fact that it needed to be seen TODAY. Today, the day after the Fourth of July. When everyone is probably tired, slightly cranky, and simply in need of a really damn good breakfast sandwich. One that can triple for breakfast, lunch OR dinner.

So I got home from hiking, and oddly, I had ALL of these ingredients in my house – ALL of them! That never happens, so clearly this sandwich really was just meant to be. The croissants I had in the freezer and the prosciutto… still surprisingly fresh in the fridge. Of course when it comes to ingredients like cheese, avocados and fresh fruit, well I am always pretty well stocked. And never do I ever run out of fresh eggs, so like I said, I was good to go.

And this sandwich is GOOD too, no amazing, no perfection… actually, it’s just EVERYTHING. 🙂

So super fast here, since I cannot help it, layer by layer, this is how this sandwich goes…

…honey drizzle

…crispy prosciutto

Strawberry, Basil and Crispy Prosciutto Breakfast Sandwich.

Ingredients

  • 2 in large [croissants | https://www.halfbakedharvest.com/homemade-croissants-step-step-photos/] sliced half lengthwise
  • 4-6 ounces sliced Brie
  • 4 slices thin prosciutto omit if vegetarian
  • 1 avocado pit removed + sliced
  • 3-4 strawberries sliced into circles
  • 2 poached or fried eggs
  • Kosher salt + pepper
  • 6 leaves fresh basil
  • honey for drizzling

Instructions

  • Preheat the oven to 450 degrees F.
  • Place the bottom halves of the croissants on a baking sheet and layer with the slices of Brie. On the other side of the baking sheet, lay the prosciutto in a flat, even layer. Place in the oven and bake for 8-10 minutes or until the cheese is melted and the prosciutto is crispy.
  • Meanwhile, cook your eggs to your liking.
  • Remove the croissants from the oven and top with slices of avocado and strawberries. Drizzle the strawberries with honey and sprinkle lightly with salt. Add the crispy prosciutto and then the egg, sprinkle with salt + pepper. Add a handful of arugula (if desired) and a few basil leaves. Lightly drizzle the whole sandwich with honey. Now place the top half of the croissant on the sandwich, break into that egg and...devour!

Notes

*Goat cheese works amazing in place of the Brie. *For the eggs in this sandwich, I prefer poached, but fried or over-easy would be great as well.

    Absolutely delicious. We had to eat the sandwich with a knife and fork because the delicious egg was a bit messy. We will be making this for dinner again in the near future.

    Due to lack of ingredients on hand I had to substitute wheat bread and goat cheese but its was so delicious with all the layers I didn’t want to finish. With brie and a crossiant would have made this over the moon!

And I’m pretty sure we’re soul sisters… I spent last week hiking and camping by myself instead of partying in Toronto with friends before a wedding (It might not be the same as Mexico, but oh well!) I just love hiking alone since I spend all that time thinking (mostly about recipes to make.) 😉 Not sure my ideas are as creative as yours though! haha
