Actually, its spring brunch time.

Yeah!! That means good, good stuff. Sweet, colorful stuff. Well really it’s not stuff, it is food, and it’s my favorite kind!

There is Honey and Caradmon Baked French Toast with Vanilla Bean Coconut Whipped Cream. Um, this is sinfully amazing, but actually not bad for you. Meaning, you can eat it all. Score!

Then comes these cute little Mini Asparagus Frittatas.

At the moment, I am slightly obsessed with asparagus, and you’re going to be getting another asparagus dish either tomorrow or sometime this week. Until then, make these frittatas. They are perfect at any time of the day.

And now comes my favorite. This beyond colorful Strawberry, Spinach and Avocado Fruit Salad with Orange Ginger Vinaigrette. I could eat this with every single meal. It’s so good, and looking at it just makes me smile.

Spring may not be fully showing it’s colors yet, but at least we can eat like it is. And really, what better meal to do that with then Brunch? It’s a meal to never pass up in my opinion!
