I am really excited about these soups. I have been working with Simply Organic to develop some cozy soups to warm us all up these freezing cold days so many of us seem to be having this winter. The best part is, these soups are all simple, healthy and delicious. There is one for everyone.

Alright, so first up is the Seafood Gumbo.

Unlike most gumbos, this one requires very minimal ingredients… and very minimal work. It is kind of amazing. Oh, and instead of the typical rice you see with most gumbo recipes, I paired this one with quinoa for a healthier twist.

Well, this one I surprisingly loved. I had never made split pea soup before and I know it is typically made with ham, but this soup is vegan, simple with all kinds of deliciousness. The Herbs de Provence is the magic touch that takes this soup from good to awesome! And even my split pea hating family liked this one. Ok well, I could not get the boys to try it, but when I gave it to my parents they loved it.

Chipotle Chicken Tortilla Soup. Just. So. Good.

And easy. All you do is throw everything in the crockpot and let it cook. Come home to a house that smells simply amazing and make some homemade tortilla strips. This is so my kind of cozy comfort soup. Mexican all the way. I mean come on, there is cheese and avocados, so yeah, you know it is my kind of food!

  3. First time I have left a comment. Made the chicken tortilla soup. It was extremely bitter from the lime halfs. It has ruined the soup and now I am left with a huge pot of soup that no one will eat. If you do make this soup I would not put the spent limes in with the juice from the limes. I think it would have been great without that step.

  4. Tieghan: I think you’re awesome, and love your recipes. I visit your site daily. BUT…..gumbo must ALWAYS have the trinity, onion, celery and green bell pepper. Just about anything else is allowed, but as a Louisiana girl born and raised, I had to share. Keep the recipes coming and keep cooking!
