Wow, they are so good. Never have I made pancakes like these.
These were my first experience with using egg whites, ricotta and lemons in pancakes, but I am hooked. I think the whipped egg whites are the secret to a great pancake (and or waffle) and most likely I will be including them in all my pancake/waffle batters from here on out.
My family, who says that lemons are only for savory foods, went crazy for these pancakes. Granted they were hot, fluffy and so light – but we all just went wild for them.
Ok, can we put the pancakes aside for just a sec? I have to tell you about the newest addition to our family.
A little kitten!
I am in love with this little guy. Over the last day and a half this little guy has become my very best friend. He cuddles and I love it!
Currently it is Hedwig. You know, Harry Potter’s owl? See, the little kitten looks like a white snow owl, so I thought it would be a good a name. Some people like it, some people could care less and some people hate it. So… it may be different tomorrow.
Still love him.
I am a total dog person and the cat was not my idea, but I think I love this cat the most.
Oh well, at least I have some pancake making skills to make up for being a hypocrite.
Ok, ok, so there is very little skill required in making pancakes, but they are delicious, and everyone loves pancakes. Plus, these are super quick and easy to make on any morning, weekend, special occasions or really just any old day. They will definitely brighten up these cold March mornings!
Oh, and I do feel I should mention that these are extra delicious with a few chocolate chips mixed in as well. I mean around here you knew that was bound to happen.
