Can we talk about the color of these pops??

I mean seriously, the flavor is awesome, but the color is totally insane.

OK, so maybe the flavor has me a bit more excited than the color, BUT I do love, love, love the color. Looking at these just makes me think of summers on the lake, in the hot sunshine and humidity back in Ohio. I will not lie, I greatly miss a good Ohio summer. And by good, I mean a light on rain, high on sunshine and heat, Ohio summer. I’ll even take a few late afternoon lake effect thunderstorms thrown in. You know, the ones where you can run outside afterwards and play in the flooded streets.

Yup, those are the summers of my memories, and if I could, I would totally take them back in a heartbeat. Unfortunately, I don’t have the type of income that supports being able to “summer” in one place and “winter” in another. Maybe someday though…dream big, right?!?

Yeah, that’s the way I like to do it.

So, I got a little taste of summer when I headed down to Denver on Friday with my mom. Towards the end of the day it did cloud up, and actually even hailed, but the good news is, mom and I still had a fun day furniture shopping. Yes, we went down in search of furniture for my little barn, but I somehow managed to find no furniture…just new photography boards and dishes. YES.

I have to give big props to my mom for being a huge trooper and sticking with me while I searched and searched through antique store after antique store. It was tiring and I will not lie, I like it better when I’ve got my sweet, sweet dad (and mom in tow, cause the two never leave each other) doing the dirty digging (or picking as they call it) for me. I’ll take all the new stuff they bring, but without all the work please?!

Oh, but I just have to mention how excited my dad was over an old trunk he and my mom found on Sunday. Like the guy was PUMPED. He is convinced I will use and love it. I am slightly skeptical, but I have to say, I usually end up using everything he finds me…

For today’s photos I simply used iced cubes as my props. It was the easiest time I’ve ever had shooting something frozen because they actually didn’t melt on me.

Ice as a surface for popsicles = GENIUS!

I am on a bit of a hibiscus kick right now. It started with this tea (which is currently my all time favorite) and is continuing on with these ginger, hibiscus and minty watermelon popsicles.

Just like the tea, these popsicle are so easy to make. The hardest part is waiting for them to actually freeze, but the rest is so simple! My original idea was to make these popsicles with a Honeysuckle, Hibiscus and Watermelon flavor, but unfortunately, I couldn’t find honeysuckle. I actually almost cried, I wanted the honeysuckle SO BAD, but I just could not find it.

So I subbed in ginger and fortunately it worked out great. If you happen to have honeysuckle in your area though, try adding in a little with the hibiscus flowers, I bet it would be amazing!!

And lastly, these pops are actually super healthy. I used honey to sweeten them instead of sugar and I swear you would never know. Even Miss Asher sucked on these until there was nothing but the stick left.

Ginger, Hibiscus and Minty Watermelon Popsicles.

Ingredients

  • 3/4 cup water
  • 2 tablespoons dried hibiscus flowers
  • 1 inch fresh ginger peeled + finely chopped or grated for more flavor
  • 1/4 cup honey add 1-2 tablespoons more for a sweeter pop
  • 1/4 cup fresh mint you can also use basil
  • 4-5 cups fresh watermelon
  • the juice of 1 lemon

Instructions

  • Bring the water to a boil in a medium size pot. Remove from the heat and add the hibiscus flowers, ginger, honey and mint leaves. Cover and let steep for 20 minutes. Strain into a blender and discard the used hibiscus flowers, ginger and mint.
  • To the blender, add the the watermelon and lemon juice. Blend until smooth. Strain the mixture through a fine mesh strainer/sieve or into a bowl lined with cheesecloth. Squeeze out all the juice and discard the watermelon pulp.
  • Pour the mixture among 8 popsicle molds. Place the molds in the freezer and freeze for 1 hour. Remove and insert popsicle sticks. Return to the freezer and freeze until firm, about 4 hours. To remove the popsicles run the mold under hot water for 10 seconds and then pull the popsicles out of the molds. Store in the freezer.
