Because when is double trouble ever not awesome?

Especially when chocolate and peanut butter are involved, you know?

Please, just tell me you understand. If you don’t, I may go on and on about chocolate and peanut butter and why the two together are shear perfection…

Since it’s Friday though, let’s just assume that everyone agrees: peanut butter + chocolate chunks = a cookie combo that never disappoints.

I made these cookies on a complete whim, simply because I was really just in the cookie baking mood. I had other things planned, but cookies pretty much took over my mind once the thought popped into my head. Cookies have a way of doing that .

I also really wanted to bake some cookie for back to school. Nothing is better than coming home from the first day of school to a batch of freshly baked cookies, and of course a glass of ice-cold milk. I mean, of course.

I may not be a school girl anymore, but I can still celebrate little Asher’s first day. Plus, it’s an excuse to make cookies, not that we need one around here.

Back when I was younger and my mom did all the baking in the house, cookies could appear at pretty much any given time. But the first day of school was a sure guarantee that there would be a fresh batch of her famous chocolate chip cookies when everyone returned home. Anyone who tastes her cookies knows they are the best.

No joke, the best. Even though I can make tons of desserts now, mom’s cookies are still my all time favorite. It’s the mother touch that does it for me.

But mom always just made chocolate chip cookies. She never ventured into the worlds of peanut butter, nutella, brown butter or funfetti, not even chocolate chunk. She is an awesome baker, but when it comes to cookies she sticks to what she knows. Me on the other hand? Well, I guess I am a little more daring than she is in the kitchen (which is weird since under any other circumstances she is the daring one).

Not that peanut butter cookies studded with chocolate chunks and Reese’s Pieces are anything bold or daring, but at least there is a little variation. Most importantly though?

They taste incredible. especially warm and right out of the oven when the chocolate is still melty. Oh my gosh, is there anything better? I think not.

The best part is that these cookies are sooo simple. Just ten minutes to prep and ten minutes to bake. No chilling time, minimal dishes (two bowls at most!) – nothing complicated.

Just the way a cookie recipe should be if you ask me.

Instructions

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Combine the flour, baking soda and salt in a small bowl. Beat the butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy, about 3 to 5 minutes. Add the egg + egg yolk and beat well. Beat in the peanut butter and honey.
  • Gradually beat in the flour mixture. Stir in the chocolate chunks and Reese's Pieces.
  • Roll the dough into scant tablespoon size balls. Stack two balls together and place them two inches apart on the prepared baking sheet.
  • Bake for 10-12 minutes, but no longer. Over baking them is never good! Allow to cool three minutes then eat warm or move to a cooling rack to cool completely.

Really, just look at that chocolate. I can’t even take it. Is it cookie time yet?

  1. These cookies were DELICIOUS! (and I’m not a food blogger). I can’t get Reese’s Pieces where I am unfortunately, but I cut up some Reese’s cups instead and it worked well. The only thing that didn’t work out was double stacking. They just ended up like two cookies stacked on top of each other. The cookies also didn’t spread out and brown as much as yours look, but they’re still incredible. I always bake something for D&D and my friends couldn’t stop eating them.

    1. Hey Tessa,
Happy Monday!!🌴 I appreciate you making this recipe and sharing your comment, so glad to hear it turned out well for you! xT

These were sooo good that I made another batch to freeze!!! What is the best way to cook from frozen? Should I defrost them or just pop them into the oven frozen? Thank you!!

    1. Hey Jen,
Thanks for making the recipe, I am so delighted that it was enjoyed! Yes, you will want to thaw before baking. Have a great week:) xTieghan

  3. Hi! I am making these for my niece’s 5th birthday, in quarantine 🙁 but I only have unsalted butter, should I increase the salt?

    Thanks!

    1. Hi Jami,
Yes I would add 1/4 teaspoon of salt. I hope you love the recipe, please let me know if you have any other questions! xTieghan

These are some of the best peanut butter & chocolate cookies EVER! They are soft and flavorful. Thanks Tieghan!! You have come up with another winner.

    1. HI! I am sure crunchy will be fine, but you will have chunks of peanuts in your cookies. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much!! xTieghan

These cookies were a hit! I had been looking at making these for a while now (peanut butter and chocolate is always a good combo) and they were eaten almost instantly! Will definitely be making these again. Thanks for the recipe!

    1. Hey Jennifer! I like to double stack the cookies so that the edges turn out crisp but then the center is doughy. Let me know if you have other questions, thanks!

  6. I made these, I’m not a food blogger, and I love them! I brought them to a football tailgate and they were devoured quickly, and I’m bringing them to a class full of hungry teenagers today. Yum!

  7. I just made these. They were gross. I threw them all in the garbage. what a waste of perfectly good ingredients. Too bad honest reviews like this will never make it to the light of day because this comments section is only reserved for other food bloggers supporting each other and most, if not all of you have never even made any of the things you are commenting about. The entire comments section of every food blog is filled with people saying how great it looks! What a joke. You people should really learn to except an honest review so the rest of us non food bloggers don’t waste a bunch of time and ingredients.
I dare you to post this.
