Fudge. Is tomorrow really Thanksgiving?

How did that happen, it seems like last week was Halloween! I have to admit though, I am so excited! Thanksgiving around here means cooking all day while listening to Christmas music, cutting down our Christmas tree, serving up a delicious meal and topping it of with our first Christmas movie of the season! Ahh, so wonderful!

It is crazy how time speeds up during the holidays and it is safe to say the holidays are here. My to do list has grown, like really grown, and people are piling in by the minute, literally.

This recipe is actually a variation of the original. I will definitely be sharing the original sometime, but I thought this was perfect for a last minute Thanksgiving app or for a dish for your upcoming holiday party’s. It is so easy! And so delicious!

Biscuits, creamy brie cheese, butter and dried cranberries make up this quick and easy appetizer. Seriously so easy, just make the dough, cut into squares, drench in butter, top with brie and cranberries and bake for 20 minutes. Serve with toothpicks or mini appetizer forks. Just stick a toothpick in and pull out the perfect bite!

Cranberry, Brie and Biscuit Appetizer

Ingredients

Instructions

  • Preheat oven to 425 degrees F.
  • In a large bowl, combine flour, sugar, salt, baking powder and soda, and whisk until combined. Using a fork, pastry blender or your hands, add butter pieces to the flour and mix until coarse little crumbles remain. Toss in 1/4 cup cranberries and 1/3 of the diced brie. Add buttermilk and stir with a spoon until just combined, not overmixing. Use your hands if needed to bring the dough together.
  • Press dough on a sheet of parchment paper or cutting board until it is an inch thick.
  • Then cut the dough into squares.
  • Melt 1 stick of butter in the bottom of a pie plate. Place the squares of dough in the pie plate as snug as you can. You may have some extra dough.
  • Sprinkle the rest of the brie and cranberries over top.
  • Bake on the middle rack for 20-25 minutes, or until biscuits are golden brown and the cheese has melted.
  • Serve with toothpicks and napkins.

Notes

*If you are running really low on time you can use 1 can of store bought biscuits. I promise it will still be delicious, the original recipe actually calls for 1 can of pillsbury flakey biscuits. *To make cutting the brie easier, place it in the freezer for 20 minutes before cutting.

  1. so for the first part of the recipe with the flour, etc, you mix with 1/2 stick of butter and then you melt one stick of butter in the pie pan? didn’t understand the 3/4 sitting outside butter amt.

    OH MY GOSH!!! So delicious!!! The only thing I would do is just say “1 1/2 c. cold butter, cut into small pieces” OR “1 1/2 sticks, cold butter, cut into small pieces”….the way it is worded I couldn’t tell in you wanted 1 1/2 sticks (12 TB) OR 1 1/2 cups (20 TB!)….I assumed 1 1/2 sticks and it turned out fabulous! Is that what it is supposed to be?:):) Thanks for sharing!!!!! YUMMMMMMY!!!

  5. I made this for New Year’s Day brunch. It is really fabulous and unexpected. It’s beautiful and really got lots of attention. I made it as written, the biscuits were so tender, lots of melted Brie and tangy cranberries, just delicious! Since the biscuits are so very tender I could not serve it with tooth picks but used a spoon to separate the chunks, as it cooled more it was easier to handle and guests could pick up the morsels with their fingers. Everyone loved this. Thank you!

  7. Do you know if this could be a freezable appetizer.
    I’m having an appetizer party and am looking for freezable appetizers.
    I was going to be using your 3 Ingredient Blue Cheese appetizer, .
    Freeze it once its made, then using the biscuit cooking instructions to cook it once its been thawed.

    Would greatly appreciate any input.

    1. Hey Lena! Honestly, I don’t really know. I have never tried freezing either recipe, but I do think it should work out fine. Are you freezing them once baked? If so, thaw on the counter and then warm in the oven at 350. If freezing them before baking, do the same only bake at 350 for longer to fully cook the dish. Hope that helps an let me know if you have any other questions!

        They are going to be frozen before cooking. I’m giving these recipes to a few of the ladies coming to the party that don’t really make appetizers and I thought these would be easy enough for them. I think they should be fine frozen .
        All the appetizers have to be freezable so you can take them home and just pull them out when you need one. Instead of a cook is exchange I have an appetizer exchange.
