I actually thought for like a millisecond about using these cookies to get out of jury duty.

Ah huh, jury duty. The letter came in the mail maybe two weeks ago and it is a rather large miracle that I have not complained about having to do jury duty EVERYDAY on here for the past two weeks. Really, I don’t know how I didn’t because pretty much everyone who has crossed my path knows how much I was dreading doing jury duty.

Obviously, I am not a good citizen and obviously, cookies no matter how good, will not get me out of jury duty.

So I got home and called, stressed that they were going to say, “I’m sorry, but this is a five-day trial and you are going to have to be here for all five days in court. Court starts on Monday and you won’t be able to leave until Saturday morning”.

I got an answering machine……

Why?

Because it said exactly this, ” All Jury trials are proceeding with the exception of Thursday June 6th and Monday June 17th, both of which have been canceled.” My trial was Monday June 17th.

I know, I am so over dramatic.

I just do not like the idea of being on a trial. It totally freaks me out. Plus, I am not sure whoever was on trial would get a fair trial with me. I think I’d be so weirded out that my brain would just play along with everyone else. Which is so not fair. Really, the government does not want me as a juror. I rather bake everyone cookies and call it a day.

After all, everybody needs a cookie every now and then. Sounds like a perfect way to serve my country to me!

Burnt peanut butter caramel! Oh yes, it is a real thing and it is delicious. It’s actually out of this world, and this is me NOT being dramatic. This is me being dead on serious. It really is out of this world. Plus, the caramel is stuffed inside the best oatmeal chocolate chip cookies around. At least in my opinion and the opinion of my mom, dad and everyone else who has ever tried these oatmeal cookies. My mom has been using the recipe forever, she got it from her longtime friend Lora. So naturally this whole cookie is out of this world.

The burnt peanut butter caramel is actually really simple to make and stiffens up so quick in the freezer. They stiffen, but don’t get hard which I personally like. Then comes the tricky part, stuffing the caramel. This oatmeal cookie recipe is a really crumbly dough, which I know sounds bad, but I promise they turn out to be the best cookies. The tricky part is forming the dough around the caramel. You really have to squeeze the dough around them and just keep clumping it together until it holds as a tight ball. Seriously, don’t fret if you feel like it is too crumbly. I promise the dough balls will form!

Then just bake and go to town. Actually maybe wait five minutes, because that caramel is HOT. Trust me I think my tongue is still feeling the burn. I’d still do it all over again though, the whole waiting five minutes thing is pretty much not an option over here.

Burnt Peanut Butter Caramel

  • 3 tablespoons unsalted butter
  • 1/2 cup sugar
  • 1/4 cup heavy cream
  • 1/4 cup smooth peanut butter

Instructions

  • To make the burnt peanut butter caramel sauce. Grease or spray a bread pan or small square pyrex pan with cooking spray.
  • In a small saucepan, heat the butter over medium heat. Butter will foam, then settle down. Continue to cook and the now separated solids will begin to brown and develop a toasty, nut aroma. Remove from heat.
  • In a large saucepan, heat sugar over medium high heat. As the sugar begins to melt, swirl the pan side to side frequently to help the sugar melt evenly. Continue to cook and swirl until the caramel begins to smoke slightly and is a deep amber color. Cook for about 1 minute longer.
  • Remove from heat, then pour in the browned butter. Pour in the heavy cream. It will bubble up quite a bit so be careful. Whisk fast to incorporate. Once the sauce is smooth and the butter and cream are well incorporated, whisk in the peanut butter until smooth.
  • Return the pot back to the stove and bring to a gentle boil. Cook one minute, remove from the heat and pour into the greased pan. Place in the freezer while you make the cookies.
  • Preheat the oven to 350 degrees.
  • Grease a baking sheet or line with a silpat or parchment paper.
  • In a large mixing bowl, or bowl of a stand mixer, add the oatmeal, flour, sugar, brown sugar, baking soda, salt, canola oil, eggs and vanilla and mix until combined. The dough will be crumbly. Mix in the chocolate chips.
  • Remove the caramel from the freezer and dump the square out onto the counter. The caramels may still be warm, but this is ok. Cute the square into bite size pieces.
  • The next step is a little tricky. This oatmeal cookie dough is very crumbly so you need to do your best to form the dough around the caramels. First scoop about 1 1/2 tablespoons of dough out, then place one or two caramels in the center and use you hands to tightly squeeze the dough around the caramels. At first it may seem too dry, but just give it 2 or 3 good squeezes and it will come together. Do this over the bowl so any dough that falls out goes back into the bowl. Place the cookie on the prepared baking sheet and repeat with remaining dough.
  • Bake for 10 -12 minutes or until set and golden.
  • Let cool five minutes.
  • These are awesome all hot and gooey, but they are still delicious the next day!

    An oldie but a goody!!! Was looking for a way to use up some PB and came across this recipe, except I added some PB to the cookie batter (see Tieghan’s other recipe)! I think this made the cookie dough smoother and easier to fold around the caramel so the cookies aren’t too crumbly at all! The burnt PB caramel is to die for so next time I’ll add a bit more to the cookies instead of just eating with a spoon. Thank you!

  2. Oh honey. These. Look. Amazing. Sorry that I’ve only just found this blog to comment on this!! Do you think that the cookie recipe would work as well with coconut oil subbed in for canola oil? I’m only thinking this because coconut oil’s supposedly so very good for the body, and I definitely wanted to give these a try! (plus… I typically keep plenty of coconut oil around, haha)

      Unfortunately, I do not recommend subbing the butter. Since this is a caramel you have to be careful what ingredients you add, but you can try leaving the butter out all together. I cannot guarantee the end result, but it might work. Sorry I was not of more help, but I hope you give these try!!

  5. I have always wanted to do jury duty! I got my letter once and it was at my due date, so they let me pass, and now with my job, I don’t think I would ever get picked to be a juror again.

  6. I kinda think if you took a plate of these cookies with you to contest jury duty, they would in fact get you off! I could be bribed with cookies. Cookies are dangerous. Just imagine how easily you could sway the rest of jurors with these tasty little weapons. I think you could build a solid argument for yourself 😉
